28 Werther's Original Baking Caramels, unwrapped
6 honey crisp apples, or your choice
2 tablespoons milk
6 wooden or bamboo skewers

Steps:

  • Wash and thoroughly dry your apples. Stick a skewer into the end of each apple, making sure not to pierce your hand. (Don't ask)! Melt the caramels in a microwave safe bowl for thirty seconds at a time, until they are fully melted. Add the milk to slightly thin the caramel, stir well. Dip each apple into the caramel, using a spoon to coat it, if necessary. Let the apple set on a piece of wax paper to firm up a little bit for at least 10 or 15 minutes. Enjoy!

1/2 teaspoon ground cinnamon
2-1/2 cups crispy chow mein noodles (about 6 ounces)
2 tablespoons butter, melted
10 small apples
10 wooden pop sticks
10 Nutter Butter cookies, halved crosswise
2 packages (14 ounces each) caramels, unwrapped
1/4 cup 2% milk
Assorted candies and decorations: Mega and milk chocolate M&M's, black shoestring licorice, miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350°. In a small bowl, mix sugar and cinnamon. Place noodles in a large bowl. Drizzle with butter and sprinkle with sugar mixture; toss to coat. Spread in a parchment paper-lined 15x10-in. baking pan. Bake 12-15 minutes or until golden brown, stirring once. Cool completely in pan on a wire rack., Remove and discard stems from apples; insert pop sticks into tops. Line a baking sheet with parchment paper. For feet, arrange ten pairs of cookie halves on parchment paper., Place caramels and milk in a microwave-safe bowl. Microwave, covered, on high for 3 minutes, stirring once. Cool slightly. Dip each apple in caramel mixture, allowing excess to drip off. Immediately press chow mein noodles over top and back of apple; place apple on a pair of cookies. Decorate as desired.

These little apples make perfect Halloween party favors. Work quickly while you're dipping the apples; once the caramel begins to cool, it thickens considerably and tends not to stick to the fruit.

6 to 8 small apples (Granny Smith work best)
1/2 cup heavy cream
2 cups sugar
1 tablespoon light corn syrup
1/4 teaspoon kosher salt
Toppings: Mini chocolate chips, chopped salted peanuts, crushed pretzels, flaky salt, and sprinkles

Steps:

  • Line a baking sheet with parchment. Wash and dry the apples well, insert a chopstick into the stem end of each one, and stand on the prepared baking sheet. Place the baking sheet and cream next to the stove.
  • Put the sugar, corn syrup and 1/2 cup water in a medium saucepan with high sides and heat over medium-high heat, stirring occasionally, until the sugar dissolves, about 5 minutes.
  • Raise the heat to high and cook without stirring until the mixture is honey colored, about 10 minutes. If you have a thermometer, it should read 330 degrees F. (If the flames reach up around the sides of the pot, keep the heat at medium high). Remove from the heat and immediately and carefully whisk in the cream (the mixture will darken as you do). Because the mixture will bubble up, use a whisk with a longer handle so the steam doesn't burn your hand.
  • Let the mixture cool for 3 1/2 minutes, then carefully dip an apple into the caramel mixture, roll in a topping and set on the prepared baking sheet; repeat with the remaining apples. If the caramel cools while dipping, reheat it briefly over low heat, swirling occasionally; do not stir.

1/2 cup heavy cream, at room temperature
1 teaspoon pure vanilla extract
Cooking spray
4 apples (the caramel will stick best to organic/unsprayed apples)

Steps:

  • Combine the sugar, butter and salt in a medium saucepan and cook over medium heat, stirring occasionally, until dark amber, about 20 minutes.
  • Remove the pan from the heat and carefully pour in the cream and vanilla (it will bubble up). Set the saucepan over low heat and continue cooking, whisking, until smooth and the bubbling subsides, 2 to 4 more minutes. Remove from the heat and pour into a large glass measuring cup or bowl so the caramel is about 2 inches deep. Set aside, stirring occasionally, until cooled slightly and thick enough to coat a spoon, 12 to 15 minutes.
  • Line a rimmed baking sheet with parchment paper and coat with cooking spray. Insert a wooden stick into the center of each apple, about one-third of the way down. Holding an apple by the stick, dip it into the caramel and roll around to cover. Gently twirl the apple over the measuring cup, letting the excess caramel drip off, then turn it upside down and hold about 30 seconds to help set the caramel; place on the prepared baking sheet. Repeat with the remaining apples. Let set 15 minutes.

