SAVORY CREPES

Savory Crepes image

Provided by Food Network

Categories     main-dish

Time 50m

Yield 8 (8-inch) large crepes

Number Of Ingredients 6

1 cup all-purpose flour
3 eggs
1 1/2 cups whole milk, divided use
1/4 teaspoon sea salt
1/8 teaspoon ground black pepper
3 tablespoons unsalted butter, melted, plus whole butter for cooking crepes

Steps:

  • Whisk together the flour, eggs, 1/2 cup milk, salt and pepper in a large bowl. Continue whisking until you have a smooth batter. Add the remaining cup of milk and stir well to combine. Cover the bowl and place it in the refrigerator to chill the batter for at least 30 minutes or several hours.
  • Melt the butter in a small saucepan over medium heat. Just before you are ready to make the crepes, whisk in the melted butter. The batter should be the consistency of heavy cream; if it is too thick, add milk slowly while whisking constantly until it is the right texture.
  • Heat a 9-inch non-stick skillet or crepe pan over medium heat. Melt a teaspoon of butter in the pan or spray with vegetable spray and heat the pan until a drop of water "dances" across the surface.
  • Using a ladle or a measuring cup with a lip, pour about 1/4 to 1/3 cup of the batter into the pan. Hold the pan with 1 hand and pour the batter in with the other. Swirl the pan while pouring so that the batter covers the pan thinly and evenly for each crepe. Pour off any excess batter. Try not to leave any holes. After the first few crepes you will know exactly how much batter your pan will hold.
  • Cook the crepe over medium-high heat until the edges turn brown, about 15 seconds. Flip the crepe using a small spatula and your fingers. Cook on the second side for another 10 to 15 seconds. The second side will not be as evenly browned as the first side. Remove the pan from the heat and invert it over a warm plate to stack the crepes. Keep warm until ready to use. Continue making crepes with remaining batter, adjusting the heat as needed.
  • If not using immediately, place a square of waxed paper between each 1, place in a resealable plastic bag and store in the refrigerator. Crepes can be refrigerated for up to 2 days or frozen for several months. Reheat uncovered in a low oven (250 degrees) for 15 minutes or until warm. Fill with your favorite filling.

Provided by Rachel Gaewski

Categories     Breakfast

Yield 6 servings

Number Of Ingredients 22

½ cup yellow onion, thinly sliced
½ yellow bell pepper, seeded and diced into 1/4 in (6 mm) pieces
½ cup roma tomato, seeded and diced
½ cup zucchini, diced
¾ cup japanese eggplant, about 1 small - diced
2 cloves garlic, unpeeled
2 tablespoons olive oil
2 teaspoons fresh thyme, plus more for garnish
½ teaspoon kosher salt, plus more to taste
¼ teaspoon freshly ground black pepper, plus more to taste
¼ cup goat cheese, room temperature
1 cup whole milk ricotta cheese
½ cup strawberry, finely chopped, plus more for garnish, quartered
¼ cup blackberry, halved, plus more for garnish
1 teaspoon lemon zest
1 tablespoon honey, plus more for garnish
whipped cream, for garnish
6 large eggs
1 ½ cups unsweetened coconut milk, full-fat canned
½ cup coconut flour
1 tablespoon coconut oil, melted, plus more for greasing
½ teaspoon kosher salt

Steps:

  • If making the savory filling, preheat the oven to 450°F (230°C).
  • In a large bowl, toss together the onion, bell pepper, tomato, zucchini, eggplant, garlic, olive oil, thyme, salt, and pepper. Spread in an even layer on a large baking sheet.
  • Roast the vegetables until they are soft and caramelized, about 18 minutes, flipping halfway through. Set aside to cool.
  • When cool enough to handle, pick the garlic from the vegetables and remove the skin. Add to a large bowl and mash into a paste. Add the goat cheese and stir to combine, then add the vegetables and toss to coat. Season with salt and pepper.
  • Use immediately to fill the crepes, or store in an airtight container in the refrigerator for up to 3 days.
  • If making the sweet filling: In a small bowl, stir together the ricotta, strawberries, blackberries, lemon zest, and honey.
  • Use immediately to fill crepes, or store in an airtight container in the refrigerator up to 3 days.
  • Make the crepes: In a large bowl, combine the eggs, coconut milk, coconut flour, coconut oil, and salt.
  • Using an immersion blender, blend the ingredients to form a smooth batter, scraping down the sides of the bowl as needed.
  • Preheat a 9-inch (22 cm) nonstick skillet or crepe pan over medium heat. Add just enough oil to coat the pan, about ½ teaspoon. Swirl the pan to coat evenly.
  • Add ½ cup batter to the hot pan and swirl the pan around again until the batter evenly coats the bottom all the way to the edges. Cook for 4-5 minutes, or until the bottom of the crepe is golden brown in spots and the top is completely cooked through with no raw batter on the surface.
  • Add ¼ cup of your preferred filling to the top left quarter of the crepe. Using a small spatula or spoon, evenly spread the filling over that section, leaving a ½-inch (1 ¼ cm) border along the outside edge.Fold the bottom half of the crepe over the top half, then fold the right (unfilled) side over the left side to form a triangle. Use a rubber spatula to gently transfer the crepe to a plate. Repeat with the remaining batter and filling.
  • Garnish the savory crepes with more thyme and the sweet crepes with whipped cream, quartered strawberries, blackberries, and honey.
  • Enjoy!

