SCALLOPS AND CHORIZO

Scallops and Chorizo image

I've long been a fan of scallops with bacon, and scallops with chilli, and this is my combination of the two, using chorizo - the sausages, not the salami - to ooze its paprika-hot orange oil over the sweet, white scallops. It's quicker than the speed of light to make and quite as dazzling. For US cup measures, use the toggle at the top of the ingredients list.

Provided by Nigella

Yield Serves: 4 as a main, 8 as a starter

Number Of Ingredients 4

110 grams chorizo
400 grams small scallops (halve them to make 2 thinner discs if they are very fat)
juice of ½ lemon
4 tablespoons chopped fresh parsley

Steps:

  • Slice the chorizo into rounds no thicker than 3mm / 1/8 inch. Heat a heavy-based pan on the hob and, when hot, dry-fry the chorizo rounds until crisped on either side (the chorizo will give out plenty of its own oil); this should take no more than 2 minutes. Remove the chorizo to a bowl and fry the scallops in the chorizo-oil for about 1 minute a side. Return the chorizo to the pan with the scallops, add the lemon juice and let bubble for a few seconds before arranging on a serving plate and sprinkling with lots of parsley.

SCALLOPS WITH CHORIZO & HAZELNUT PICADA

Scallops with chorizo & hazelnut picada image

Bring a Spanish touch to scallops using smoky chorizo and a picada made with hazelnuts, sherry and rustic bread. A vibrant starter or indulgent summer lunch

Provided by Diana Henry

Categories     Canapes, Fish Course, Starter

Time 40m

Number Of Ingredients 13

12 queen scallops , cleaned and 4 clean scallop shells
1 tbsp extra-virgin olive oil , plus extra for drizzling
80g chorizo , cut into small chunks
squeeze of lemon juice
30g butter
1 tbsp olive oil
40g rustic bread (such as sourdough), cut into 1cm cubes
2 garlic cloves , sliced
15g skin-on hazelnuts
½ unwaxed lemon , zested and juiced
1 tbsp finely chopped coriander
¼ tsp sherry vinegar
1 tbsp amontillado sherry

Steps:

  • To make the picada, put ½ tbsp oil in a small frying pan over a medium heat. After a few mins, drop a piece of the bread in - if it sizzles, reduce the heat a little and add all the bread in a single layer. Fry, turning frequently, until the bread is pale gold, then spread it out on kitchen paper to cool. Add the remaining oil to the pan, fry the garlic until golden and add to the bread.
  • Toast the nuts until fragrant (they should smell toasted), then rub in a tea towel while still warm to remove the skins. Blitz the bread and garlic with the nuts, lemon zest and coriander in a food processor using the pulse button (you want a coarse mix). Mix in the vinegar, sherry and salt, and add lemon juice to taste.
  • Look at the scallops to find a little white bit at the side - this becomes tough when cooked, so cut it off (watch our how to prepare scallops video). Pat the scallops dry with kitchen paper (they don't colour well if you fry them when they're wet) and brush with extra virgin olive oil.
  • Fry the chorizo in a little oil in a small frying pan until well coloured all over with a slight crust.
  • Meanwhile, heat another pan until searing hot, add a small glug of oil, then the scallops. Season and cook for about 30 secs each side - you want just a little colour. Divide the scallops between the four shells, add the chorizo and top with the hazelnut mixture and a knob of butter. Put under a hot grill until cooked through (mine took about 90 secs). Squeeze on a little more lemon juice and serve immediately.

4 cups water
1/2 teaspoon salt
2 tablespoons unsalted butter
1 cup old-fashioned stone-ground grits
1/4 cup heavy cream
For topping:
1 1/2 chorizo links (spicy pork sausage), cut into 1/4-inch-thick slices
4 ounces country ham, cut into julienne strips
2 tablespoons unsalted butter
8 medium sea scallops
12 medium shrimp, peeled, and deveined if desired
2 tomatoes, peeled, seeded, and chopped
1/4 cup sliced scallion
1/4 teaspoon minced garlic
Pinch of Cajun seasoning
1/4 cup water

Steps:

  • Make grits:
  • Bring water, salt, and 1 tablespoon butter to a boil in a 3-quart heavy saucepan. Whisk in grits and cook at a bare simmer, covered, stirring frequently, until grits are tender and thick, about 1 hour. Stir in cream and remaining tablespoon butter and remove from heat.
  • Make topping 15 minutes before grits are done:
  • Cook chorizo and ham in 1/2 tablespoon butter in a 12-inch heavy skillet over moderate heat, stirring, until ham is golden, about 3 minutes. Transfer chorizo and ham to a plate with a slotted spoon. Add 1/2 tablespoon butter to skillet and heat until foam subsides. Cook scallops until golden on both sides and just cooked through, about 2 minutes. Transfer scallops to a plate with a slotted spoon. Add another 1/2 tablespoon butter to skillet and cook shrimp, turning, until just cooked through, about 3 minutes. Stir in chorizo, ham, scallops, remaining 1/2 tablespoon butter, and remaining ingredients. Cook, stirring and scraping up any brown bits in skillet, until heated through, then season with salt and pepper.
  • Serve topping over grits.
