Steps:
- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
- Meanwhile, heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the garlic and cook, stirring, until golden, about 30 seconds. Add the onion, bell peppers and 1/2 teaspoon salt. Cook, stirring, until softened, about 5 minutes. Add the tomatoes and cook until softened, about 7 minutes.
- Add the chicken, basil, pasta and the reserved cooking water to the tomato sauce. Cook, stirring, until warmed through, about 4 minutes. Drizzle each serving with olive oil and top with basil and the cherry peppers.

- Heat oven to 450°F. Arrange oven racks on top and bottom thirds of oven. Spray 13x9-inch (3-quart) glass baking dish and large rimmed baking pan with cooking spray.
- Stir sauce mix pouches (from potato mix boxes), boiling water, milk, Parmesan cheese, thyme and butter with whisk in baking dish. Stir in potatoes (from potato mix boxes).
- Place tomatoes in center of baking pan. Drizzle with oil; sprinkle with salt and pepper. Toss to coat. Arrange tomatoes evenly on baking pan.
- Place potato baking dish on bottom oven rack and tomato baking pan on top oven rack. Bake 30 to 35 minutes or until potatoes are tender and lightly browned and tomatoes are browned.
- Sprinkle parsley over top of tomatoes on baking pan. Stir to combine, and arrange on top of the baked scalloped potatoes. Let potatoes stand 10 minutes before serving.

- Preheat the oven to 375°.
- Cut the potatoes into thin slices, just under a 1/4" thick. Set aside until ready to use.
- In a large, oven-proof skillet (such as a cast iron skillet), heat 2 tablespoons of canola oil over medium-high heat. Pat chicken thighs dry with a paper towel. Drizzle with 1 tablespoon of canola oil, sprinkle with seasoning and rub to adhere.
- Place chicken in the skillet, skin-side down, taking care not to overcrowd the pan and searing batches if necessary. Cook for 3-4 minutes until golden brown without jostling or moving. Turn chicken over and cook for an additional 2-3 minutes on the other side. Transfer chicken to a large plate, cover with foil and set aside until ready to use.
- Reduce the heat to medium, add the onion. Sauté for 5 minutes, or until softened. Add the garlic and sauté 1 minute more. Add the cream and using a wooden spoon, scrape up any browned bits on the bottom of the pan. Stir in the salt and pepper. Add the potatoes, stir, and allow the mixture to come to a simmer.
- Reduce the heat to maintain a gentle simmer, stirring often for 15 minutes or until the potatoes are tender enough to pierce with a fork. Stir in the Fontina cheese and fresh parsley. Nestle the chicken into the potato mixture skin-side up. Bake for 25 minutes, or until the chicken is properly cooked through. Serve and enjoy.

SCALLOPED POTATOES CHICKEN SUPPER
Another great recipe from Quick Cooking Magazine. I needed to make a casserole to take to a friend that just had a baby. She doesn't like tomato based foods, so I thought I'd try something different. I doubled the recipe and made one for my family and one for hers and it was a huge hit with both! She called the very next morning and said she had to have the recipe because her entire family gobbled it up! Quick, easy and tasty... my kind of recipe!

- Drain tomatoes, reserving liquid.
- Pour tomato liquid into measuring cup adding water to measure 1 cup. Combine reserved liquid, potatoes and onion in large skillet, cover and cook 10 minutes or until tender.
- Place potato mixture in 1-quart baking dish; top with tomatoes and cream. Sprinkle with cheeses.
- Bake 20 minutes or until hot and bubbly.
- Sprinkle with chopped parsley, if desired.

- Preheat oven to 350 degrees.
- Grease the sides and bottom of a 9x13 inch baking dish.
- Arrange 1/3 of the Potatoes in the baking dish.
- Top the Potatoes with 1/3 of the sliced Green Peppers.
- Top the Green Peppers with 1/3 of the sliced Tomatoes.
- Mix the melted Butter with the Olive Oil.
- Drizzle 1/3 of the Butter, Olive Oil mixture over vegetables.

- Heat oil in large frypan. Non stick is best.
- Cut the potatoes into 1cm cubes and slice the onions and peppers.
- Add these to the hot oil and cover and cook over a low to moderate heat for about 20 minutes, stirring several times, until the vegetables are tender and lightly browned. Do not try to hurry this step by cooking on a high heat.
- Add the can of tomatoes and their juice.
- Cook uncovered for a further 15-30 minutes until the mixture darkens in colour and the liquid has reduced so that there is only a small amount left around the potatoes. Again do not use a high heat.
- Season to taste and sprinkle with the chopped parsley if using before serving.
- Serve Hot or warm reheating if neccesary if your meat is not ready at the same time.

