Sautéed bell peppers are a quick and easy way to add veggies, color, flavor and texture to an array of dishes. Perfect for fajitas and topping pizza or tacos.

1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
1 green bell pepper
1 tablespoon olive oil

Steps:

  • Slice the peppers into strips.
  • Heat a skillet over a medium high heat and add the oil.
  • Add the sliced peppers and cook for 5 minutes while stirring until soft.

Sauteed Hakurei Turnips and Braised Greens image

This recipe is from The Culinary School of the Rockies. Got Hakurei turnips from my CSA and local farmer's markets and looking for different ways to prepare.

Number Of Ingredients 6

1 bunch baby turnip (actually hakurei turnips, with greens)
1 lb leafy greens (such as Chard, Mizuna, spinach, tatsoi)
2 teaspoons oil, divided
1/2 cup apple juice or 1/2 cup white wine
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cut the greens from the turnips. Wash and tear all the greens into large pieces and remove the stems. Cut the turnips into bite sized pieces.
  • Heat 1 teaspoon of oil in a sauté pan over medium-high heat. Sautee the turnips stirring or tossing occasionally until they are crispy outside and tender inside. Season with salt and pepper and remove to a warm plate.
  • In the same pan, heat the remaining oil over medium heat.
  • Add the washed and wet greens, and add to pan in batches. Stir and mix as they wilt.
  • Add the wine or other liquid and cook until it is mostly evaporated.
  • Plate greens and arrange the warm turnips on top.

Steps:

  • Heat oil in a skillet and add garlic cook 2 minutes then add the the bell pepper and asparagus Saute until the asparagus is heated through.
  • Remove from heat and season with salt& pepper and the vinegar.

8 cups fresh spinach

  • In a large skillet, heat the oil over moderate heat.
  • Add the onion and garlic and sauté for 5 minutes.
  • Add the bell pepper and sauté for 3 minutes.
  • Add the spinach, sprinkle with the salt and sugar and cook, turning for 4 minutes or until the spinach is wilted.

1 red bell pepper, seeded and sliced in strips
1/2 yellow onions or 1/2 white sweet onion, sliced in strips
1/2 clove garlic, very finely chopped
2 -3 tablespoons extra virgin olive oil
1 dash white pepper or 1 dash black pepper, to taste
1 dash oregano, to taste
1 dash red pepper flakes, to taste
3 -4 leaves fresh basil, left whole

Steps:

  • In a large frying pan, gently heat the olive oil and garlic for about 60 seconds on a low flame.
  • Add the peppers and onions, basil, pepper, oregano, and pepper flakes.
  • Sautee until the the onions are soft and transparent, the peppers and basil"wilt", and the garlic is lightly golden, 10-15 minutes.
  • Serve hot.

3 to 4 medium turnips, cut into 1/2-inch-thick rounds, peeled and sliced into strips
2 medium red bell peppers, cut into short strips
2 to 3 tablespoons minced parsley, dill, or scallion
1 cup green sprouts (such as baby pea shoots), optional
Salt and freshly ground pepper to taste

Steps:

  • Heat the oil in a wide skillet. Add the turnips and bell peppers, and sauté over medium heat, stirring frequently, until the vegetables are tender-crisp to your liking, about 8 minutes.
  • Stir in the herbs and optional sprouts, season to taste with salt and pepper, and serve.
