2 Tbsp. milk
1 tsp. garlic powder
1 onion, chopped
1 can (14.5 oz.) chicken broth
1 pkg. (8 oz.) KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA, divided
1 Tbsp. chopped fresh parsley
2 lb. red potatoes (about 6), peeled, thinly sliced

Steps:

  • Heat oven to 350ºF.
  • Mix cream cheese spread, milk and garlic powder until blended. Cook onions in large nonstick skillet on medium heat 5 to 7 min. or until crisp-tender, stirring frequently. Add cream cheese mixture, broth, 1 cup cheddar and parsley; mix well. Remove from heat. Gently stir in potatoes.
  • Spoon into 13x9-inch baking dish sprayed with cooking spray.
  • Bake 45 min. Top with remaining cheddar; bake 10 to 15 min. or until potatoes are tender.

1/4 cup olive oil
1 1/2 teaspoons salt

Steps:

  • Preheat the oven to 450ºF.
  • Clean and cut the potatoes into 1/2"-1" cubes.
  • In a large bowl, toss the potatoes with the oil and spices.
  • Spray a shallow baking pan or cast iron pan with cooking spray or rub lightly with oil. Spread the potatoes in the bottom of the prepared baking pan. Try to have the potatoes in a single layer with space in between for the ultimate crispiness.
  • Bake for 25 minutes, or until potatoes are tender. Stir the potatoes once after about 15 minutes of baking so they brown on all sides. 5 medium Russet potatoes
½ cup vegetable oil, as needed

Steps:

  • 1.Prepare the sour cream topping by folding the onion powder, garlic powder, and Italian seasoning into the sour cream. Cover and refrigerate until use.
  • 2.Dice the onion and chop the parsley.
  • 3.Combine with the bread crumbs, eggs, salt, and pepper.
  • 4.Peel the potatoes and shred.*
  • 5.Squeeze out any excess moisture from the shredded potatoes.
  • 6.Add potato shreds to the bread crumb mixture.
  • 7.Working in batches of three or four, scoop out ¼ cup of the mixture and place it in a large, lightly oiled pan over medium heat.
  • 8.Flatten to ¼-inch thick circle.
  • 9.Fry for three to five minutes on each side or until golden brown.
  • 10.As you finish each batch, transfer the pancakes to a cookie sheet lined with paper towels and place in oven turned to warm.
  • 11.Serve each pancake with a small dollop of seasoned sour cream mixture.
  • *Take care not to prepare the shredded potatoes first since they will turn brown before you can finish the rest of your mixture.

1 tablespoon packed brown sugar
¾ tablespoon orange zest

¼ cup sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place potatoes on baking sheet and bake until just softened, about 1 hour. Allow to cool for 15 minutes.

4 ounces smoked bacon, sliced

1 large egg
2 tablespoons heavy cream

  • Preheat oven to 400 degrees. Place the sweet potatoes on a parchment-lined baking sheet; bake until tender when pierced with a paring knife, about 45 minutes. Remove from oven; let cool slightly.

This is sort of a gourmet version of the baked potato but it's quite an easy process. You end up with a potato skin so delectable that you feel compelled to eat it (which is where lots of the vitamins are.) I like to use baking-sized Russets for this recipe but you can use whatever you have. If you're baking smaller potatoes, just cut back on the time a bit. It's important that all the potatoes be about the same size to insure uniform doneness. Also, I use extra virgin olive oil because it comes from the first pressing and it's pure, not extracted by the use of chemicals as in the case of cheaper olive oils.

4 large potatoes
4 teaspoons kosher salt
4 teaspoons extra virgin olive oil

Steps:

  • Preheat the oven to 400-degrees F.
  • Scrub and dry the potatoes.
  • Use a fork to poke each potato a half dozen places about 1/2" deep -- this will prevent them from blowing up in the oven which can happen sometimes!
  • Rub each potato all over with olive oil and lay them out on a baking pan. Then sprinkle the kosher salt over them and rub it all over each potato. Not all of it will cling to the potato but that's okay.
  • Bake the potatoes on the baking pan on the lower-middle oven rack for one hour and then check one for tenderness by inserting a sharp knife into the center. It should insert very easily and smooth. If you hit a solid center, give them 10 more minutes and check them again.
  • After the potatoes come out of the oven, you can brush off as much of the salt as you wish (I leave it on and that way I don't have to salt my potato.).
  • Top the potatoes with any or all of the following condiments unless you prefer it vegetarian-style: crisp and crumbled bacon, butter, sour cream and chives, sharp cheddar cheese. (Vegetarians may want to sprinkle on a little Mrs. Dash garlic blend seasoning.).

Twice-Baked Sweet Potatoes image

What's better than a healthy, roasted sweet potato for the ultimate side dish? A twice-baked sweet potato packed with even more delicious, sweet flavor, reminiscent of an individual sweet potato pie. These twice-baked sweet potatoes are flavored with maple syrup, butter, cream cheese, and spices to kick the flavor profile up a notch. This flavorful mixture is then stuffed back into the sweet potato halves and baked again for the most delicious and healthy side dish.

2 lbs sweet potatoes (4 medium-sized potatoes)
2 tbsp light butter
2 tbsp maple syrup
2 oz reduced fat cream cheese
1/2 tsp paprika
1/2 tsp cinnamon
1/2 tsp coriander
1/2 tsp kosher salt
1/4 tsp cayenne
1/4 tsp nutmeg

Steps:

  • Preheat the oven to 400F.
  • Wash the sweet potatoes; do not peel them.
  • Place the sweet potatoes on the wire rack in the oven and roast for 45-50 minutes.
  • Remove the potatoes from the oven and cut them in half lengthwise.
  • Scoop the insides of the potatoes out into a mixing bowl.
  • Mash with a fork. Add the butter, cream cheese, syrup and spices.
  • Mix thoroughly.
  • Scoop the mixture back into the sweet potato halves and arrange them in a baking dish.
  • Return to the oven to bake for 15-20 minutes or until golden brown and slightly crispy on top.

6 red potatoes, cut into wedges
2 tablespoons olive oil
2 teaspoons onion powder
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon garlic salt
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread potato wedges in a single layer on a baking sheet and coat with olive oil. Mix onion powder, chili powder, garlic powder, and garlic salt in a small bowl; sprinkle over potatoes and toss to coat evenly.
  • Bake in preheated oven until potatoes are tender, 30 to 35 minutes. Season with salt and black pepper.

Roast potatoes, rotating sheets halfway through, until very tender when squeezed, 70–90 minutes. Let cool on sheets. Increase oven temperature to 400°.
  • While potatoes roast, cook rosemary, sage, and 6 Tbsp. butter in a small saucepan over medium heat, stirring occasionally, until butter foams, then browns, and herbs are golden and crisp, about 5 minutes; let cool.
  • Scoop out flesh from potatoes and transfer to a large bowl (discard skins). Spoon about half of warm butter and fried herbs into bowl with potatoes. Add breadcrumbs to saucepan with remaining butter-herb mixture and toss to coat; season with salt and pepper. Transfer to a small bowl.
  • Heat remaining 2 Tbsp. butter in same saucepan over medium. Add shallots and cook, stirring often, until translucent and golden around the edges, about 5 minutes. Add cream and bring to a simmer. Remove from heat and, using an immersion blender, blend cream mixture until smooth. Transfer to bowl with potatoes. Add eggs and Parmesan. Blend with immersion blender until light and smooth. Season with salt and pepper.
