SAVORY BEEF AND RICE CASSEROLE
This savory beef and rice casserole is a delicious comfort food that's perfect for a family dinner.

Steps:
- Preheat oven to 350. Spray the bottom of a 7"x 11" rectangular, 8" x 8" square, medium-size oval, or round casserole dish with nonstick cooking spray.
- Brown the ground beef in a skillet and drain. Pour it into the casserole dish.
- Pour the rice over the ground beef.
- In a separate bowl, mix the water with the onion soup mix. Pour it over the rice and ground beef.
- Cover the casserole with foil and bake for 30 minutes or until the rice is done.
- Remove the foil and sprinkle the crispy onions over the top. Return the dish to the oven for another 10 minutes.
- Serve hot with a side vegetable or salad.

- Place flour in a large resealable plastic bag; add beef, a few pieces at a time, and shake to coat. , In a large saucepan coated with cooking spray, cook beef and onion in oil over medium-high heat until beef is browned on all sides. - Prepare Macaroni according to package directions. Brown ground beef with celery and onion. Sprinkle flour over cooked beef mixture. Stir to blend. Gradually add milk, soy sauce and basil. I can't remember where we found this recipe but is it ever good!! Hubby and I love stews, so this is a frequent meal in our home. Make sure you have some fresh bread to go with this one!!!

- Preheat oven to 350 degrees.
- In a dutch oven over medium heat, melt margarine.
- Cook beef in two batches until browned, stirring often.
- Remove beef from dutch oven and set aside.
- Stir in flour.
- Add broth, beer, water, onion, garlic, brown sugar, thyme and pepper.
- Heat to boil.
- Return beef to dish and add potatoes, carrots, celery and mushrooms, stir well to coat.
- Cover and bake at 350 degrees for 1 1/2 hours or until done.

SAVORY EGG CASSEROLE
My parents always served this egg casserole for special occasion breakfasts, and it remains one of my favorites. In the summer, they often served it along with tomatoes from the garden or fresh fruit and in the winter we often served it with hearty bread or grits and juice. Delicious!

- Sprinkle cheese in 9x9 inch square baking dish.
- Dot with butter.
- Mix cream, mustard, salt, and pepper, and pour half of the mixture over the cheese.
- Pour eggs on top.
- Pour remaining cream mixture over the eggs.
- Bake 25 minutes.
- Serve immediately.

- Heat shortening and saute onions until golden.
- Stir in beef and brown quickly over high heat, turning frequently.
- Stir in flour, stewed tomatoes, red wine, water, pimentos, salt, oregano leaves, ground pepper.
- Simmer a few minutes or until slightly thickened.
- In a 1 1/2 quart casserole dish or 6 individual ramekins layer macaroni, meat mixture, and cheese. Repeat ending with cheese.
- Bake in preheated 400 degree oven about 10 minutes for ramekins or 15 to 20 for casserole.
- Garnish with parsley.
