AUNT MARY'S IMPOSSIBLE MEXICAN PIE
Family favorite from our Aunt Mary's kitchen. My children love this recipe. It is a regular in our house.

Steps:
- Heat oven to 400 degrees.
- Lightly grease 10 inch pie plate.
- Cook and stir ground beef and onion in 10 inch skillet until brown; drain.
- Stir in seasoning mix.
- Spread beef mixture in pie plate.
- Sprinkle with chilies and cheese.
- Beat remaining ingredients until smooth.
- Pour in pie shell.
- Bake 25 to 30 minutes.
- Let stand 5 minutes before cutting.
- Garnish with peppers and cheese.
SIMPLE AND SAVORY MEXICAN PIE
I had a craving for something with a Mexican flair, but didn't have many ingredients on hand. I made this up with what I had and was really pleased with the results. This is very filling and tastes great. It is mild as written, but can easily be spiced up if desired.

Steps:
- Brown ground beef in skillet.
- Add salsa and salt to beef and mix well.
- Place one tortilla in bottom of lightly greased 10" pie pan.
- Spoon beef and salsa mixture on top of tortilla.
- Sprinkle 3/4 cup of cheese on top of beef.
- Place next tortilla on top of cheese.
- Spread beans evenly on tortilla.
- Spread sour cream over beans and top with 3/4 cup of cheese.
- Lay third tortilla on top.
- Cover with foil and bake at 350* for 25 minutes.
- Remove foil and top with remaining 1/2 cup of cheese.
- Return to oven for 5 minutes or until cheese is melted.
SAVORY MEXI PIE
Savory mexi twist on shepherds pie with ground beef, beans, corn, chiles, in a cumin-tinged tomato-y sauce smothered in mashed potatoes

- Roughly chop the onion and saute with the ground beef, cooking until beef is no longer pink. Drain grease off. Drain corn and green chiles, and put them in one bowl. Drain kidney beans and add to the beef in pan. Also to this add the beef broth, tomato paste, onion powder, oregano, chipotle chile powder, cumin, flour and sugar. Simmer mixture uncovered over medium high heat until it thickens up slightly. Taste for seasoning, adding salt & pepper if necessary. Layer in 2-qt casserole, beginning with the meat mixture. Then add the corn and chiles mixture, ending with the mashed potatoes spread over the top. (Can refrigerate at this stage if desired. If so, allow longer bake time if starting cold). Bake covered at 350 for 35-40 minute until bubbly. Uncover and add the cheese and bake 10-15 minute more until all melted. (May put under low broiler if desired to get the cheese crusty). Serves 4.

KUMQUAT'S SAVORY MEXICAN PIE
This was the result of using up some leftovers in my freezer and refrigerator. Didn't seem to be anything like it on Recipezaar. BF loved it and said I had to post it, so here it is! You can probably substitute the same amount of cumin for the chile and paparika, but I didn't have any at the time. I really liked the way the egg and cheese cooked together on top and it tasted really good with the bean mixture.

- Preheat oven to 375 degrees Fahrenheit.
- Add the pinto beans, half the cheese, chile, paprika, green onions, tomato and salsa. Mix to combine.
- Whisk together the two eggs and the rest of the cheese.
- Heat olive oil in non-stick skillet. Add the shallot, saute a bit, then the vegetarian crumbles. Cook until browned.
- Combine the bean mixture and crumbles. Mix and pour into pie crust. Pour the egg and cheese mixture on top.
- Cook for about 40-45 minutes until egg is done and cheese is melted.

My Royal Tweak of the popular "Impossible" XYZ pie recipes that abound in cookbooks and online. This dish uses the previous night's dinner leftovers. Four separate Zaar recipes,-(examples given below in recipe directions) were incorporated into one main dish! See what kind of culinary masterpiece you can come up with using your leftovers!

- *NOTE: Substitute any mild American cheese for the Mexican cheese. Examples are Monterey Jack or white cheddar.
- Preheat oven to 400°F.
- Lightly grease a 10 inch cast iron skillet.
- In large bowl combine the cooked rice, beans, corn, taco seasoning and cheese. Set aside.
- In saute pan, cook the onion and garlic in a small amount of oil until softened then add to the bean/rice mixture.
- Spread bean/rice mixture into the prepared pie plate.
- Sprinkle with cheese.
- Beat the milk, Bisquick substitute and eggs until smooth, 15 seconds in blender on high speed or 1 minute with hand mixer.
- Pour into pie plate. Bake until golden brown and knife inserted into center of pie comes out clean, about 25-30 minutes. Allow to stand 5 minutes before cutting.
- Garnish with additional shredded cheese; and if desired with sliced green onion and red pepper flakes.

TORTILLA CHIP CRUST FOR SAVORY PIE (QUICHE, MEXICAN PIE, ETC.)
Great use for those extra little pieces at the bottom of the bag, or chips that are going slightly stale. It's extremely easy, made with the same method as a graham cracker crust. I find that a blender or food processor works best for getting these crushed finely enough - roughly the same as graham cracker crumbs. If you're using salted chips, be sure to omit or adjust any salt in your recipe.

- In a saucepan, cook potatoes in boiling water until tender; mash and set aside. , Meanwhile, in a large skillet, brown beef until no longer pink; drain. Stir in the next nine ingredients. - Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Mix tomatoes, onion, cilantro, jalapeno pepper, and garlic salt together in a mixing bowl.
- Cook and stir beef in a saute pan over medium-high heat until no longer pink, 5 to 7 minutes. Drain fat and return beef to the pan. Add water and taco seasoning; stir thoroughly until fully incorporated and water has been absorbed, 2 to 3 minutes. Add the tomato mixture and pepper Jack cheese,
- Lightly flour a work surface. Roll each empanada wrapper out to a 6-inch circle. Scoop 1/3 cup beef filling onto the center of each wrapper. Fold each wrapper in half to enclose the filling.
