Since I sometimes have to cook for just me, I've been on a search for recipes that make enough for just one or two people. So when I came across this one in the TOH 2002 Annual Recipes that was sent in to them by Edith Jennings of Prarie City, Iowa, I knew I had to try it.The time for peeling the potatoes has been included in the prep time. I guess if you wanted to speed up the time it takes to prepare this recipe, you could slightly cook the potatoes in the microwave or on the stove top. The addition of the French Fried Onions was my idea. Sumitted to " ZAAR " on October 21, 2009.

2 medium potatoes, 2 1/2 cups peeled, washed, and thinly sliced
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1 cup milk
1/4 cup shredded cheddar cheese
1/2 teaspoon salt
1/4 teapoon ground black pepper
1/4 teaspoon Worcestershire sauce
1/4 cup French-fried onions (optional)
paprika (optional)

Steps:

  • Place potatoes in a greased 1 quart baking dish, set aside.
  • In a small pan, melt margarine and then add flour cook until the flour taste disappears ( About 3 to 4 minutes ).
  • Add the milk a little at a time, bring to a boil then reduce heat and stir until slightly thickened.
  • Add cheese,salt, pepper, and worcestershire sauce and stir until cheese is melted.
  • Cool sauce slightly, pour over potatoes.
  • Cover potatoes and bake for 25 minutes at 375 degrees, remove cover and top with french fried onion, and paprika.
  • Bake for another 20 minutes or until potatoes are fork tender.
  • Let " rest " for 10 minutes, so sauce will thicken.

EXTRA-CREAMY SCALLOPED POTATOES



Extra-Creamy Scalloped Potatoes image

Unsalted butter, softened, for the baking dish
2 pounds russet potatoes, peeled and sliced 1/8-inch thick
3 cups heavy cream
1 tablespoon all-purpose flour
1 bay leaf
1/4 teaspoon freshly grated nutmeg
Kosher salt and freshly ground white pepper

Steps:

  • Preheat the oven to 350 degrees F. Brush a shallow 2 1/2-quart baking dish with butter. Put the potatoes in a large pot. Whisk the cream, flour, bay leaf, nutmeg, 1 teaspoon salt and 1/4 teaspoon white pepper in a bowl, then pour over the potatoes. Cook over medium heat, carefully stirring occasionally, until the cream just comes to a simmer, about 12 minutes. Continue to simmer, adjusting the heat if necessary and stirring to prevent the bottom from scorching, until the potatoes just begin to soften, about 5 more minutes.
  • Transfer the potato mixture to the prepared baking dish; discard the bay leaf. Set the baking dish in a roasting pan and add enough water to come about halfway up the sides of the baking dish. Bake until the potatoes are tender and golden brown, about 1 hour. Remove the baking dish from the water bath and let stand 10 minutes before serving.

1 clove garlic, smashed
2 tablespoons unsalted butter
2 1/4 pounds Yellow Finn potatoes or other waxy-style potato
2 cups half-and-half
1 tablespoon kosher salt
Freshly ground black pepper
Pinch nutmeg

Steps:

  • Preheat the oven to 350 degrees F. Rub the garlic around the inside of an 8 by 8 by 2-inch casserole dish and let it dry. Reserve the remaining garlic. Rub the butter around the inside of the dish. Reserve the remaining butter.
  • Peel and thinly slice the potatoes on a mandoline or vegetable slicer (about 1/8-inch-thick slices).
  • In a medium saucepan, combine the garlic, butter, potatoes, half-and-half, salt, pepper to taste, and nutmeg. Bring to a boil, lower the heat to medium-high, and cook, stirring, until the mixture has thickened, about 5 minutes. Transfer the mixture to the prepared dish. Shake the pan so the potatoes are distributed evenly.
  • Bake the potatoes, basting occasionally, until lightly browned and bubbly, about 1 hour. Remove from the oven and let cool for 10 minutes before serving.