SAVORY BEEF FILLING FOR CREPES

Savory Beef Filling for Crepes image

Most recipes for crepes are generally the same, tweaked for personal tastes so I will leave out the crepes recipe for now. The beef sauce is a recipe that I've developed loosely from beef stroganoff, made with beef stew meat, potatoes, green onions, and any veggies you choose (I prefer carrots and/or broccoli.) The result of this recipe is a creamy, savory dinner that'll leave you wanting more. Serve sauce inside or on top of crepes.

Provided by Corrie Bergmann

Categories     Sauces

Time 45m

Yield 4

Number Of Ingredients 17

1 tablespoon olive oil
1 pound cubed beef stew meat
salt and ground black pepper to taste
1 medium potato, peeled and cubed
2 medium carrots, chopped
3 stalks green onions, or more to taste, chopped
1 cup milk
1 cup warm water
1 ½ teaspoons beef bouillon granules
2 tablespoons all-purpose flour, or more as needed
¼ cup dry white wine
1 ½ teaspoons Worcestershire sauce
¼ teaspoon garlic powder, or to taste
¼ teaspoon onion powder, or to taste
¼ teaspoon dried cilantro, or to taste
¼ teaspoon dried rosemary, or to taste
1 head broccoli, cut into florets

Steps:

  • Heat oil in a saucepan over medium-high heat. Add beef and season with salt and pepper. Cook and stir until it starts to brown, 4 to 5 minutes. Toss in potato, carrots, and green onions, then pour in milk. Reduce heat to medium and bring to a simmer.
  • Mix 1/2 cup water with bouillon granules. Mix remaining water with flour, whisking until well combined. Add both mixtures to the saucepan and stir to combine. Stir in wine, Worcestershire sauce, garlic powder, onion powder, cilantro, and rosemary. Cook, stirring every couple of minutes, until the vegetables begin to soften, about 10 minutes.
  • Add broccoli and reduce heat to medium-low. Simmer until all vegetables and beef are tender, 10 to 15 more minutes.
  • Serve sauce inside or on top of crepes.

EASY CREPES WITH BRANDY

Easy Crepes With Brandy image

This French crepe recipe calls for brandy, but you can substitute any flavorful spirit or liqueur to customize it to your tastes and pantry.

Provided by Judy Kagan

Time 45m

Yield Makes approximately 12-15 crepes

Number Of Ingredients 11

1½ cups whole milk
3 large eggs
3 tablespoons sugar
1 teaspoon salt
Scant 5 tablespoons unsalted butter, melted
½ cup brandy
1 teaspoon vanilla extract
1 cup all-purpose flour
Additional butter for cooking
Additional sugar or jelly such as apple or apricot for serving
Iron skillet or crepe pan, flexible metal or plastic spatula

Steps:

  • In a blender, combine milk and eggs. Mix on medium-high speed until foamy, about 10 seconds. Turn blender to low speed and remove feed top. With blender going, add sugar and salt. Replace feed top and blend on high speed for a few seconds, then turn blender back to low. In the same manner, add butter, brandy, and vanilla, replacing feed top and blending for several seconds after each addition. Turn blender off. Add flour all at once and blend until just combined.
  • Place crepe pan over moderately high heat. With flexible spatula, spread a tiny amount of butter in pan (an alternative method is to brush the pan with melted butter using a pastry brush) and heat until butter just begins to smoke. Pour ¼ to ⅓ cup batter into the center of the pan. As you pour, quickly tilt the pan in all directions to spread a thin layer of batter across the bottom. Pour in just enough batter to cover the pan.
  • Cook crepe over moderately high heat until bubbles just begin to form on the exposed surface, about one to two minutes. Lift up the edge to check the cooking process-if the crepe starts to burn before it is cooked through, turn down the heat. If it is not nicely browned after two minutes, turn up the heat.
  • When underside of crepe is browned, flip and cook another minute or less, until other side is browned. Remove from pan and keep warm in the oven, loosely covered with foil.
  • Grease pan with a very small amount of butter and repeat process. Continue until remaining batter is used, stacking cooked crepes on a plate in the oven. To serve, sprinkle each crepe with sugar or spread with jelly and fold or roll up. Do Ahead: Crepe batter can be made 1 day ahead. Refrigerate, covered, and blend briefly to recombine before cooking.