- Heat the oil in a large heavy skillet.
- Crumble in the sausage and cook, stirring and breaking up the meat, until it loses its pink color.
- Drain all but 1 tablespoon of fat off.
- Add onions and bell peppers, season with salt and saute.
- Add the garlic and cook for about 1 minute.
- Add the oregano, crushed red pepper and tomatoes.
- Stir, breaking up the tomatoes and cook until very thick.
- Remove from the heat.
- Heat the oven to 350 degrees F.
- Grease a 3-quart casserole.
- Peel the potatoes and cut them into 1/8 inch-thick slices.
- Combine the flour with 1/4 cup of the cheese.
- Place one-third of the potatoes in a layer in the casserole.
- Season with salt and pepper and sprinkle with half the flour mix.
- Spoon on half the sausage and peppers.
- Repeat layers ending with potatoes and seasonings.
- Pour in the half-and-half and cover the casserole with aluminum foil.
- Bake for 45 minutes.
- Uncover the casserole and push the potatoes down to submerge them.
- Sprinkle with the remaining 1/4 cup cheese and bake for another 40 minutes or so.
- The top of the casserole will be a rich brown, and the dish will be very juicy.
- Let rest for at least 20 minutes before serving.

- Preheat the broiler. Put the poblano cut-side down on a baking sheet and broil until the skin is browned in spots, about 5 minutes. Transfer to a bowl, cover with plastic wrap and let cool 5 minutes. Peel the skin off the poblano under cold running water, then chop into small pieces.
- Preheat the oven to 400 degrees F. Lightly butter a 2-quart baking dish. Heat 2 tablespoons butter in a large skillet over medium-high heat. Add the onion, garlic and thyme and cook, stirring frequently, until the onion is soft, about 5 minutes. - Whisk the egg yolks and 1/2 cup milk in a small bowl and set aside. Combine the remaining 1 cup milk and 1 cup cream in a medium saucepan; stir in the nutmeg, 1 teaspoon salt and 1/2 teaspoon pepper. Add the garlic and bay leaves and bring to a boil over medium heat. Reduce the heat to medium low; add the potatoes and simmer until halfway cooked, about 6 minutes. Remove from the heat. Gradually stir in the egg-milk mixture and 1 cup gruyere. Cover and keep warm.
- Preheat the broiler. Put the tomatoes, bell peppers and onion on a baking sheet in separate piles. Drizzle each pile with 2 teaspoons olive oil and sprinkle each with 1 teaspoon herbes de Provence, and salt and pepper to taste. Toss each pile of vegetables to coat, then spread out the piles. Broil until tender and charred around the edges, about 10 minutes.
- Preheat the oven to 375 degrees F. Brush a 1 1/2-quart baking dish with olive oil. Sprinkle half of the breadcrumbs (1/2 cup plus 2 tablespoons) in the dish. Spoon out half of the potatoes and arrange evenly over the breadcrumbs; top with the broiled onions and half each of the tomatoes and bell peppers. Top with the remaining potatoes in an even layer and all of the cream mixture; discard the garlic and bay leaves. Top with the remaining tomatoes and bell peppers.
- Bake until the potatoes are tender and lightly golden, 40 to 50 minutes. Drizzle with the remaining 1/2 cup cream and sprinkle with the remaining 1/2 cup plus 2 tablespoons breadcrumbs and 1/2 cup gruyere. Continue baking until the cheese melts, about 5 more minutes. Let rest 10 minutes before serving.

- Whisk the egg yolks and 1/2 cup of milk in a small bowl and set it aside, then in a medium pot, combine the 1 cup each of milk and cream, the nutmeg, pepper and salt, add in the garlic and bring it all to a boil while stirring. Remove the pot from the heat and slowly stir in the egg yolk and milk mixture and 1 cup of Gruyere, then cover the pot and keep it warm.
- Turn on your broiler and spray a large baking sheet with olive oil (you can line it with foil first if you’d like). Make 3 separate piles of vegetables – tomatoes, onions, peppers – drizzle or spray each pile with a bit of olive oil and then sprinkle each pile with 1 teaspoon of herbes de Provence. Gently toss each pile to mix, then spread them out more evenly on the baking sheet. Broil for 5 or so minutes until the vegetables have started to brown – charring is fine, but you want them edible!
- Turn off the broiler and preheat the oven to 375. Oil the casserole of your choice – a 9 x 13 or even smaller should work, but I like my 4L Corning Ware – higher edges, no worries about any cream sauce bubbling over. Sprinkle half of the breadcrumbs evenly on the bottom and spoon out half of the potatoes in an even layer (attempt to find the garlic to remove it!). Top with all of the onion, and half each of the tomatoes and peppers, then the remaining potatoes in an even layer with all of the cream sauce, and finally the rest of the tomatoes and peppers.
- Bake for about 40 minutes until it’s bubbling and the potatoes are cooked through, then evenly sprinkle on the rest of the breadcrumbs and cheese and bake for another 5 minutes or so until the cheese melts. Super tasty with anything barbecued!
