SCALLOPED SWEET POTATOES
Easy Scalloped Sweet Potatoes Recipe. Thinly slices potatoes in a garlic and buttery cream loaded with cheese.

Steps:
- Peel and finely slice the sweet potatoes into very thin rounds.
- In a saucepan, sauté butter and garlic until fragrant. Whisk in the flour until combined.
- Add the Parmesan cheese, milk, cream and seasonings, bring to a soft boil. Remove from heat and allow the cream to cool. Once cooled, stir in the shredded cheese.
- In a casserole dish, arrange the potato slices in rows and pour cheese mixture over the sweet potato slices.
- Cover with foil and bake at 400°F for 30-35 minutes. Remove foil and bake an additional 8-10 minutes. Serve warm.

GRILLED SWEET POTATO WEDGES WITH MAPLE BUTTER

- Heat grill to medium-high heat.
- Place the wedges in a large bowl and drizzle with oil. Season with salt and pepper and toss to combine. Place on the grill, cooking on all sides until cooked through, about 10 minutes total. Remove and drizzle or brush with a bit of maple butter, sprinkle with salt and parsley to finish.
- In a bowl, blend the butter, maple syrup and allspice together until light and smooth. Refrigerate and use as a spread or melt and drizzle over pancakes, grilled sweet potatoes or popcorn.
MAPLE SCALLOPED SWEET POTATOES WITH SAGE

- Preheat the oven to 350*F.
- Spray a 3 quart baking dish with nonstick vegetable spray or lightly butter it. Arrange the sliced sweet potatoes in the dish in an even layer. In a large bowl, whisk together the Maple Cream ingredients until well combined. Pour the mixture over the sweet potatoes, and push them down a bit to be sure they are coated in liquid.
- In a small bowl, combine the Topping ingredients and set aside.
- Bake the potatoes for 35 minutes, and then sprinkle them with the topping. Bake for another 25 to 35 minutes, or until the topping is browned, the potatoes are tender, and the liquid is thickened.
- Garnish with a sprinkle of fresh sage leaves if desired.
