SWEET POTATO WEDGES WITH NO-HONEY MUSTARD SAUCE
Steps:
- Preheat oven to 400 degrees F (204 C) and grease a baking sheet.
- Toss sweet potatoes in oil until all sides are well coated. Season with salt and pepper and toss once more, then arrange in a single layer on the baking sheet (if crowded or increasing batch size, use two or more baking sheets).
- Bake for a total of 25 minutes, or until golden brown and tender, flipping once at the halfway point to ensure even cooking.
- While baking, prepare dipping sauce by whisking together cashew butter, mustard, maple syrup, salt and pepper. Thin with almond milk (or water) until pourable.
- Serve sweet potato wedges with no honey mustard dipping sauce! Best when fresh, though leftovers keep in the fridge, covered, for up to a few days. Reheat in the oven.

ROASTED SWEET POTATO WEDGES WITH CILANTRO YOGURT
Steps:
- Mix together the yogurt, garlic, cilantro, 2 tablespoons olive oil, 1/2 teaspoon salt and a few turns of pepper in a medium bowl and set aside.
- Preheat the oven to 425 degrees F.
- Toss the sweet potatoes with the cinnamon, 2 tablespoons olive oil and 1 teaspoon salt and spread evenly on 2 half-sheet pans lined with parchment. Bake, tossing occasionally, until golden brown, 25 to 30 minutes
- Transfer the sweet potatoes to a serving plate, then dollop with the yogurt (serving any remaining on the side), drizzle with sriracha, and sprinkle on the pine nuts, remaining cilantro, a few turns of pepper and flaky salt and serve.
SAVORY SWEET POTATO WEDGES
These are a wonderful twist to regular old fries!!! If you dont want to fry them, Ive also baked wedges in the oven coated with some EVOO, cooked til nice and tender and crisp, and then toss gently with the other ingredients :-) I hope you enjoy them!!! Cook time is for each batch.

Steps:
- First you will want to get out a cutting board and a knife.
- Peel sweet potatoes, and cut in half lengthwise.
- Cut each half into long wedges.
- Soak potatoes in cold water, covered for 1 hour.
- Drain potatoes and pat dry with paper towels.
- In a heavy-pot, fry potatoes (in batches) in 3 inches of hot oil for 3-5 minutes, or until edges are browned nicely.
- Drain on paper towels, and keep warm.
- Place potatoes in a bowl, and add parsley, tarragon, rosemary, juice, cumin and salt and pepper to taste.
- Toss well to coat, and serve!

ROASTED SWEET POTATO WEDGES
Steps:
- Preheat the oven to 375 degrees F.
- Wash the yams and slice into 1/4-inch-thick wedges. Place the yams in a large mixing bowl and coat with the olive oil. Sprinkle with salt and pepper and spread out on a baking sheet. Roast the yams until tender to the touch, about 30 minutes.
- Put the canola oil in a frying pan and heat to 180 degrees F. Fry the yams on each side until the outside is brown and caramelized. Season with salt, pepper and the chopped parsley. Serve with ketchup or your favorite condiment.

Steps:
- Preheat oven to 450.
- Scrub the potatoes if leaving the skins on or peel. Cut sweet potato into wedges (about 8 wedges per potato).
- Place potatoes in gallon ziploc bag or large bowl and add remaining ingredients.
- Coat potatoes evenly with oil and spices. Place in single layer on baking sheet.
- Bake for 15 minutes. Turn over and bake another 10-15 minutes.

- Heat the oven to 220C/200C fan/gas 7. Cut off and discard the ends of the potatoes, halve, then cut each half into long wedges.