4 large apples, washed and dried
1 cup macadamia nuts, chopped
1 (14 ounce) package caramel candies (non-creamy type works best)
1 cup semi-sweet chocolate chips
1 teaspoon shortening (Crisco)
4 wooden popsicle sticks (available in crafts stores) or 4 lollipop sticks (available in crafts stores)

Steps:

  • Remove stems from apples and insert stick into each apple. Set aside.
  • Place chopped nuts into small pie pan or dish. Set aside.
  • In a small saucepan over medium heat, melt caramels with 2 tablespoons water, stirring until smooth. Reduce heat to the lowest setting just to keep caramel melted (if using an electric stove turn off but keep pan on burner ).
  • Preparing one apple at a time, dip apple into the melted caramel, twirling to remove excess. Immediately roll caramel coated apple into the nuts.
  • Place on wax paper to set, while preparing the remainder of the apples.
  • Put chocolate chips and shortening in small microwave safe bowl.Melt on high for 30 seconds to one minute. Pour melted chocolate into a thick large plastic bag (ziplock baggies works well).
  • Snip a tiny hole in corner of bag and drizzle chocolate over apples, while holding and turning apple to cover all sides.
  • Chill for 2 hours to set.

1 (1 lb) box dark brown sugar
1 cup unsalted butter, room temperature
1 (14 ounce) can sweetened condensed milk
2/3 cup dark corn syrup
1/3 cup pure maple syrup
1/2 teaspoon vanilla extract
1 teaspoon robust-flavored dark molasses
1/4 teaspoon salt
12 medium granny smith apples
chopped nuts
dried apricot
dried cranberries
toffee pieces
miniature M&M baking bits
candy sprinkles
melted chocolate
whipping cream (if necessary)

Steps:

  • Combine first 8 ingredients in heavy 2 1/2-quart saucepan (about 3 inches deep). Stir with wooden spatula or spoon over medium-low heat until sugar dissolves (no crystals are felt when caramel is rubbed between fingers), occasionally brushing down sides of pan with wet pastry brush, about 15 minutes.
  • Attach clip-on candy thermometer to side of pan. Increase heat to medium-high; cook caramel at rolling boil until thermometer registers 236°F, stirring constantly but slowly with clean wooden spatula and occasionally brushing down sides of pan with wet pastry brush, about 12 minutes. Pour caramel into metal bowl (do not scrape pan). Submerge thermometer bulb in caramel; cool, without stirring, to 200°F, about 20 minutes.
  • While caramel cools, line 2 baking sheets with foil; butter foil. Push 1 chopstick into stem end of each apple. Set up decorations and melted chocolates.
  • Holding chopstick, dip 1 apple into 200°F caramel, submerging all but very top of apple. Lift apple out, allowing excess caramel to drip back into bowl. Turn apple caramel side up and hold for several seconds to help set caramel around apple. Place coated apple on prepared foil. Repeat with remaining apples and caramel, spacing apples apart (caramel will pool on foil). If caramel becomes too thick to dip into, add 1 to 2 tablespoons whipping cream and briefly whisk caramel in bowl over low heat to thin.
  • Chill apples on sheets until caramel is partially set, about 15 minutes. Lift 1 apple from foil. Using hand, press pooled caramel around apple; return to foil. Repeat with remaining apples.
  • Firmly press decorations into caramel; return each apple to foil. Or dip caramel-coated apples into melted chocolate, allowing excess to drip off, then roll in nuts or candy. Or drizzle melted chocolate over caramel-coated apples and sprinkle with decorations.
  • Chill until decorations are set, about 1 hour. Cover; chill up to 1 week.
