2 slices sandwich bread
2 slices Swiss cheese
2 ounces thinly sliced ham
2 thin rounds pineapple
3 fresh basil leaves
1 tablespoon butter

Steps:

  • Layer 1 slice sandwich bread with 1 slice Swiss cheese, ham, pineapple, fresh basil, and another slice of cheese; top with bread.
  • In a skillet over medium-low, melt butter. Add sandwich. Cover; cook until golden, 2 to 3 minutes.
  • Flip; cook, covered, until cheese is melted.

This is called here in The Netherlands a 'pan pizza' now. When I grew up my mother made this for us as a treat and we just called it 'bread from the frying pan'!

1 slice bread
butter, for spreading on the bread
1 slice ham
1 pineapple ring, drained
1 slice cheese, that melts well
ground paprika (to garnish) (optional)

Steps:

  • You will need a frying pan with a lid.
  • Heat frying pan on medium heat, butter the bread on one side.
  • Put in the pan and butter the side that is up.
  • When browned turn over the slice and put on first: the ham, then pineapple and then the cheese on the toasted side.
  • Lower the heat, cover the pan with a lid and cook for a few minutes or until the cheese has melted.
  • Sprinkle with some paprika powder and serve.

A classic grilled cheese sandwich with roasted pineapple and ham.

3 tablespoons butter
2 (1/2-inch thick) slices pineapple, about 2- by 4-inches each
2 slices ham
2 slices hearty white bread, such as Pepperidge Farm or Arnold, or 2 slices hearty French or Italian bread
2 slices Swiss cheese
Kosher salt

Steps:

  • Heat 1 tablepsoon butter in a 10-inch nonstick skillet over medium heat until foaming subsides. Add pineapple slices and cook, swirling pan occasionally, until softened and lightly browned, about 5 minutes total. Remove from skillet and set aside. Add ham and cook until lightly browned, about 3 minutes. Remove from skillet and set aside. Wipe out skillet with paper towels.
  • Melt 2 teaspoons of butter in the skillet over medium heat until foaming subsides. Add both bread slices and cook, swirling occasionally, until pale golden brown on bottom side, about 2 minutes.
  • Transfer to a cutting board toasted-side-up. Place one cheese slice on top of one slice of bread. Top with pinapple, ham, and second cheese slice. Close sandwich, with both toasted sides facing inwards.
  • Melt 2 more teaspoons of butter in the skillet and reduce heat to medium low. Add sandwich and cook, swirling occasionally, until deep, even golden brown, about 5 minutes. Remove sandwich using a flexible metal spatula. Add the remaining 2 teaspoons butter. Return sandwich to skillet cooked-side up. Season with salt. Cook, swirling occasionally, until second side is deep, even golden brown and cheese is thoroughly melted, about 5 minutes. Serve immediately.

1 fully cooked bone-in ham (6 to 8 pounds)
Whole cloves
1 can (20 ounces) sliced pineapple
1/2 cup packed brown sugar
12 maraschino cherries

Steps:

  • Place ham in roasting pan. Score the surface with shallow diagonal cuts, making diamond shapes; insert cloves into diamonds. Cover and bake at 325° for 1-1/2 hours. Drain pineapple, reserving 1/4 cup of the juice. Combine brown sugar and reserved pineapple juice; pour over ham. Arrange pineapple slices and cherries on ham. Bake, uncovered, 30-45 minutes longer or until a thermometer reads 140° and the ham is heated through.

2 eggs
1 cup sugar
1 tablespoon cornstarch dissolved in a splash of water
1 cup whole milk
1/2 teaspoon freshly grated nutmeg
8 slices stale white bread or 6 slices thick cut stale bread
Butter, for griddle pan
Warm maple syrup, powdered sugar, cinnamon sugar and/or fresh berries for topping.
Three Berry Compote, recipe follows
1/2 cup sugar
1 lemon, juiced
1/2 cup water
1 pint strawberries, sliced
1 cup raspberries
1 cup blackberries
1/4 cup maple syrup or honey

Steps:

  • Preheat nonstick griddle or skillet over medium heat. Beat eggs very well, add sugar and beat again. Add cornstarch in water and beat that in, then add milk and nutmeg. Coat bread thoroughly in egg-milk mixture. Lightly butter hot pan with butter nested in paper towels. Add bread to the pan and cook slowly, 3 or 4 minutes on each side, 2 to 3 slices at a time. Serve hot with your favorite toppings or Three Berry Compote.
  • Combine sugar, lemon and water in a small sauce pot. Over moderate heat, dissolve sugar into water. Stir in fruit, coating it in sugar water and bring the fruit and water to a bubble. Reduce heat and simmer 7 or 8 minutes. Remove fruit with a slotted spoon to a serving dish and add maple syrup or honey to the pan. Thicken syrup 5 minutes and pour over fruit. Serve with French toast, pancakes or waffles.

1/4 lb swiss cheese, shredded (divided into four portions)
2 slices cooked ham
1/2 cup crushed pineapple, well drained (divided into 2 portions)

Steps:

  • Prepare a large skillet or cast-iron skillet.
  • Place two slices of bread on a work surface.
  • Cover/sprinkle each of the two slices with one portion of cheese, then one slice of ham, then one portion of pineapple.
  • Finish with the second portion of cheese.
  • Top each sandwich with a slice of bread.
  • Melt butter in a hot skillet.
  • Add the two sandwiches to the skillet; cook until cheese is beginning to melt and the undersides are golden.
