3 cups heavy cream
0.25 cup prepared horseradish
0.25 teaspoon ground nutmeg
kosher salt and black pepper
3 pounds russet potatoes (about 6), peeled and thinly sliced

Steps:

  • Heat oven to 375°F. Butter a shallow 3-quart baking dish. In a large bowl, combine the cream, horseradish, nutmeg, 1½ teaspoons salt, and ¾ teaspoon pepper. Add the potatoes and toss to coat.
  • Transfer the potato mixture to the prepared baking dish, pressing gently to submerge the potatoes. Cover the dish with foil, place on a rimmed baking sheet, and bake for 25 minutes. Remove the foil and bake until the potatoes are tender and the top is golden for 50 to 65 minutes.

1/3 cup chopped onion
2 Tbsp. margarine or butter
2 Tbsp. flour
1-1/2 cups milk
1/4 cup GREY POUPON Dijon Mustard
4 medium baking potatoes (about 1-1/2 lb.), peeled, thinly sliced
1/3 cup KRAFT Shredded Swiss Cheese

Steps:

  • Preheat oven to 375°F. Cook and stir onion in margarine in medium saucepan on medium heat until tender. Add flour; cook and stir 2 min. Gradually add milk, stirring until well blended; cook until mixture thickens and begins to boil, stirring frequently. Remove from heat. Stir in mustard.
  • Layer potatoes and mustard sauce alternately in greased 2-qt. baking dish; cover.
  • Bake 1 hour. Uncover; sprinkle with cheese. Bake an additional 10 to 15 min. or until cheese is melted and potatoes are tender. Let stand 5 min. before serving.

Here's a great scalloped potato recipe that's so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.

4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
1 dash cayenne pepper
1 cup grated sharp cheddar cheese
1/2 cup grated cheese, to sprinkle on top
paprika

Steps:

  • In a small sauce pan, melt butter and blend in flour.
  • Let sit for a minute.
  • Add all of cold milk, stirring with a whisk.
  • Season with salt and cayenne.
  • Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
  • Reduce heat and stir in cheese.
  • Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
  • Pour half of cheese sauce over potatoes.
  • Repeat with second layer of potatoes and cheese sauce.
  • Sprinkle the remaining cheese on top.
  • Top with some paprika for color.
  • Bake uncovered for about 1 hour at 350°F.

1 1/2 cups grated extra-sharp cheddar cheese, about 8 ounces
1/3 cup freshly grated parmesan cheese, about 1 1/4 ounce
4 lbs russet potatoes, peeled, cut into 1/4 inch thick rounds
2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 cup finely chopped onion
3 tablespoons all-purpose flour
4 tablespoons butter
3 cups milk
1/4 cup prepared horseradish

Steps:

  • Preheat oven to 400 degrees. Lightly butter 13 x 9 x 2 glass baking dish.
  • Mix cheddar cheese and Parmesan in small bowl. Arrange half of potatoes in prepared baking dish, overlapping slightly. Sprinkle with 1 teaspoons of salt and 1/4 teaspoons pepper. Sprinkle onion over, then flour. Dot with 2 tablespoons butter. Sprinkle half of cheese mixture over top. Top with remaining potatoes, 1 teaspoons salt, 1/4 teaspoons pepper and 2 tablespoons butter. Reserve remaining cheese.
  • Pour milk into medium saucepan. Stir in horseradish and simmer for 5 minutes. Pour milk mixture over potatoes.Cover baking dish tightly with foil. Bake 45 minutes.
  • Uncover dish. Sprinkle potatoes with reserved cheese mixture. Bake uncovered until potatoes are tender and cheese is deep golden brown, about 45 minutes longer.
  • Remove from oven; let stand 15 minutes before serving.

These beautiful roasted potatoes with a flavorful baked-on coating of grainy mustard mixed with horseradish make it the most perfect pairing ever created for roast beef, corned beef, or pot roast.

4 large Russet potatoes, peeled or unpeeled, cut in half, then in quarters, then into roughly equal 2-3-inch (5-8-cm) pieces
1 tablespoon (18 g) kosher salt
1/3 cup (80 ml) olive oil, divided
3 tablespoon (45 ml) whole grain mustard
3 tablespoon (45 ml) prepared horseradish
3 tablespoon (11 g) chopped fresh parsley

Steps:

