3 tablespoons olive oil
1 medium sweet potato, peeled and diced into 1/2-inch cubes
6 cups Swiss chard leaves, cut into 1-inch wide strips, plus 1/2 cup Swiss chard stems, sliced across into 1/4-inch-wide pieces
1 clove garlic, thinly sliced
1/2 small onion, sliced
1/3 cup roughly chopped toasted walnuts
1/4 cup roughly chopped kalamata olives
4 ounces feta cheese, crumbled
4 sun-dried tomatoes, cut into thin strips
Kosher salt and freshly ground black pepper
12 sheets frozen phyllo dough, thawed in the refrigerator overnight
1 stick (8 tablespoons) unsalted butter, melted
2 tablespoons olive oil
1 teaspoon crushed red pepper flakes
1 clove garlic, minced
1/3 cup red wine vinegar
2/3 cup honey
2 tablespoons minced toasted walnuts
1 tablespoon minced kalamata olives
Kosher salt and freshly ground black pepper, optional

Steps:

  • For the galette: Preheat the oven to 375 degrees F.
  • In a large saute pan, add the olive oil. Add the sweet potatoes and saute for about 5 minutes over medium heat. Add the Swiss chard stems, garlic and onion. Cook, stirring frequently, until the onions are tender and translucent, 3 to 4 minutes. Add the Swiss chard leaves and continue to cook until the leaves are tender, 2 to 3 minutes. Remove from the heat and let cool.
  • Once cooled, add the walnuts, olives, feta and sun-dried tomatoes to the mixture, then toss until the ingredients are evenly distributed. Season with salt and pepper.
  • Line an 18-by-13-inch baking sheet with parchment paper. Place a sheet of phyllo on the baking sheet so the corner of the phyllo sheet is aligned with a corner of the baking sheet. Brush with butter. Place another piece of phyllo overlapping the first sheet, making sure the corner of the phyllo sheet is aligned with another corner of the baking sheet. Repeat with 2 more sheets of phyllo, brushing with butter in between so the entire baking sheet is covered with a layer of phyllo. This is the first layer consisting of 4 sheets of phyllo. Repeat twice more with the remaining 8 sheets of phyllo so you have 3 layers total. Once all the sheets are stacked, spread the filling out into a rectangle, just smaller than a 9-by-13-inch pan. Fold over the dough so it just begins to cover the filling all around the edges. Bake until the crust is golden brown, 15 to 20 minutes.
  • For the sauce: In a small saucepot over medium heat, combine the olive oil, crushed red pepper flakes and garlic. Cook until the garlic begins to toast and becomes golden brown, about 2 minutes. Add the red wine vinegar to stop the garlic from continuing to brown. Reduce by half and add the honey. Bring to a boil, then remove the mixture from the heat and let cool until thickened slightly. Add the walnuts and olives. Season with salt and pepper if needed. Let sit at room temperature for 15 minutes before serving.
  • Serve the galette with the sauce on the side.

2 tablespoons extra-virgin olive oil, plus more for brushing
1 9-ounce box frozen artichoke hearts
1 small leek (white and light green parts only), sliced
1 4-ounce piece Black Forest ham, chopped
1 1/2 cups chopped broccoli florets
Kosher salt and freshly ground pepper
1 round refrigerated pie dough (half of a 14-ounce package)
1 tablespoon Dijon mustard
1 cup grated gruyere cheese
6 radishes
5 cups mixed baby greens (about 3 ounces)
1 tablespoon white wine vinegar

Steps:

  • Preheat the oven to 450˚. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the artichoke hearts in a single layer and cook, turning, until browned, 2 to 3 minutes. Scatter the leek, ham and broccoli on top and cook, stirring, until the vegetables soften, 2 to 3 minutes; season with salt and pepper.
  • Line a rimmed baking sheet with foil. Unroll the pie dough on the prepared pan and gently flatten any curled edges. Spread the mustard on the dough, leaving a 1-inch border. Top with half the gruyere, then the vegetable mixture, then the remaining gruyere. Fold in the edges of the dough, pleating as needed. Lightly brush the crust with olive oil and sprinkle with pepper. Bake until the pastry is golden brown and the cheese melts, 20 to 25 minutes.
  • Meanwhile, thinly slice the radishes and combine in a large bowl with the mixed greens, vinegar and remaining 1 tablespoon olive oil. Season with salt and pepper and toss. Serve the galette with the salad.

CHARRED COURGETTE, LEMON & GOAT'S CHEESE GALETTE

110g unsalted butter
100g plain flour
100g wholemeal rye flour
1 tbsp lemon thyme or normal thyme, finely chopped
½ tsp fine sea salt
1 egg , lightly beaten
2 bunches of spring onions , kept whole, roots trimmed
2 courgettes , cut into strips about 5mm thick
5 tbsp mascarpone
150g soft goat's cheese
1 small lemon , zested
50g parmesan or vegetarian alternative, finely grated
pine nuts , toasted, and a drizzle of olive oil, to serve

Steps:

