Roasted Brussels Sprouts With Almonds And Pomegranate image

3/4 cup Marcona almonds, roasted and roughly chopped
4 tablespoons Extra Virgin olive oil, divided
kosher salt
1/4 teaspoon black pepper
2 1/2 pounds Brussels sprouts, trimmed, outer leaves removed, and halved
1 tablespoon lemon juice
1/2 cup pomegranate seeds
1/4 cup fresh parsley, finely chopped
shaved parmesan, for garnish (optional)

Steps:

  • Step 1 Preheat the oven to 350 degrees F.
  • Step 2 Place the almonds on a baking sheet and roast in the uneven till fragrant, about 10 minutes. Remove from the oven and allow to cool. Once cool enough to handle, roughly chop and set aside.
  • Step 3 Increase the oven to 425 degrees F.
  • Step 4 Toss the sprouts with 3 tablespoons olive oil, a generous amount of salt and the black pepper. Place the seasoned sprouts on the baking sheet you used to roast the almonds. Place in the oven and roast till they are beginning to brown and get crispy, about 20 minutes. Remove from he oven and allow to cool slightly.
  • Step 5 Once the sprouts are cool, drizzle with the remaining 1 tablespoon of olive oil and lemon juice. Add the chopped roasted almonds pomegranate seeds and parsley, toss well to coat. Garnish with shaved parmesan, if using. Serve sprouts warm or at room temperature.

3 lbs Brussels sprouts, trimmed and halved
1/2 cup unsalted butter, melted
1 cup slivered almonds (4 Oz.)
coarse salt & freshly ground black pepper
3 tablespoons honey
3 tablespoons fresh lemon juice (about 1 lemon)

Steps:

  • Preheat oven to 400 degrees. Place sprouts,butter,and almonds on a rimmed baking sheet. Season with salt and pepper; toss to combine. Roast, stirring, until golden brown and tender, 35 to 40 minutes.
  • Transfer to a serving bowl; immediately dress with honey and lemon juice, and season with salt and pepper. Serve warm or at room temperature.

This was a side dish my mother taught me to make after she modified a recipe she'd found in a cookbook to suit our family's tastes. These get deliciously crunchy on the outside and soft on the inside. So good I could eat them as the meal itself. NOTE: Try to choose sprouts that are all about the same size. Smaller sprouts work best.

2 lbs fresh Brussels sprouts
3 tablespoons extra virgin olive oil
1 tablespoon unsalted butter
1 cup slivered almonds
2 -3 teaspoons kosher salt (or to taste)
2 -3 teaspoons fresh black pepper (or to taste)

Steps:

  • Trim the cut ends of the brussel sprout, remove any outer leaves that fall off, and cut the sprouts in half lengthwise.
  • Heat oil and in a large flat-bottomed skillet over medium-high heat.
  • When the oil it hot, sprinkle salt and pepper in the oil and cover the bottom of the pan with the sprouts, cut side down. Don't worry if the sprouts touch, just get as many in as you can.
  • Sprinkle the top of the sprouts with a little more salt and pepper and let them sizzle for approximately 5 minutes.
  • Divide the butter and drop small amounts around the top of the pan. It will melt down over the sprouts.
  • After another minute or two, check a sprout to see if it's browning nicely. If so, turn the sprouts over and allow the other sides to brown for another 5 minutes.
  • Sprinkle the almonds over the sprouts and stir the pan to incorporate the nuts. Watch carefully to prevent the almonds from scorching.
  • Roast for another 3-5 minutes, until the sprouts and almonds are toasty and crisp. Serve as is or sprinkle parmesan cheese over the top for a little extra goodness!

1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
3 tablespoons milk
1/4 teaspoon dried thyme
1/4 cup sliced almonds, toasted

Steps:

  • Cut an x in the core of each sprout.
  • In a pan, cook the sprouts according to package directions; drain. Remove and set aside.
  • To the pan, add soup, milk and thyme; heat through.
  • Return sprouts to pan; stir to coat.
  • Move to a dish; sprinkle with almonds.

4 (10 ounce) containers Brussels sprouts, trimmed and halved
4 slices bacon
2 tablespoons maple syrup
1 tablespoon Dijon mustard
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
1/4 cup orange-flavored dried cranberries

Steps:

  • Over high heat, bring pot of salted water to boil. Add Brussels sprouts. Cover; cook until tender, 7-8 minutes. Drain.
  • Meanwhile, in nonstick skillet over medium-high heat, cook bacon until crisp; drain.
  • In bowl, whisk together syrup, mustard, vinegar, salt and pepper; gradually whisk in oil until smooth. Crumble bacon. Before serving, toss Brussels sprouts and cranberries with dressing; top with bacon.

1 quart Brussels sprout
2 tablespoons Dijon mustard
2 tablespoons cream or 2 tablespoons soymilk
1/2 teaspoon pepper

Steps:

  • Trim the base of the sprouts and peel off the bruised outer leaves.
  • Cut in half if the sprouts are large.
  • Cook the sprouts in lightly salted boiling water for around 5-8 minutes.
  • Continue to taste test and they are done when just barely tender with a slight crispness left.
  • DO NOT OVERCOOK THESE LITTLE CABBAGES!
  • They will then be strong tasting, which is why a lot of people don't like this delicious vegetable.
  • Stir in the mustard and the cream.
  • Season with pepper.
