SAVORY BLUEBERRY JAM WITH BALSAMIC VINEGAR AND ROSEMARY RECIPE

- Saute the finely minced shallot in oil over medium heat. Add the blueberries and sugar. Bring to first bubble. Now add vinegar and stir. Add the rosemary, nutmeg, pepper and salt. Allow to continue boiling gently and reducing in water content for 10-15 minutes. Spoon jam into jars. Process in boiling water for 10 minutes
BLUEBERRY JAM

- Put a plate in the freezer for you to test your jam is set later. Sterilise two 500ml jam jars so they are ready to use.
- Put the blueberries, sugar, vanilla and lemon in a large heavy-based saucepan over a medium heat. Crush the blueberries a little with a potato masher. Bring to the boil, then reduce to a simmer and cook for 30 mins. Skim off any skum that has formed on the top with a spoon and discard.
- Test the jam is set by spooning a mound on to your cooled plate. Put in to the fridge for 3 mins. If the jam forms a skin and ripples when you push it with your finger, it's ready. If not, return to the heat for 5 more mins then repeat the test. Do this until you reach setting point.
- Leave the jam to sit for 10 mins off the heat. Ladle into your warm, sterilised jars and seal the lids on top. Leave to cool completely. Will keep for six months unopened in a cool, dry place, or two weeks once opened in the fridge.

Steps:
- Rinse the berries and remove their hulls, then roughly dice.
- Measure the fruit into a 6 to 8 quart nonreactive pot and add lemon juice and the proper amount of calcium water; stir well.
- Measure the sugar into a separate bowl adn thoroughly mix the proper amount of pectin powder into the sugar; set the mixture aside.
- Bring the fruit to a boil over medium-high heat. If it starts to foam, skim off the top and discard.
- Add the balsamic vinegar and return to a boil.
- Pour the pectin-sugar mixture into the boiling jam stirring as you add; stir vigorously for 1-2 minutes until the sugar dissolves.
- Return the fruit to a boil and remove from heat; skim off any foam.
- Fill jars leaving 1" head space.
- Process for 6 minutes.

- Pick the blueberries but do not wash them. Place them in a large pot with the sugar, lemon juice and rosemary and give it a stir.
- Place the pot over low heat for about 10 minutes, stirring occasionally, so the sugar dissolves before the fruit starts simmering. When it does, bring it to a rapid boil and cook for 25 minutes. You can do a test: spoon a drop of jam on a saucer chilled in the freezer and check if the consistency is thick enough.
- Preheat the oven to very low, 80-100C, and place clean jars and lids in it to sterilise them, together with a jam funnel if using one. Take the jam off the heat, fish out the rosemary sprig and stir in the balsamic vinegar and the butter – butter gets rid of the foam and clarifies the jam. Let it sit in the pot for 15 minutes.
- Place the jars on a tea towel or cloth and fill with the jam. Close with lids and leave to cool completely.