  • The night before you make the galette, wrap the butter and put it in the freezer. When you're ready to make the pastry, put the plain flour, rye flour, thyme and sea salt in a large mixing bowl. Take the butter out of the freezer and wrap one end in foil, then use this to hold it as you coarsely grate the butter into the flour mixture. Unwrap the last piece of butter and carefully grate that in as well. Roughly mix everything, then add 5-6 tbsp cold water and mix swiftly with a cutlery knife to combine, then use your hands to bring it together into a dough and knead briefly. Wrap and chill in the fridge for at least 1 hr. Will keep in the fridge for up to two days.
  • For the topping, heat a griddle pan or non-stick frying pan over a high heat until searing hot, then griddle the spring onions in two batches and on each side for 1-2 mins, or until you have achieved dark char marks. Set aside on a plate, then repeat with the courgette strips. You can do this the day before and keep the cooked vegetables in an airtight container overnight.
  • Mix the mascarpone and goat's cheese with the lemon zest and parmesan in a bowl until smooth. Season to taste and set aside.
  • Roll the pastry out between two pieces of baking parchment to a rectangle roughly 35 x 25cm. Peel off the top layer of parchment and spread the cheese mixture over the pastry, leaving a 3cm border. Top with the spring onions and brush the border with some of the beaten egg. Use the parchment underneath to slide the galette onto a baking sheet. Chill for 30 mins.
  • Heat the oven to 200C/180C fan/gas 6 and put another baking sheet inside to get hot. Brush the edges with more beaten egg, then slide the galette, still on its paper, onto the hot baking sheet. Bake for 30 mins, then top with the courgette and bake for a further 5 mins, or until the pastry is golden brown and crisp at the edges. Serve with a drizzle of olive oil and scatter over some pine nuts, if you like. Goes well with mint sauce.

This recipe requires a fair amount of work and ingredients, but it's definitely worth the effort for the exquisite end product. Make this for a special occasion, or prepare it in advance and keep it in your freezer. This is best frozen in parts: the crepes should be frozen interleaved with greaseproof paper (i.e. wax paper) and wrapped in foil, and the sauces should be frozen separately. This recipe is from Roz Denny's 'The Ultimate Vegetarian Cookbook'

1 cup plain flour
1 pinch salt
1 egg
1 1/4 cups buttermilk (or milk and water, mixed)
oil (for cooking)
2 leeks, thinly sliced
1 small fennel bulb, thinly sliced
4 tablespoons olive oil
3/4 cup red lentil
2/3 cup dry white wine
1 (14 ounce) can chopped tomatoes
1 1/4 cups stock
1 teaspoon dried oregano
salt & fresh ground pepper
1 onion, sliced
8 ounces mushrooms, sliced
8 ounces frozen leaf spinach, thawed and squeezed dry
7 ounces low-fat cream cheese
2 ounces parmesan cheese, freshly grated

Steps:

  • Make the crepe batter by mixing the flour, salt, egg, and buttermilk or milk/water in a blender until smooth. Set aside while you prepare the filling (the crepes benefit from this sitting time).
  • Gently fry the leeks and fennel in half of the olive oil for 5 minutes, and then add the lentils and wine. Cook for a minute to reduce, then stir in the tomatoes and stock.
  • Bring the leek/fennel mixture to a boil. Add the oregano and seasoning, and simmer for 20 minutes, stirring occasionally until the mixture thickens.
  • Fry the onion and mushrooms in the remaining olive oil for 5 minutes. Stir in the spinach and heat. Season well, and then mix in the cream cheese.
  • Returning to the crepe batter, make about 12-14 crepes in a well heated non-stick frying pan.
  • Lightly grease a 20 cm-/8 inch-diameter deep spring-form cake tin, and line the base and sides with some of the crepes, overlapping them as necessary.
  • Layer the remaining crepes with the two fillings, sprinkling Parmesan in between and pressing them down well. Finish with a crepe on top.
  • Cover with foil and set aside to rest. Preheat the oven to 375 F (190 C). Bake for about 40 minutes, then turn the galette out and allow it to firm up for 10 minutes before cutting into wedges.
  • For Vegetarian the stock must be vegetable.

1 pound Roquefort or Camembert, softened and the rind discarded
1/4 cup heavy cream
1/4 cup dry white wine
1 large egg yolk
2 tablespoons all-purpose flour
3 cups all-purpose flour
2 tablespoons sugar
1/4 teaspoon salt
1 1/2 sticks (3/4 cup) cold unsalted butter, cut into bits
2 large eggs, beaten lightly
1/4 cup sliced almonds, preferably blanched, toasted lightly
1 large egg yolk (egg wash)
1 tablespoon water (egg wash)

Steps:

  • Make the filling:
  • In a food processor blend together the Roquefort, cut into pieces, the cream, the wine, the egg yolk, the flour, and salt and pepper to taste until the filling is smooth.
  • In a bowl combine the flour, the sugar, and the salt, add the butter, and blend the mixture until it resembles coarse meal. Stir in the eggs and on a lightly floured surface knead the dough lightly for several seconds, or until it is combined. Divide the dough in half, form each half into a ball, and chill the dough, wrapped in plastic wrap, for 1 hour.
  • On the lightly floured surface roll out each ball of dough into a 10-inch round. Press 1 of the dough rounds into the bottom and 3/4 inch up the side of a buttered 9-inch round cake pan, spread the filling evenly over the bottom of the dough with a narrow metal spatula, and sprinkle it with the almonds. Using the tip of the spatula, cleaned, fold the edge of the dough over the filling. Arrange the remaining dough round on top of the filling and with the spatula press the edge of the top round between the bottom round and the side of the pan, enclosing the filling and sealing the galette. Score the top in a diamond pattern with a fork, brush the dough with the egg wash, and chill the galette for at least 30 minutes and up to 8 hours. Bake the galette in the middle of a preheated 400°F. oven for 50 to 55 minutes, or until it is golden brown, and let it cool in the pan on a rack for 10 minutes. Run a thin knife around the edge of the galette, turn the galette out carefully onto a plate, and invert it onto the rack. Let the galette cool completely and serve it, cut into thin wedges, with the grapes.
