Baked chicken with Brie Sauce -- a French delight that is simple to cook!

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Pour the beer or wine into a glass baking dish large enough to lay out the chicken. Season the chicken with salt, pepper and oregano on both sides, and place in the dish.
- Bake for 35 to 40 minutes in the preheated oven, or until juices run clear. While chicken is baking, slice Brie with the rind into 1/4 inch thick slices. When chicken is done, place slices of Brie over the top. Return to the oven for 3 to 5 minutes, until cheese is melted. Voila, chicken with Brie sauce is complete!

I got the idea for these appetizers from my favorite sandwich at a local restaurant-a symphony of sweet fig, roasted apple, melted brie and tangy garlic mayonnaise. I re-created this delectable combination in a quick appetizer with bright red cranberries and green spinach to give it a holiday twist. These scrumptious bites only take about 20 minutes, but taste like you spent hours; you can also make them a few days in advance, then warm them in the microwave for 20-30 seconds before serving. Steps:
- Preheat broiler. Cut baguette into 24 slices; place on foil-lined baking sheets. Combine mayonnaise and garlic; spread evenly over baguette slices. Add a half slice of chicken to each. Combine apple jelly and fig preserves; spread evenly over chicken., Add one baby spinach leaf to each slice. Standing the Brie wheel on end, cut crosswise into six narrow slices. Lay slices flat; cut each into four wedges. Add one cheese wedge to each baguette. Top with 3 cranberries. Broil 3-4 in. from heat until cheese is melted, 1-2 minutes. Cool 5 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken breasts in a 9x13 inch baking dish. Season with ground black pepper to taste. Top each breast with a slice of cheese.
- Mix together the soup and milk and pour mixture over chicken. Sprinkle bread crumbs on top and drizzle with melted butter/margarine. Bake covered in the preheated oven for 30 minutes. Uncover and bake for another 20 minutes or until golden brown.

- Remove giblets from chicken cavity, rinse chicken inside and out.
- In a large stock pot or container, mix water, sage, celery seed, thyme, salt, sugar and soy sauce to create brine. Stir well until the sugar and salt are dissolved. Place the chicken in the brine, cover and refrigerate for at least 4 hours or overnight.
- Remove chicken from the brine and rinse well inside and out. Sprinkle with 2 tablespoons of seasoned salt. Bake the chicken at 400 degrees F for 45 minutes.

A simple and savory meal for anyone who loves the creamy flavor of brie! The onions, brie and juices from the chicken create a nice sauce when the chicken is cut.

Steps:
- Saute onions and pancetta in skillet until onions translucent and pancetta browned adding 1 tbs. olive oil if necessary.
- Add minced garlic to onion and pancetta mixture and saute for 1 minute.
- Lay chicken open on work surface and spread 1/2 of onion mixture on one side of each chicken breast.
- Place 1-2 slices of brie on top of onions.
- "Close" each chicken breast and secure sides with toothpicks.
- Heat 1 tbs. olive oil on medium high heat.
- Dredge each breast in egg then flour mixture and place in skillet.
- Cook for 6-7 minutes per side depending on thickness of chicken.
- *Don't forget to remove toothpicks before serving.