3 pounds Yukon gold potatoes, peeled, and sliced paper thin
3 cups milk
1 clove garlic
3 tablespoons unsalted butter, softened
Kosher salt and freshly ground pepper
1 cup heavy cream
5 ounces Gruyere cheese, grated

Steps:

  • Preheat oven to 325 degrees with a rack set in the lower third of oven. Combine sliced potatoes and milk in a large saucepan over high heat. Bring to a boil, and immediately reduce heat to low; cover and simmer until potatoes are just tender, about 3 minutes.
  • Place a colander over a large bowl and drain potatoes, reserving milk. You should have 2 cups of thick, starchy milk. If potatoes have absorbed more than 1 cup of milk, add enough milk to bring the reserved milk volume to 2 cups.
  • Rub a 3 1/2-quart oval baking dish with garlic and butter. Arrange sliced potatoes in the baking dish; season with salt and pepper. Dot with remaining butter and pour over reserved cooking milk and cream. Sprinkle cheese over top.
  • Transfer baking dish to oven and bake until cheese becomes deep golden brown and milk has reduced and thickened, 80 to 90 minutes. Remove from oven and serve immediately.

Here's a great scalloped potato recipe that's so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.

4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
1 dash cayenne pepper
1 cup grated sharp cheddar cheese
1/2 cup grated cheese, to sprinkle on top
paprika

Steps:

  • In a small sauce pan, melt butter and blend in flour.
  • Let sit for a minute.
  • Add all of cold milk, stirring with a whisk.
  • Season with salt and cayenne.
  • Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
  • Reduce heat and stir in cheese.
  • Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
  • Pour half of cheese sauce over potatoes.
  • Repeat with second layer of potatoes and cheese sauce.
  • Sprinkle the remaining cheese on top.
  • Top with some paprika for color.
  • Bake uncovered for about 1 hour at 350°F.

1 cup shredded mozzarella cheese (divided)
2 pounds russet potatoes (peeled and sliced about 1/8 inch thick)
Snipped fresh chives for garnish

Steps:

  • Preheat oven to 325 degrees. Lightly spray a 2 quart casserole dish with cooking spray and set aside. In a small saucepan melt 2 Tablespoons butter over medium heat and which in the flour, salt and pepper. Add the whipping cream and stir for about 2 minutes until it starts to thicken. Add 1/4 cup parmesan cheese.
  • Arrange half of the potatoes in the prepared casserole dish overlapping each other. Spread half of the sauce on top followed by 1/2 cup mozzarella cheese. Repeat with another layer of potatoes and sauce topped with mozzarella cheese and remaining parmesan cheese.
  • Cover with foil and bake for 40 minutes. Uncover and bake for 25-30 minutes more until the potatoes are fork tender and the top is starting to brown. Sprinkle with chives before serving.

2 lbs russet potatoes (washed)
3 tablespoons butter
1/4 cup white onions (diced)
1 teaspoon garlic (minced)
3 tablespoons flour
1/2 cup chicken broth (warm)
1 cup half n half (warm)
1 cup heavy whipping cream (warm)
2 ½ cups cheese (shredded & divided ( I used a mix of 1 cup sharp cheddar, 1 cup Colby jack, and 1/2 cup smoked gouda))
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika
3/4 teaspoon parsley
1/8 teaspoon dry mustard (optional)
Fresh chives & smoked paprika (garnish)

Steps:

  • Preheat oven to 325 F. Generously grease a 2 qt baking dish. Set aside.
  • Peel potatoes.
  • Slice them 1/8 inch thick with a mandolin and place the slices in cold water to prevent them from browning while you're working.
  • Bring a large pot of salted water to a boil.
  • Place potato slices in water and boil JUST until potatoes are flimsy, yet still very firm (about 2-3 minutes)
  • Drain potatoes on a kitchen towel and set aside.
  • Over medium heat, in a large deep skillet, melt the butter.
  • Add the onions and cook until tender.
  • Add garlic and cook until fragrant.
  • Whisk in flour and cook until golden. (about 2 minutes)
  • Slowly whisk in chicken broth and stir until smooth and creamy.
  • Slowly whisk in half n half and stir until smooth. *see note*
  • Slowly whisk in heavy whipping cream and stir until smooth.
  • Continue stirring the mixture and it will begin to thicken. Do not let it boil.
  • Turn off heat.
  • Stir in 1 cup of cheese.
  • Add the salt, black pepper, smoked paprika, dry mustard, and parsley. Taste and adjust the seasonings to your liking. *See note*
  • Gently add the potatoes to the pan and toss so that all of the potatoes are covered in sauce.
  • Place half of the potatoes into a layer in prepared dish.
  • Top with half of the remaining cheese.
  • Top with the remaining potatoes and sprinkle on the rest of the cheese.
  • Cover tightly with foil paper.
  • Bake on middle rack for 30-40 minutes.
  • Remove foil and bake for another 30-40 minutes or until potatoes are tender and cheese is golden.
  • Remove from oven and let sit for 15 minutes. (I soak up any extra oil on top with a paper towel)
  • Garnish the top with smoked paprika and fresh chives.
  • Serve hot!

