Recipe video above. Beef tacos - the old school way! A juicy beef filling stuffed in crispy taco shells. For the real old school experience, go with shredded iceberg lettuce, tomato and sour cream! I like to BAKE my shells with the taco meat and cheese for molten goodness, but this is optional. If you skip it, just bake the empty shells per packet directions. SCALE UP the seasonings and add vegetables to make the filling stretch further!

1 tbsp oil
2 garlic cloves (, minced)
1 onion (, finely chopped)
500 g / 1 lb beef (, ground / mince (Note 2))
2 tbsp tomato paste
1/4 cup / 65ml water
1 tsp EACH garlic powder, onion powder, dried oregano
2 tsp EACH cumin powder, paprika
1/4 tsp cayenne pepper ((adjust spiciness to taste, can skip))
1 tsp salt
1/4 tsp black pepper
Shredded cheese ((Note 3))
Shredded iceberg lettuce
2 tomatoes (, chopped)
1/2 red or white onion (, chopped)
Sour cream
Taco sauce ((optional))
Other: coriander/cilantro (, jalapeño, hot sauce / chilli sauce, pickled chillies, salsa sauce, pico de gallo)

  • Preheat oven to 180C/350F.

Who doesn't like some version of a taco, there are so many. This is one of my family's favorites, as long as they get to pick their own toppings.

2 lbs ground beef
1 teaspoon salt
1 -2 tablespoon chili powder
2 tablespoons paprika
1 teaspoon cumin
1 -2 teaspoon garlic powder
1/2 green bell pepper, diced
1/2 cup onion, diced
12 corn tortillas (Packaged or Homemade)
lettuce (Plus other toppings listed below)

Steps:

  • In a 2 quart sauce pan add ground beef, salt, chili powder, garlic, cumin, paprika, and enough water to cover meat.
  • Bring to a boil.
  • Simmer for about an hour.
  • Add bell pepper and onion. Continue simmer for 20 to 30 minutes. (Until bell pepper and onion are fully cooked).
  • Meat can be used at this time or cooled for later depending on your meal schedule. I like to make the meat mixture ahead of time.
  • Full Corn Tortilla Shells just about 1/2 way full or desired amount.
  • Put into a preheated oven (300) for about 10 minutes or until completed heated through.
  • Ready to Serve!

1 cup Pace® Chunky Salsa OR Pace® Picante Sauce
1/2 cup milk
6 flour tortillas (8-inch) OR 8 corn tortillas (6-inch), cut into 1-inch pieces
1 cup shredded Cheddar cheese (about 4 ounces)

Steps:

  • Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often. Pour off any fat.
  • Stir the soup, salsa, milk, tortillas and half the cheese in the skillet. Spoon the beef mixture into a 2-quart shallow baking dish. Cover the baking dish.

1 pound 85% to 93% lean ground beef
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon garlic powder
1/2 teaspoon chili powder

1 pint cherry tomatoes, (quartered)
½ sweet onion, (diced)
¼ cup cilantro, (chopped)

Steps:

  • Heat a skillet over medium heat. With ground beef, I rarely add any oil to the skillet because it tends to be fattier. If needed, you can add 1 teaspoon of olive oil (of your oil of preference). Once the skillet it hot, add the ground beef and break it apart with a wooden spoon.
  • Cook, stirring and breaking apart the beef often, until it begins to brown. Add in the cumin, paprika, garlic powder, chili powder, salt and pepper. Stir well to disperse all the seasonings. Cook until the beef is just browned.
  • I love the seasoned beef like this - it's a personal preference. If you'd like it saucier, follow the directions below. You can also add in a tablespoon of beef or vegetable stock, or even tomato sauce, to make it saucier.
  • Serve the ground beef in tacos (warm corn or flour tortillas in the oven for a few minutes), on nachos or in salads. We like to top ours with a quick pico de gallo, fresh cilantro, white cheddar cheese, diced avocado and pickled onions.
  • If you'd like to add peppers and onions: heat the skillet over medium heat and add 1 to 2 teaspoons of olive oil. Add in 1 diced onion, 1 diced bell pepper and a few minced garlic cloves with a pinch of salt. Toss well and cook until softened, about 5 minutes. Proceed with browning the beef above!

1 tbsp sunflower oil
500g beef mince
300ml beef stock
2 tbsp cumin seeds
1 tbsp coriander seeds
1 tsp black peppercorns
1 tsp chipotle chilli flakes
1 tbsp paprika
1 tbsp dried oregano
1 tsp garlic granules
1 tsp onion granules
2 tsp cornflour
1 large red onion, finely sliced
1 lime, juiced, plus wedges to serve
6-8 small soft wheat or corn tortillas
1 avocado, stoned, peeled and chopped into small chunks
1 tomato, chopped into small chunks
handful of feta, crumbled, or use grated mild cheddar (optional)
2 handfuls of tortilla chips, crushed (optional)

Steps:

  • First, make the spice mix. Toast the cumin seeds, coriander seeds and peppercorns in a small, dry frying pan, then tip into a spice grinder or use a pestle and mortar to crush to a rough powder. Add the remaining spice mix ingredients, except the cornflour, then grind again. Stir through the cornflour and a pinch of salt. The spice mix will keep in an airtight jar for up to one month.
  • For the pickled onions, toss the onions with the lime juice and a pinch of salt in a medium glass bowl, then set aside to soften.
  • Heat the oil in a frying pan over a medium-low heat, and crumble in the mince. Cook for 15-20 mins. At first, it will release some liquid, but once that has bubbled away, the mince will sizzle in its own fat and start to brown and crisp. At this point, stir or toss the mince with a wooden spoon so it browns and caramelises all over. When the mince is well toasted, sprinkle over half the spice mix and continue to cook for 2 mins. Pour over the beef stock and reduce the heat to a simmer. Cook gently for 10 mins until the beef has absorbed most of the stock, and is in a rich, thick gravy. Taste for seasoning.
  • To assemble the tacos, toast the tortillas in a hot, dry frying pan, or over a flame until lightly blistered. Transfer to a serving plate and spoon the mince into a bowl, then serve the other ingredients in separate bowls, so everyone can assemble their own. Alternatively, spoon the mince into the tortillas, then top with the avocado, tomato, cheese (if using), pickled onions and crushed tortilla chips, if using. Serve the lime wedges on the side for squeezing over.

Steps:

  • Preheat oven to 400 degrees.
  • In a large skillet brown you hamburger along with the chopped onion and garlic. Cook until meat is brown, drain grease well.
  • Add black beans, taco seasoning, and salsa. Mix well and let cook for a couple of minutes so that the flavors can meld and the mixture can thicken.
  • In a large 9 x 13 inch baking dish, line up all the taco shells. Fill each one with a couple of scoops of the beef mixture and pack down into the shell. Repeat until all the shells are filled. Top each taco with shredded cheese.

3/4 cup sharp cheddar cheese, grated

Steps:

  • Preheat your oven to 425ºF and place a sheet on aluminum foil on a large baking sheet.
  • Wrap the mini corn tortillas and place in the microwave until pliable, about 30 seconds. Remove from the microwave and place about a Tablespoon on the shredded beef and a sprinkling of cheese. Fold in half and seal with a toothpick. Repeat with remaining tacos.
  • Place in the oven and bake 10 minutes. Flip tacos over and continue to bake until golden brown and crispy, about 8 minutes more. Remove from the oven discard toothpicks. Serve with salsa and guacamole.

1 tbs each: Cumin, Mexican Oregano & Smoked Paprika
1 tsp each: Chili Powder, Onion Powder, Garlic Powder & Coriander
Kosher Salt & Ground Black Pepper - to taste
2 tbs Neutral Oil (vegetable or canola) - DIVIDED
1 large Yellow Onion - peeled & medium dice
4-6 cloves Garlic - peeled & minced
2 tbs Tomato Paste
2-7 Chipotle Peppers in Adobo Sauce (plus 1 tbs sauce) - peppers roughly chopped; keep peppers and
sauce separate
1/3 Cup Fresh Lime Juice (about 2 large limes)
1 ¼ Cup Beef Stock
¾ Cup Picante Sauce (salsa)
1 Bay Leaf (Mexican bay leaf or regular bay leaf)
Fresh Cilantro, Lime Wedges, Warm Corn Tortillas, Pico de Gallo, Crumbled Cotija, Guacamole, Sour Cream

Steps:

  • Combine seasoning blend: Put all the ingredients for the spice mix in a small bowl - paprika, cumin, oregano, chili powder, onion powder, garlic powder, and coriander. Add 1 1/4 teaspoons salt and 1/2 teaspoon black pepper. Stir well to combine.
  • Season beef: Put the beef on a clean surface. Sprinkle two tablespoons of the seasoning blend over the beef. Work the spices into the meat with your hands.
  • Sear beef: In a Dutch oven or large heavy-bottomed pot, heat 1 1/2 tablespoons oil over medium-high heat. Add meat (in batches if necessary) and brown on all sides, about 8 minutes. Add more oil if necessary if browning meat in batches. Remove to a plate.
  • Sauté vegetables: As soon as the pot is now empty, reduce the heat to medium and add the remaining 1 1/2 tablespoons of oil, followed by the onions. Season the onions with a pinch of pepper and a pinch of salt. Sauté, stirring occasionally, for about 3 minutes. Stir in garlic and the remaining seasoning blend. Cook, stirring constantly, for about 30 seconds before it becomes fragrant. Then add the tomato paste and chopped chipotles. Stir constantly until the paste is caramelized, about 1-2 minutes.
  • Deglaze + add beef: Deglaze the pan with lime juice. Cook, scraping up any browned bits at the bottom, then add the adobo sauce, the stock, the Picante sauce, and the bay leaf. Mix well, and then add the seared beef, along with any accumulated juices, to the pot.
  • Cover + cook: Bring the contents to a simmer. Cover the pot and reduce the heat to low. Simmer covered for 3 - 3 1/2 hours, or until the meat becomes tender and falls apart. You should stir the beef every hour to achieve the best results.
  • Shred beef: Turn off the heat in the pot. Remove the bay leaf with tongs and discard it. Shred the beef with two forks (you can also remove the beef to a cutting board, shred it, and return it to the pot.)
  • Gently simmer to warm: Reduce the heat to low and gently simmer the meat for about 10-15 minutes.
  • Serve: To serve, place beef in a serving dish and top with cilantro. Serve with lime wedges.
  • For tacos: Add shredded cheese to warmed corn tortillas and top with shredded beef; garnish with chopped veggies, pico de gallo, fresh cilantro, guacamole, or sour cream.
