PAN-ROASTED CHICKEN WITH LEEKS

Number Of Ingredients 10

3 slices bacon, cut into 1/2-inch pieces
8 chicken drumsticks (about 2 pounds)
Kosher salt and freshly ground pepper
3 cloves garlic, smashed
1 bunch leeks, white and light green parts only, halved lengthwise and sliced
2 tablespoons all-purpose flour
1 cup low-sodium chicken broth
1/2 cup half-and-half
2 tablespoons chopped fresh parsley
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees F. Put the bacon in a large heavy-bottomed ovenproof skillet and cook over medium-high heat until some of the fat renders, about 5 minutes. Push the bacon to the side of the pan. Season the chicken with salt and pepper, then add it to the pan and cook, turning, until it starts to brown, about 5 minutes. Stir in the garlic and leeks, then arrange the chicken on top of the bacon-leek mixture. Transfer to the oven and roast until the chicken is golden and a thermometer inserted into the thickest part registers 160 degrees F, 25 to 30 minutes. Transfer the chicken to a platter.
  • Carefully return the skillet to the stovetop over medium-high heat. Sprinkle in the flour and cook, stirring, 1 minute. Add the broth and half-and-half and cook, stirring, 2 minutes. Bring to a boil and cook until slightly reduced, about 5 minutes. Stir in the parsley and a squeeze of lemon juice. Spoon the leek mixture over the chicken. Serve with the remaining lemon wedges.

Leeks grow in abundance in Normandy, in northern France, where the alliums are celebrated for their ability to transform even the simplest dish into something spectacular. Take chicken Normande, a multi-layered main course of braised chicken, hard apple cider (another local specialty), and of course, leeks. Serve this with crusty bread. This recipe appears in our cookbook "Martha Stewart's Vegetables" (Clarkson Potter).

1 whole chicken (about 4 pounds), cut into 10 pieces (each breast half cut in half crosswise)
Coarse salt and freshly ground pepper
1 tablespoon unsalted butter
2 teaspoons olive oil
4 small leeks (white and pale-green parts only), cut crosswise into 3-inch pieces, rinsed well (about 1 pound)
1 cup good-quality hard apple cider
1 tablespoon coarsely chopped fresh thyme leaves
1/2 cup store-bought or homemade Creme Fraiche
1 tablespoon finely chopped fresh flat-leaf parsley

Steps:

  • Season chicken all over with salt and pepper. Melt butter with the oil in a large enameled cast-iron Dutch oven over medium-high heat until just bubbling. Add half the chicken pieces, skin sides down; cook, turning once, until golden, 2 to 3 minutes per side. Transfer chicken pieces to a plate; set aside. Repeat with remaining chicken pieces; add to plate. Remove pot from heat; let cool slightly.
  • Return pot to medium-low heat, and add leeks. Cook, stirring frequently, until leeks begin to soften and are pale golden, about 3 minutes. Add hard cider and thyme. Move leeks to edges of pot, and add all the chicken pieces to pot, skin sides down. Arrange leeks over chicken. Cover, and cook 15 minutes (if liquid is bubbling rapidly, reduce heat to low). Turn chicken pieces, and cook until breasts are cooked through, about 5 minutes more. Use a slotted spoon to transfer chicken breasts to a plate, and cover to keep warm. Adjust leeks so they are submerged in liquid. Cook, uncovered, until the remaining chicken pieces are tender and cooked through, about 10 minutes.
  • Transfer all of the chicken to a warm serving platter. Remove leeks from pot, and arrange them around the chicken. Cover to keep warm. Return pot to medium heat. Cook, uncovered, until liquid has reduced by about half (to a scant 2/3 cup), 8 to 10 minutes.
  • Reduce heat to medium-low. Whisk in the creme fraiche and parsley. Ladle pan sauce over chicken and leeks. Serve immediately.

As made by one of my housemates. The original recipe apparently calls for a two or three spring onions (scallions??), but leeks are cheaper here in the UK. This also works well with turkey, according to another housemate!

1 chicken breast
2 stalks celery
1 inch leek
soy sauce, to taste
salt, to taste

Steps:

  • Dice the chicken and celery.
  • The celery should be sliced lengthways and then chopped along the lengths.
  • This will stop parts of it burning when you stir-fry it.
  • Finely chop the leek.
  • Place the celery in boiling water for a minute.
  • This will reduce the taste slightly.
  • Stir-fry the leek.
  • Then add the chicken and celery.
  • Cook until the chicken is cooked all the way through.
  • Add soy sauce and salt to taste.
  • Serve with rice.

75g brown basmati rice
2 tsp vegetable bouillon powder
1 bay leaf
1 tsp rapeseed oil
2 skinless chicken breast fillets (about 300g), chopped
1 leek (about 190g), thinly sliced
2 courgettes (about 215g), thinly sliced
160g frozen peas
4 walnut halves, broken
25g gorgonzola, chopped

Steps:

  • Tip the rice into a large pan with 600ml water, the bouillon powder and bay. Cover, bring to the boil, then reduce the heat and simmer for 20 mins. When the rice has been cooking for 10 mins, heat the oil in a large frying pan or wok, and stir-fry the chicken for a couple of minutes over a medium-high heat until just cooked. Remove from the pan, then fry the leek until starting to colour. Add the courgette, stir-fry for a few minutes more, then add the peas.
  • When the rice is cooked, tip it into the vegetables along with any liquid from the pan. Return the chicken to the pan or wok, then cover and cook for 5 mins more. Stir in the walnuts and cheese, and serve hot.

1 teaspoon celery seed
1 teaspoon chili powder
1 teaspoon onion salt
1 roasting chicken, cut up
3 tablespoons vegetable oil
2 green bell peppers, cut in 1/4 inch strips
1 red bell pepper, cut in 1/4 inch strips
2 leeks, sliced (white part only)

Steps:

  • In a small bowl, combine celery seed, chili powder and onion salt. Sprinkle over chicken, coating well.
  • In a Dutch oven, heat oil over medium heat. Add chicken and cook, turning until brown, about 10 minutes.
  • Reduce heat to low, cover and cook about 20 minutes, until chicken is tender.
  • Remove to serving platter and keep warm.
  • Pour off all but 2 tablespoons of fat from the pan. Return to medium heat. Add peppers and leeks.
  • Cook about 5 minutes, stirring, until leeks are soft. Serve over chicken.