  • Preheat the oven to 450°F (232°C). Line a baking sheet with heavy-duty foil, dull side up, and set aside.
  • Place the potatoes in a pot with the salt, cover with water by 1 inch (3 cm), and bring to a boil over high heat. Boil until the potatoes are fork tender, about 10 minutes. Pour the potatoes into a colander and let them air dry for 2 minutes or so, then bang them around a bit by shaking the colander. You want the edges to be a bit rough looking.
  • Dump the potatoes into a pile on the prepared pan. Drizzle 1⁄4 cup (60 ml) of the oil over the potatoes and toss to coat. Spread the potatoes out on the pan, trying to leave a little space between them.
  • Roast the potatoes in the preheated oven for 20 minutes, shake the pan, and roast for another 20 to 25 minutes, or until they are crisp-edged and deeply golden brown. While the potatoes roast, whisk together the mustard, horseradish, and remaining oil in a large, heat-proof mixing bowl.
  • Transfer the potatoes into the bowl with the horseradish mustard mixture, and toss gently to coat before returning to the pan and roasting for 10 more minutes. Serve hot, warm, or at room temperature, garnished with chopped fresh parsley.

4 large russet potatoes, halved and quartered
1 tbsp kosher salt
⅓ cup olive oil, divided
3 tbsp whole grain mustard
3 tbsp prepared horseradish
3 tbsp chopped parsley

Steps:

  • Preheat the oven to 450°F and line a sheet pan with foil.
  • Bring a large pot of water to a boil and boil the potatoes until soft but not falling apart.
  • Drain the potatoes in a colander and let air dry for a few minutes.
  • Spread the potatoes out on the pan and drizzle with ¼ cup of the olive oil. Gently toss them to coat with the ol.
  • Roast in the oven for 25 minutes and then shuffle them around to promote even cooking.
  • Roast for another 25 minutes.
  • In a bowl combine the remaining olive oil, mustard and horseradish.
  • Toss the potatoes in the mustard mixture and then place back on the pan and roast for a final 10 minutes.
  • Serve with chopped parsley on top and season with extra salt and pepper if needed.

1 bunch fresh thyme
1 tablespoon black peppercorns
1 dried bay leaf
3 pounds boiling potatoes, such as Yukon Gold, peeled and cut crosswise into 1/8-inch slices
2 tablespoons sea salt
5 garlic cloves, peeled and smashed with back of knife
4 cups heavy cream
1/4 cup fresh horseradish, grated
1 1/2 cups Parmesan cheese, coarsely grated

Steps:

  • Place rack in middle position and preheat oven to 400°F.
  • Generously butter a 2 1/2- to 3-quart gratin dish or other shallow baking dish.
  • Make a bouquet garni by wrapping thyme, peppercorns, and bay leaf in 6-inch square of cheese cloth and securing with kitchen string.
  • In heavy, 6-quart saucepan, combine potatoes, bouquet garni, salt, garlic cloves, and cream. Set over moderate heat and bring to a boil. Reduce heat to low and simmer, uncovered, until potatoes can just be pierced with a fork, about 10 minutes. Using slotted spoon, remove bouquet garni and garlic and discard. Stir in horseradish.
  • Spread potato mixture in buttered dish and sprinkle with cheese. Bake until top is golden brown and potatoes are tender, about 30 to 40 minutes. Let stand 15 minutes before serving.

3 Tbsp horseradish
2 lb yukon gold potatoes, peeled, sliced
3/4 c whipping cream
1 tsp salt
1/2 tsp pepper
1/2 c shredded swiss cheese

Steps:

  • 1. Preheat oven to 375F. Grease 1-1/2 quart casserole. Combine milk & horseradish in medium microwavable bowl. Microwave on high about 1 minute or just until hot; set aside.
  • 2. Cut potatoes into 1/4" thick slices; layer slices in prepared casserole. Stir cream, salt & pepper into milk mixture; pour over potatoes.
  • 3. Cover, bake 40 minutes. Sprinkle with cheese, bake, uncovered, 40 minutes or until bubbly & golden brown.

30 g unsalted butter
2 tablespoons plain flour
500 ml semi-skimmed milk
300 ml double cream
75 g Cheddar cheese
75 g Gruyère cheese

Steps:

  • Preheat the oven to 200°C/400°F/gas 6.
  • Peel and cut the potatoes into 3mm-thick slices, then cook in a large pan of boiling salted water until just tender. Drain well, then transfer to a large baking dish.
  • Melt the butter in a large non-stick pan on a medium heat, stir in the flour, followed slowly by the milk and cream, then simmer gently until thickened, stirring continuously.
  • Remove from the heat, grate in and stir through most of the cheese, then season to perfection with sea salt and black pepper.
  • Pour the sauce over the potatoes, grate over the remaining cheese, then bake for 45 minutes, or until golden and bubbling.
