HOT MILK CAKE
This fluffy vanilla cake gets it name (and flavor!) from the scalded milk in the batter. Martha made this recipe on episode 705 of Martha Bakes.

Steps:
- Preheat the oven to 325 degrees. Lightly butter and flour two 9-inch round baking pans; set aside. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
- In the bowl of an electric mixer fitted with the whisk attachment, combine eggs and sugar. Beat until very thick and the batter falls from the whisk in a thick ribbon, 4 to 5 minutes. Beat in vanilla.
- Meanwhile, heat milk and butter until simmering in a small saucepan. Add to the egg mixture in a slow, steady stream as you continue beating until combined. Gradually add dry ingredients and beat on low speed until just combined (or remove the bowl from the mixer and fold in dry ingredients until just combined). Pour the batter into the prepared pans. Bake until golden brown and starting to pull away from the sides of the pans, 55 to 60 minutes.
- Remove from oven and cool on a wire rack for 15 minutes. Using an offset spatula or a knife, loosen cakes from pans. Invert onto a wire rack to cool completely. Re-invert one cake layer onto a serving plate; spread with 1 cup frosting. Top with remaining cake layer, spread frosting over the sides and top of cake to cover, and serve.
DEVIL'S FOOD CAKE WITH BURNT SUGAR FROSTING
My mother, Thelma Neese Gwaltney, made this cake many, many Sundays and served it after a glorious fried chicken dinner. How I would love to go back in time to one of those Sundays. Since I can't do that, I can try my best to duplicate her wonderful cake and frosting. Photo source:...

Steps:
- 1. FOR CAKE: Combine the cocoa with 1/3 cup sugar; pour into the scalded milk gradually, stirring constantly until well blended. Set aside to cool.
- 2. In a large mixing bowl, combine flour, remaining 1 cup sugar, soda, and salt. Add the shortening and half of the cooled cocoa and milk mixture. Beat at medium speed of an electric mixer. Add eggs, vanilla, and remaining cocoa and milk mixture. Continue beating for about 2 minutes, scraping bowl with a spatula occasionally.
- 3. Pour cake batter into a greased 9x13x2" cake pan and bake in a preheated 350-degree oven for 25 to 30 minutes. Let cool and frost.
- 4. FOR FROSTING: mix the brown sugar with 2 Tbsp. milk in a medium saucepan. Over low heat bring to a ROLLING boil. Remove from heat. Add the butter, vanilla, and powdered sugar. Beat until cool and then frost the cake. If frosting is too thick, you can add a little more milk.

MAPLE BARS
I don't remember where I got this recipe but it is so good. I get asked to make these and they are always gone fast. You could sprinkle chopped nuts on top of the icing if you wanted. The icing would also be good on a cake.

COOKED ICING (FROSTING)
This is a simple recipe to use when you are long on time and short on powdered sugar. The secret to no lumps is to use a low heat when whisking the four and milk.

SCALDED MILK ICING
An icing for those who don't like sicky sweet frosting. My mother and Grandma only used this kind of frosting, though it's not good for decorating.
