SLOW COOKER CHEESY SCALLOPED POTATOES

This crockpot version of scalloped potatoes is so EASY, creamy, tender and cheesy! And it frees up your oven space!

1 1/2 cups heavy cream
3 cloves garlic, minced
1/2 teaspoon dried thyme
Pinch of nutmeg
2 pounds russet potatoes, peeled and cut into 1/8-inch thick slices
Kosher salt and freshly ground black pepper, to taste
1 cup shredded Gruyere cheese
1/4 cup freshly grated Parmesan
1/2 teaspoon fresh thyme leaves

Steps:

  • In a medium saucepan, whisk together heavy cream, garlic, thyme and nutmeg over medium heat until heated through, about 1-2 minutes. Add a layer of potatoes to a 4-qt slow cooker in an overlapping pattern; season with salt and pepper, to taste. Pour 1/3 cup cream mixture over potatoes; sprinkle with Gruyere. Repeat with remaining potato slices, cream mixture and Gruyere to create 2 more layers. Cover and cook on high heat for 4-5 hours, or until potatoes are tender. Sprinkle with Parmesan. Cover and cook until melted, about 5 minutes. Remove lid and let potatoes rest for 15 minutes, allowing the sauce to thicken as it sits. Serve, garnished with thyme, if desired.

1/4 cup skim milk powder
2 Tbsp flour
2 Tbsp corn starch
2 tsp onion flakes (or 1 tsp powder)
1 Tbsp dried chives or green onions
1/2 tsp salt
1/2 tsp mustard powder
1/8 tsp black pepper
2 3/4 cup water
3 Tbsp butter

Steps:

  • Preheat oven to 350°F/180°C.
  • Pour potato slices in casserole dish.
  • In small bowl, combine powdered milk, flour, cornstarch, onion, chives, salt, mustard powder and black pepper. Stir well.
  • Gradually whisk in water and mix to ensure no lumps remain.
  • Pour over potato slices.
  • Cut butter in small pieces and distribute over top of potatoes and liquid.
  • Place in oven and cook for 40 to 45 minutes.
  • Remove from oven and let rest and set for 5-10 minutes before serving.

14 slices Cheddar cheese
½ cup all-purpose flour
1 pinch salt and pepper to taste
1 cup skim milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  • Layer the bottom the casserole dish with potatoes. Cover the potatoes with a layer of cheese, followed by a light dusting of flour, salt and pepper. Repeat the layering process until all of the ingredients are used up. Pour milk over the entire casserole. Cover with aluminum foil.
  • Bake in the preheated oven until the potatoes are tender, about 45 minutes. Remove foil and return to oven; bake until cheese is bubbly and beginning to brown.

2 (4.9 ounces) packages scalloped potato mix
4 tablespoons butter
4 cups water (boiling)
1 cup heavy cream
1/4 cup Parmesan cheese (grated)

Steps:

  • Gather the ingredients.
  • Preheat the oven according to the package directions on the scalloped potato mix box.
  • In a 3-quart casserole , combine the dehydrated potatoes with the sauce mix and the amount of butter called for on the box directions.
  • Pour over the amount of boiling water called for on the package. Be sure to use the correct amount-you're making two packages of potatoes, not one.
  • Then, instead of the milk, add the heavy cream to the potatoes and stir well.
  • Bake the potatoes according to the package instructions. Ten minutes before the potatoes are done, remove the casserole from the oven and sprinkle the potatoes with the Parmesan cheese.
  • Return the casserole to the oven and bake until the potatoes are tender when pierced with a fork, and the top is golden brown. The sauce should be bubbling.
  • Let cool for 5 minutes, then serve. Enjoy!

2 tablespoons unsalted butter, plus more for the baking dish
4 medium russet potatoes (about 2 pounds)
1 1/2 cups heavy cream
1/2 cup whole milk
2 cloves garlic, minced
1/2 teaspoon fresh thyme leaves
Kosher salt and freshly ground black pepper
Pinch freshly grated nutmeg
1 cup shredded Gruyere (about 4 ounces)
1/2 cup finely grated Parmesan (about 1 1/2 ounces)

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8-inch square baking dish with unsalted butter.
  • Peel the potatoes and cut them into 1/8-inch-thick slices using a mandoline or sharp knife.
  • Add the sliced potatoes, heavy cream, whole milk, 2 tablespoons butter, garlic, thyme, 1 1/2 teaspoons salt, 1/2 teaspoon pepper and the nutmeg to a medium saucepan. ½ onion, thinly sliced
9 tablespoons all-purpose flour, divided
6 tablespoons butter, diced and divided
salt and ground black pepper to taste
3 cups whole milk, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Spread about 1/3 of the potato slices into the bottom of the prepared baking dish. Top with about 1/3 of the onion slices. Sprinkle 3 tablespoons flour over the potato and onion. Arrange 2 tablespoons butter atop the flour. Season the entire layer with salt and pepper. Repeat layering twice more.
  • Heat milk in a saucepan until warm. Pour enough warm milk over the mixture in the baking dish so the top of the liquid is level with the final layer of potatoes.
  • Bake in preheated oven until potatoes are tender, 45 to 60 minutes.

50g unsalted butter, plus extra for the dish
1 onion, thinly sliced
2 garlic cloves, chopped
50g plain flour
500ml whole milk
250ml chicken or vegetable stock
1kg Maris Piper potatoes, thinly sliced (use a mandoline for the best results)
75g parmesan, finely grated

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and butter a deep 20 x 30cm baking dish. Melt the butter in a pan over a medium heat and cook the onion and garlic with a pinch of salt for 8-10 mins until the onion has softened slightly. Tip in the flour, stir well, then cook for a few minutes more. Mix the milk and stock together, then gradually pour this in, whisking well between additions until everything is incorporated and you have a smooth sauce. Simmer for a few minutes, then season well.
  • Lay half the sliced potatoes in a single layer in the buttered dish, slightly overlapping them if needed. Pour over half the sauce, then scatter over half the parmesan. Arrange the remaining potatoes on top, then pour over the remaining sauce and scatter with the remaining parmesan. Cover with foil and bake for 1 hr, then remove the foil and bake for another 30 mins until golden on top.