2 1/2 pounds russet potatoes or yukon gold, sliced thin into 1/8 inch rounds
1/4 cup unsalted butter
1 medium onion, small dice
4 cloves garlic, minced
1/4 cup all purpose flour
2 cups milk
1 cup chicken stock
1 tsp dried mustard
1/4 tsp dried thyme
1/4 tsp paprika
2 cups sharp cheddar cheese, shredded and separated
salt and pepper to taste
chopped parsley for garnish, if desired

Steps:

  • Preheat oven to 375 degrees. Grease a 9 x 13 pan with nonstick cooking spray.Melt butter in a medium saucepan. Add in onion and saute until tender and slightly browned, 4 minutes.
  • Add in garlic and cook for an additional minute.
  • Add in flour and cook for 1 minute stirring constantly.
  • Slowly whisk in milk and chicken stock. Add in the dried mustard, thyme and paprika. Cook for 2-3 minutes or until sauce begins to slightly simmer, stirring occasionally. (Do not let this sauce boil, it can break and burn on the bottom)
  • Take off the heat and stir in the 1 1/2 cups of cheddar cheese. Season with salt and pepper to taste.
  • Layer 1/3 of the potatoes into the prepared pan.
  • Layer 1/3 of the sauce on top of the potatoes. Repeat layers ending with the cream sauce.
  • Top with the reserved 1/2 cup of cheddar cheese.
  • Cover with aluminum foil and bake for 35 minutes. Remove the foil and bake for an additional 45 minutes or until the potatoes are tender.
  • Serve immediately with fresh parsley for garnish, if desired.

3 lbs white potatoes
1/4 cup butter
1 cup diced yellow onions
1/4 cup all purpose flour
1 cup chicken broth
2 cups milk
1 tsp salt
1/2 tsp pepper
1/2 tbsp garlic powder
1/2 tbsp onion powder

Steps:

  • Preheat oven to 400F.
  • Cut the potatoes into 1/8 inch slices.
  • Dump the butter into a large pot on the stove over medium heat.
  • Once the butter is melted, add the diced onions to the pot and stir well.
  • Continue cooking until the onions are translucent.
  • Add the flour to the pot and stir well.
  • Cook the flour mixture for 3 minutes.
  • Add the chicken broth to the pot and stir well.
  • Add the milk and stir well again.
  • Add the salt, pepper, garlic powder and onion powder to the pot.
  • Whisk the sauce well.
  • Leave the sauce to continue cooking over medium heat just until it comes to a boil.
  • As soon as the liquid starts to boil, remove the pot from the heat.
  • Spray a 9 x 13 inch baking dish with cooking spray.
  • Place half of the potato slices in the baking dish.
  • Pour half of the sauce over the potatoes in the baking dish.
  • Place the remaining potato slices on top of the sauce layer.
  • Pour the remaining sauce over the potato slices.
  • Cover the baking dish with aluminum foil.
  • Place the dish in the oven and bake, covered, for 35 minutes.
  • After 35 minutes remove the foil and continue baking until the potatoes are browning across the top. 30-35 minutes.
  • Remove the dish from the oven and allow the potatoes to sit for a few minutes before scooping and serving.
  • Enjoy!

