SAVOURY WHITE FISH WITH SIMMERED TOMATOES RECIPE BY TASTY
Here's what you need: olive oil, garlic, McCormick® Savory Spice Blend, canned whole tomatoes, dry white wine, bay leaves, kosher salt, freshly ground black pepper, white fish fillet, fresh basil

Steps:
- Heat the olive oil in a large skillet over medium-low heat. Add the garlic and 1 teaspoon of Savory spice blend and cook until fragrant, stirring often and ensuring the garlic does not brown, about 3 minutes.
- Increase the heat to medium. Add the tomatoes and their juices, crushing well with your hands, then add the wine and bay leaves. Bring to a boil, then reduce the heat to medium-low and simmer for 5 minutes. Season with salt and pepper.
- Season the fish with the remaining teaspoon of Savory spice blend, salt, and pepper and place in the skillet. Cover and cook at a bare simmer until the fish is opaque throughout and beginning to flake, 5-7 minutes (thicker pieces will take longer to cook).
- Gently transfer the fish to shallow bowls and spoon the poaching liquid over. Top with basil.
- Enjoy!

Steps:
- Cook bacon in large skillet or ot over medium heat 5 to 7 minutes or until brown and crisp. With slotted spoon, place bacon on paper towel-lined plate.
- Pour off all but 2 tablespoons of the bacon drippings. Add onion; cook over medium heat 5 to 8 minutes or until onion is golden brown, stirring occasionally. Add garlic, celery and bay laeaf; cook 30 seconds or until garlic is fragrant. Add tomatoes, basil, thyme, salt and pepper; bring to a boil. Reduce heat to medium-low to low; simmer 30 minutes or until slightly thickened, stirrying occasionally. Discard bay leaf.
- For a smooth sauce, pass saucethrough food mill or pulse in food processor or blender until of desired concistency. Return to skillet; stir in bacon. Heat over medium heat until hot. (Sauce can be made up to 3 days ahead and refrigerated or up to 4 months ahead and frozen.).
- Cook cavatappi on large pot of boiling salted water according to package directions; drain. Top with sauce.

Steps:
- Place fish into a lightly geased baking dish.
- Combine the breadcrumbs, cheese, basil, salt and parsley.
- Stir together tomato sauce, lemon juice and melted butter.
- Mix the crumb mixture into the melted butter mixture and spread evenly over the fish.
- Cover with tinfoil and bake at 379 F (180 C ) for 30 minutes.

This is an easy, quick and healthy dish that I make pretty often. Great with pasta or mashed potatoes.

Steps:
- Season the fish fillets with salt, pepper and paprika powder to taste.
- Put the fillets on the bottom of a rectangular oven-proof dish.
- Sprinkle fish fillets with the lemon juice.
- Cut tomatoes into 5 mm thick slices.
- Cover fish with the tomatoes, making sure that they're covered well (leave no gaps).
- Heat the olive oil in a small frying pan or pot. Add onion and crushed garlic, stir until onion is translucent.
- Add capers and chopped parsley, mix well and let the mixture cook for one additional minute.
- Cover the layer of tomatoes with the herb-onion mixture.
- Put into preheated oven and let bake for 30 minutes @ 200 degrees Celsius.
- Variations: it's possible to use other types of fish and/or to replace the parsley with other herbs (dill and tarragon would be obvious alternatives).
- This is also an excellent barbecue dish; instead of using an oven-proof pan, put one fish fillet with some tomato slices and herb mixture in a "papillotte" of aluminum foil and put this "package" on the grill.

Steps:
- Sauté onion in butter in heavy sauce pan over medium heat until transparent; not browned.
- Spread onion oven bottom of a shallow baking dish.
- Arrange fish over onion in pan, overlapping thin edges.
- Pour wine or lemon juice over fish.
- Add whipping cream to pan.
- Sprinkle with salt, pepper and oregano.
- Bake uncovered at 425 degrees for 10 minutes.
- Uncover and top with cheese.
- Cook un-covered for an additional 10 minutes or until cheese is melted and fish flakes easily.
