From Betty's Soul Food Collection... Dinner is easy as pie when you top Pillsbury™ refrigerated pie crust with turkey bacon, green bell pepper, sweet potatoes and the perfect mix of spices.

4 slices turkey bacon
1/4 cup finely chopped green bell pepper
2 tablespoons finely chopped onion
1 can (17 oz) sweet potatoes, drained
2 tablespoons sugar
3/4 teaspoon seasoned salt
1/2 teaspoon pepper
1/4 teaspoon dried thyme leaves
2 eggs
1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
5 thin rings green bell pepper

Steps:

  • Heat oven to 375°F. In 10-inch skillet, cook bacon over medium-high heat 5 to 7 minutes, turning once, until crisp; place on paper towels. Chop bacon; set aside. In same skillet, cook bell pepper and onion over medium heat 2 to 3 minutes, stirring constantly, until crisp-tender.
  • In medium bowl, mash sweet potatoes with fork; add sugar, seasoned salt, pepper, thyme and eggs. Beat with electric mixer on low speed 1 to 2 minutes or until well blended. Stir in chopped bacon and bell pepper mixture.
  • Remove pie crust from pouch; place flat on ungreased cookie sheet. Spread filling over crust to within 1 1/2 inches of edge. Carefully fold edge of crust up over filling, pleating crust as necessary.
  • Bake 30 minutes. Arrange bell pepper rings over filling. Bake 15 to 20 minutes longer or until crust is golden brown and center is set. Cool 5 to 10 minutes. Serve warm.

3 cups almond meal
1/2 cup coconut oil
1 teaspoon salt
1/4 cup almond milk
5 sweet potatoes, peeled and chopped
1 onion, diced
3 garlic cloves, choppped
2 cm ginger, chopped
500 g Baby Spinach, chopped
3 eggs
1 teaspoon salt and pepper

Steps:

  • To make the pie crust blend all the ingredients in a food processor or Thermomix at Speed 5 for 10 seconds.
  • Heat oven to 180C and place the pie crust into a 20cm square baking dish. Press down and bake for 10 minutes until turning golden.
  • Remove from oven whilst you prepare the filling.
  • Steam the sweet potato or use the Thermomix Varoma 100C for 20 minutes on Speed 1. Add 1 tbs butter and some salt to taste and mash. Allow to cool.
  • Place some olive oil in a fry pan and add the onion - cook until slghtly brown - add the garlic and ginger and cook for an other few minutes to soften and incorporate, then add the spinach until softened and stirred through the mixture.
  • When the sweet potato mash is cool enough add the eggs and onion mixture. Season with salt and pepper. Mix well and pour onto the pie crust.
  • Bake pie for 25 minutes.

1 teaspoon garlic, chopped
1 1/2 teaspoons chili powder

Steps:

  • Preheat oven to 450.
  • Scrub the potatoes if leaving the skins on or peel. Cut sweet potato into wedges (about 8 wedges per potato).
  • Place potatoes in gallon ziploc bag or large bowl and add remaining ingredients.
  • Coat potatoes evenly with oil and spices. Place in single layer on baking sheet.
  • Bake for 15 minutes. Turn over and bake another 10-15 minutes.
  • Serve with mayo or ketchup for dipping.

This recipe was passed down to me from my best friend's mother who would cook the absolutely best sweet potato pies. After asking many times she finally wrote it down for me. Prepare yourself for the world's best sweet potato pie. Enjoy with whipped cream.

3 large sweet potatoes
1 cup butter (such as Land O'Lakes®), melted
5 eggs, beaten
1 (12 fluid ounce) can evaporated milk (such as PET®)
1 cup white sugar, or to taste
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
½ teaspoon ground nutmeg
½ teaspoon baking powder
½ teaspoon lemon juice
3 pie shells, thawed

Steps:

  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 40 to 50 minutes. Drain water, peel sweet potatoes, and mash in a bowl.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix butter and eggs together in a bowl until smooth; stir into mashed sweet potatoes. Mix milk, sugar, flour, vanilla extract, nutmeg, baking powder, and lemon juice into sweet potato mixture; pour into the 3 pie shells.
  • Bake in the preheated oven for 10 minutes. 4 ounces pancetta, diced
1 round refrigerated pie dough (half of a 14-ounce package)
3/4 cup (6 ounces) goat cheese, at room temperature
2 large eggs
1/3 cup heavy cream
1 teaspoon curry powder
Kosher salt and freshly ground black pepper
1/4 teaspoon cayenne pepper, optional
2 sweet potatoes, peeled and thinly sliced
1 tablespoon extra-virgin olive oil
1/4 teaspoon ground cinnamon

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F.
  • Cook the pancetta in a medium skillet over medium heat, stirring occasionally, until browned and crispy, 3 to 4 minutes. Remove to a paper towel-lined plate.
  • Roll out the round of dough slightly larger than a 9-inch tart pan and fit the dough into the pan. Put in the freezer while preparing the filling.
  • Whisk together the goat cheese, eggs, cream, curry powder, 1/2 teaspoon salt and the cayenne, if using, in a medium bowl (it's okay if there are lumps).
  • Remove the tart pan from the freezer. Use a fork to prick holes on the bottom of the crust.
  • Sprinkle the pancetta over the bottom of the crust. Pour the goat cheese custard over the top and spread in an even layer. Arrange the sweet potatoes on top. Drizzle with the oil and sprinkle with the cinnamon, and some salt and black pepper.
  • Bake until the filling is set and the sweet potatoes are cooked through, about 40 minutes.
  • Remove from the oven and let cool slightly before enjoying.

2 sweet potatoes
2 cups white sugar
¾ cup evaporated milk

¼ cup dark corn syrup

1 (9 inch) unbaked deep dish pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place sweet potatoes in an aluminum foil-lined baking dish.
  • Bake in preheated oven until potatoes are easily pierced with a fork and skin loosens, 30 to 45 minutes. Allow potatoes to cool.
  • Peel potatoes and mash with a potato masher in a large bowl. Beat sugar, evaporated milk, butter, corn syrup, eggs, flour, vanilla extract, apple pie spice, and salt into mashed sweet potatoes with an electric mixer until fluffy, about 5 minutes. Pour sweet potato batter into pie crust. Excess batter can be reserved for another use.
