SCALLOPED POTATOES WITH HAM

Steps:
- Preheat oven to 350 degrees. Butter a baking dish.
- In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside.
- In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper.
- Spread 1/3 of the white sauce in bottom of baking dish and top with half of the potatoes. Spread out half of the onions, ham, cheese and another third of the sauce. Season with salt and pepper. Continue layering ingredients, ending with the remaining cheese on top. Bake for 45 minutes or until golden and bubbly.

- Mix together the cheddar and pepper jack in a bowl. Set aside.
- In a small sauce pan, melt the butter and blend in flour with a whisk. Let it cook for a minute.
- Add the milk, salt, and cayenne and whisk to combine.
- Cook on low until a slow boil forms and the sauce thickens. Whisk frequently.
- Turn off heat(leave on same burner) and stir in 1 cup of cheese mixture.
- Put half of the potatoes in a greased 1 quart dish.
- Pour half of the cheese sauce over the potatoes.
- Top with half of the bacon, ham, and scallions.
- Repeat with second layer of potatoes, cheese sauce, bacon, ham, and scallions.
- Sprinkle with Hungarian Paprika and top with remaining ½ cup of cheese mixture.
- Bake uncovered for an hour on 350°F.

Found this recipe in a Southern Living Cookbook. It is a bit different from the usual recipes in that it uses both baking and sweet potatoes and also gruyere cheese. Posting here for safekeeping; I haven't tried it yet but it looks delicious.

Steps:
- Saute onion in oil over medium high heat until tender. Add garlic and cook 30 seconds longer. Remove from heat and set aside. Place the potatroes in a large bowl.
- Preheat oven to 400°F Combine flour, salt, and pepper. Sprinkle over potatoes, tossing to coat. Arrange half of the potatoes in a greased 13x9 inch baking dish. Top with onion, ham, and half of the cheese. Top with the remaining potatoes. Pour cream over potatoes, dot with butter, and cover with aluminum foil.
- Bake for 50 minutes. Uncover, top with the rest of the cheese, and bake 20 minutes more, or until potatoes are tender and cheese is browned. Let stand 10 minutes before serving.
