2 romaine lettuce hearts, shredded
1 cup drained giardiniera salad (hot pickled vegetables), available in Italian foods aisle or in bulk bins near specialty olives in the grocery store
1 lemon, juiced
Extra-virgin olive oil, for drizzling
Salt and freshly ground black pepper

Steps:

For salad, place shredded greens in a serving dish and combine with coarsely chopped hot pepper salad (giardiniera). Dress salad with a little lemon juice, extra virgin olive oil, salt, and pepper, to your taste

2 cups giardiniera Italian hot pickled vegetable salad (pepperoncini, cauliflower, carrots and celery) drained, available on Italian foods aisle, chopped
2 romaine hearts, chopped
1/2 cup pitted good quality olives, any variety
1/3 pound stick pepperoni or stick salami, diced
A handful flat-leaf parsley, chopped
2 tablespoons red wine vinegar, eyeball it
4 tablespoons prepared pesto
3 to 4 tablespoons extra-virgin olive oil, eyeball it
Salt and pepper

Steps:

Combine salad ingredients in a bowl and dress salad with vinegar, extra-virgin olive oil, then season with salt and pepper, to your taste. In a small bowl, add 4 tablespoons pesto and a splash of red wine vinegar. Slowly pour in extra-virgin olive oil until the dressing just comes together. Drizzle the dressing over top of salad.

2 heats romaine lettuce, chopped
3 tablespoons canned or jarred sliced jalapenos, drained
3 tablespoons salad olives, Manzanilla with pimento, drained
1 vine ripe tomato, seeded and chopped
1/2 red onion, chopped
1 cup broken tortilla chips, any variety
2 tablespoons taco sauce
1 lime, juiced
2 tablespoons chopped cilantro or flat-leaf parsley
1/4 cup olive oil, eyeball it
Salt and pepper

Steps:

Combine salad ingredients in a bowl, toss with tortilla chip pieces. In a second bowl, combine taco sauce, lime juice, cilantro or parsley. Whisk in olive oil in a slow stream until dressing is combined. Toss salad with dressing to combine and coat ingredients evenly, then serve.

This salad is like one big antipasto. I love the combination of the garlicky, salty salami and spicy pepperoncini, cooled by the provolone cheese and paired with the crisp iceberg lettuce. I make the vinaigrette heavy on the vinegar--equal parts vinegar and oil--because the acidity helps balance the strong flavors of the salad.

1 head of iceberg lettuce, chopped
1/2 English cucumber, chopped
1 red bell pepper, chopped
One 15.5-ounce can chickpeas, drained, rinsed
1 cup chopped salami
1 cup chopped provolone cheese
One 6-ounce jar marinated artichoke hearts, drained and chopped
1/2 medium red onion, finely minced
1 cup cherry tomatoes, halved
8 whole pepperoncini
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1 teaspoon minced fresh rosemary
1 garlic clove, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

Mix all the salad ingredients in a large bowl.
Combine the vinaigrette ingredients in a small glass jar with a tight-fitting lid and shake well.
Toss the salad with the vinaigrette and serve immediately.

1/8 teaspoon salt

Steps:

In a small bowl, whisk all ingredients until blended. Cover and refrigerate for at least 2 hours before serving.