8 medium potatoes, peeled and diced
1 tablespoon all-purpose flour
1-1/2 teaspoons salt
1/4 to 1/2 teaspoon pepper
1 medium onion, finely chopped
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup milk or half-and-half cream
1/2 cup dry bread crumbs
3 tablespoons butter, melted

Steps:

  • In a greased 2-qt. baking dish, layer a third of the potatoes. Combine flour, salt and pepper; sprinkle a third over potatoes. Top with a third of the onion. Combine soup and milk; pour a third over onion. Repeat layers twice. Combine bread crumbs and butter; sprinkle over top. Cover and bake at 350° for 1 hour. Uncover and bake 30 minutes more.

My idea of the BEST Scalloped Potatoes! These are rich and creamy and have just the right amount of cheesy flavor. The sauce has the perfect consistency and the potatoes are perfectly baked. A staple side dish recipe that's perfect for weekends and holiday dinners.

3 Tbsp (26g) butter
1 cup chopped yellow onion
3 Tbsp (42g) all-purpose flour
1 Tbsp minced garlic
Salt and freshly ground black pepper
2 3/4 cups (650ml) whole milk
1 1/4 cups (5 oz) shredded sharp white cheddar cheese
2 3/4 lbs red potatoes
1 Tbsp minced fresh parsley ((optional))

Steps:

  • Preheat oven to 350 degrees. Spray a 13 by 9-inch baking dish with non-stick cooking spray.
  • Melt butter in a medium saucepan over medium heat. Add onion and saute 3 minutes.
  • Add flour and garlic and saute 1 minute.
  • While whisking pour in milk. Bring to a light boil over medium-high heat, stirring frequently.
  • Remove from heat. Stir in cheese.
  • Season with salt and pepper to taste (you'll need about 1 tsp salt). Cover pan with lid and set aside.
  • Peel potatoes and slice into 1/6-inch slices using a mandolin. Spread half of the potatoes into an even layer in prepared baking dish (be sure each slice is separated).
  • Pour half the sauce evenly over potatoes. Spread over remaining half of potatoes and finish by covering with remaining half of sauce.
  • Bake in preheated oven until potatoes are tender when pierced with a toothpick or fork, about 55 - 70 minutes*.
  • Garnish with parsley if desired and serve warm.

  • Melt butter in double boiler or sauce pan.

Steps:

  • In a 2 quart casserole combine butter and onion and microwave at high for approx 2-3 minutes or until butter melts and onion is slightly tender
  • Blend in flour, salt and pepper
  • Blend in milk and microwave uncovered for approx 5 - 7 minutes or until thickened (stir twice during this step)
  • Cut potatoes in half lengthwise then crosswise into thin slices. Add as many slices to the thickened sauce until you get the consistency you want. I like there to be some sauce so don't always use all of the potatoes. Experience will help you decide in the future
  • Cover and microwave at high for at least 15-20 minutes (Stirring twice) until the potatoes are as tender as you want. Let stand covered for 5 minutes
  • AU GRATIN
  • Follow the recipe above, stir in at least 1 cup of cheddar cheese to the thickened sauce until melted (taste and add more if you want it cheesy er) then add potatoes and follow the rest of the recipe

50g unsalted butter, plus extra for the dish
1 onion, thinly sliced
2 garlic cloves, chopped
50g plain flour
500ml whole milk
250ml chicken or vegetable stock
1kg Maris Piper potatoes, thinly sliced (use a mandoline for the best results)
75g parmesan, finely grated

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and butter a deep 20 x 30cm baking dish. Melt the butter in a pan over a medium heat and cook the onion and garlic with a pinch of salt for 8-10 mins until the onion has softened slightly. Tip in the flour, stir well, then cook for a few minutes more. Mix the milk and stock together, then gradually pour this in, whisking well between additions until everything is incorporated and you have a smooth sauce. Simmer for a few minutes, then season well.
  • Lay half the sliced potatoes in a single layer in the buttered dish, slightly overlapping them if needed. Pour over half the sauce, then scatter over half the parmesan. Arrange the remaining potatoes on top, then pour over the remaining sauce and scatter with the remaining parmesan. Cover with foil and bake for 1 hr, then remove the foil and bake for another 30 mins until golden on top.
