SIMPLY RICH CHEDDAR SCALLOPED POTATOES
Easy potato dish that's real comfort food! Simple and rich, made fresh at home with common pantry ingredients. Never buy a box of Betty Crockers Scalloped Potatoes again! Easy to halve the measurements to make a 4 serving size.

Steps:
- Use a big pot.
- Saute chopped onions in margarine til soft but not browned.
- In small bowl, combine flour, salt and pepper.
- Stir flour mixture into onion mixture then add milk and half and half and stir and cook over medium heat until mixture begins to thicken (about 3 minutes).
- Turn off heat.
- Add 1 1/2 cups shredded cheddar to the sauce and stir til melted and smooth.
- Add sliced potatoes and stir well to combine.
- Pour mixture into a 9 by 13 casserole dish that you have sprayed with Pam.
- Cover with foil and bake at 350 for 35 minutes.
- Remove from oven, take foil off and sprinkle reserved 1/2 cup cheese over top (or more as desired).
- Return to oven to bake another 30 minutes or so or until potatoes are soft, cheese is melted and edges begin to lightly brown.
- Let stand a few minutes before serving to allow sauce to thicken.

- Arrange asparagus spears in a shallow baking dish.

- Rinse and clean asparagus, discarding tough ends and removing scales. Boil in salted water for 10 minutes, until tender-crisp. Drain on paper towels.
- Heat 1 tablespoon butter in a saucepan until melted. Add flour and cook for 1 minute, stirring constantly. Gradually add milk and cook, stirring constantly, for 3 minutes until thick.
- Place 1/2 of the asparagus in the bottom of a greased 1 1/2 quart shallow baking dish. Sprinkle with 1/2 of the chopped eggs. and dot with 1 tablespoon butter. Sprinkle 1/2 teaspoon salt and 1/2 teaspoon cayenne pepper over all.
- Top with remaining asparagus. Sprinkle the remaining chopped eggs along the center portion of the asparagus.
- Pour the cream sauce down the middle of the baking dish. Sprinkle with bread crumbs and cheese. Dot uncovered portions of asparagus with the remaining 2 tablespoons of butter.

- Wash asparagus, remove woody part of stalks and cut into 2 1/2-inch pieces.
- Cook asparagus in boiling salted water until just tender.
- Drain and place in a shallow baking dish or casserole.
- Melt 2 tablespoons butter in saucepan.
- Mix 2 tablespoons of the butter with the soft bread crumbs; set aside for topping casserole later.
- Blend flour, salt, and pepper into remaining butter in saucepan.
- Continue cooking and stirring over low heat.
- Gradually add milk, stirring until thickened.
- Add Worcestershire sauce, red pepper, and cheese; stir until cheese is melted.
- Pour sauce over asparagus in casserole; top with buttered crumbs.

SCALLOPED ASPARAGUS WITH CHEDDAR CHEESE SAUCE

- Gather the ingredients.
- Heat the oven to 350 F (180 C/Gas 4). Lightly butter a shallow 2-quart baking dish.
- For fresh asparagus, wash it and snap off the woody part of the stalks, and cut into 2 1/2-inch pieces.
- Lay the spears in a deep skillet or sauté pan and cover with about an inch of water and 1 teaspoon of salt. Cover and simmer for 3 to 5 minutes, or until just tender. (For frozen asparagus, follow the cooking instructions on the package.)
- Drain immediately and cover with cool water to stop the cooking process.
- Transfer it to the prepared baking dish or casserole.
- Melt the butter in a saucepan over medium-low heat.
- Mix 2 tablespoons of the butter with the soft bread crumbs and set aside for topping casserole later.
- Blend the flour, salt, and pepper into remaining butter in the saucepan. Continue cooking and stirring over low heat.

- In a large micro-wave safe glass bowl, heat butter about 50 seconds on high, or until melted.
- Whisk in the 2 tablespoons of flour and 1 cup of heated milk.
- Add 1 cup shredded cheddar cheese.
- Place in microwave and cook on high for 2 minutes, pausing to whisk thoroughly every 30 seconds.
- Season to taste with salt and whisk again.
- Set cheese sauce aside.
- Bend asparagus until they break at a natural point; discard ends.

- Preheat oven to 375 F degrees. Cover a baking pan or cookie sheet with foil (for easy cleanup).
- Drizzle the olive oil over the mushrooms and asparagus and gently toss to coat them.
- Put the mushrooms in the center of the pan; arrange the asparagus on both sides of the mushrooms with tips pointing in both directions on both sides of the mushrooms; reserve the tomatoes at this point.
- Bake the mushrooms and asparagus in the oven for about 15-20 minutes.
- Scatter the tomatoes over top of asparagus; drizzling a touch of olive oil over the top of the tomatoes.
- Sprinkle a touch of sea salt over top of tomatoes and asparagus and bake for approximately another 10 minutes. Make sure to check your asparagus and mushrooms to desired tenderness.
- For the sauce:
- Pour the milk into a medium sized saucepan.
- Make an 'ornament' with the onion, bay leaf and clove by using the clove to pierce the bay leaf and then poke the bay leaf into the onion; add your 'ornament' to the milk in the saucepan.
- Warm the milk gently over low heat, to infuse the flavors, until it just begins to boil; cover and let rest for about 15 minutes or so while you follow the next step.
- In another medium saucepan melt the butter over low heat; mix in the flour and cook for a couple of minutes stirring constantly.
- Add the milk to the butter/flour mixture 1/2 cup at a time; cook and stir until all the milk has been added.
- For a stronger flavor in your sauce you can add the onion from the milk mixture at this point.
- Cook over low heat until thick, about 20-25 minutes; stirring occasionally so it doesn't burn on the bottom.
- Once the sauce has thickened remove the onion, and add salt and pepper to taste; leaving the sauce over very low heat.
- Stir in the cream (if using) to give a silky texture to the sauce. You don't have to use it all depending on the thickness of your sauce; keeping in mind the cheese will also thicken the sauce further.
- Add the mustard and cheese to the sauce until the cheese is melted; BE VERY CAREFUL NOT TO LET BOIL!. The cheese will separate and it will not look appealing.
- Drizzle the Cheese Sauce over top of the baked vegetables and serve.
