1-1/2 pounds fresh green beans, trimmed and cut into 1-1/2-inch pieces
3 tablespoons butter
3 tablespoons brown sugar
2-1/4 teaspoons soy sauce
2-1/4 teaspoons Worcestershire sauce
4 to 5 tablespoons real bacon bits
4 to 5 tablespoons sliced almonds, toasted

Steps:

  • Place beans in a large saucepan and cover with water. Bring to a boil; cook, uncovered, for 8-10 minutes or until crisp-tender., Meanwhile, melt butter in a large skillet over medium heat. Stir in the brown sugar, soy sauce and Worcestershire sauce. Cook for 1 minute or until sugar is dissolved. , Drain beans; add to the skillet. Cook and stir for 2 minutes or until heated through. Sprinkle with bacon and almonds; toss to coat. Serve with a slotted spoon.

Sautéed Frozen Green Beans with Bacon and Slivered Almonds image

Frozen green beans are sautéed in bacon grease and garlic then topped with crispy bacon and almond slivers. An easy side dish that looks and tastes amazing!

12 oz frozen greem beans
1/2 lb bacon
1/4 cup slivered almonds
2 cloves fresh garlic (minced)

Steps:

  • Start by cooking bacon in a large skillet or frying pan on medium heat. Place cooked bacon on paper towels and set aside. Once cool, crumble bacon.
  • Add green beans to the pan with all that glorious bacon grease. Stir to coat all the green beans. Continue to stir every couple of minutes or so. This will insure all the green beans are cooking evenly and are all coated in grease.
  • Mince fresh garlic while waiting on green beans to cook.
  • Cook green beans for 5-10 minutes for frozen green beans and 15-20 for fresh, until green beans are soft but have a slight bite and are a bit charred in places.
  • Add in the minced garlic and cook for one minute. I like to push the green beans aside before throwing the garlic. This allows the garlic to cook on the pan surface instead of being stuck on top of green beans.
  • Throw the slivered almonds and bacon crumbles in with the garlic and continue to sauté for another 2 minutes. Make sure the garlic and almonds don't burn.
  • Lightly Salt and then give everything a good last minute stir so that the bacon, garlic, and almonds get distributed. Serve and enjoy!

Not-Your-Grandmother's Sauteed Green Beans with Slivered Almonds image

BSD is a chef acronym you should know. It stands for blanch, shock and drain, and it applies to many vegetables that need precooking at restaurants. Blanching helps take the raw bite out of vegetables but keeps their texture. Once blanched, shocking in ice water stops the cooking process. Then draining removes any excess moisture and gets them ready for seasoning or sauce. This is a great technique for parcooking and holding all vegetables. It cooks the vegetable about 90 percent. Then all you need to do is finish cooking and season as you wish!

Kosher salt, for blanching water
1 pound (454 g) green beans, trimmed
3 tablespoons (42 g) unsalted butter
3 ounces (84 g) slivered almonds
2 medium cloves garlic, thinly sliced
1 medium shallot, thinly sliced
1 1/2 tablespoons (23 ml) freshly squeezed lemon juice
1 teaspoon Maldon salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
1 lemon, zested

Steps:

  • Bring a large pot of salted water to a boil and prepare an ice bath. For the ice bath, use a lot of ice, add 1 teaspoon or so of kosher salt (which will make it a bit colder) and put a colander inside the bowl so that the ice stays separate from the beans and it's easy to drain the beans as soon as they are well chilled.
  • Add the green beans to the boiling water and cook until tender-crisp, about 3 minutes. Ladle out 2 tablespoons (30 ml) of the water, then transfer the green beans to the ice bath using a wire mesh spider or tongs. Allow to chill completely, then lift the colander out of the ice bath, and dry the green beans thoroughly with kitchen towels or paper towels. This can be done ahead of time.
  • In a medium skillet, heat the butter and almonds over medium heat and cook, stirring frequently, until the almonds are deeply browned and nutty, 2 to 4 minutes. Add the garlic and shallot and cook, stirring often, until lightly browned, about 2 minutes longer. Add the lemon juice, along with 1 to 2 tablespoons (15 to 30 ml) of the cooking water. Increase the heat to high and stir and shake the pan rapidly to emulsify, about 30 seconds. The sauce should have a glossy sheen and not appear watery or greasy. If it's still watery, continue to simmer and shake. If it looks greasy, add another 1 tablespoon (15 ml) of water. When the sauce is ready, remove from the heat.
  • Add the green beans to the pan with the sauce and toss to coat and combine. Return to medium heat and cook, tossing, until heated through, about 1 minute. Season to taste with Maldon salt and pepper. Garnish with the lemon zest and serve immediately.

1 teaspoon butter
1 shallot, minced
3 cups green beans, trimmed and cut into pieces

1 pinch salt

  • In saute pan, melt olive oil and butter over medium-low heat.
  • Add shallots and saute 1 minute.
  • Add green beans, garlic, salt, and onion powder. Stir to coat beans.
  • Saute until beans are almost tender.
  • Add almonds and continue to saute until green beans are crisp-tender.
  • Serve warm as a side dish, or over rice as a vegetarian main course.

French Green Beans Sautéed With Mushrooms and Almonds image

I created this Asian-inspired dish last night. It is permissible for phase one of the South Beach Diet and we LOVED it. I used frozen french beans from Trader Joe's, but fresh beans would be wonderful! Amounts are highly approximated; I didn't measure when making this, but this is pretty similar to what I did. (If using fresh beans, you'd probably want to blanch them in boiling water and then plunge in ice water, and *then* add to the pan.)

1 tablespoon olive oil
2 -3 garlic cloves
6 large button mushrooms, sliced
1/2-3/4 cup whole almond (more or less to taste and to fit your dieting goals)
1/2 lb frozen French-cut green beans (like those found at Trader Joe's but any would work, including fresh, also, you may want to add more)
soy sauce, to taste

Steps:

  • Heat oil over medium heat.
  • Sauté garlic until soft, being careful not to let it burn.
  • Add sliced mushrooms and sauté until they look fairly cooked and shiny (about 5 minutes).
  • Add almonds and sauté for a couple more minutes.
  • Finally, add frozen green beans and splash of soy sauce.
  • Stir frequently until beans are just cooked and, of course, no longer frozen.
  • If not on the south beach diet or watching sugar intake, you could add oyster sauce or other Asian condiment to the mixture.

  • In a large skillet over medium-low heat, cook the bacon until mostly crisp. When adding to green beans, I don't like to have it be super crisp, but you can, of course, cook it to your liking.
  • Once the bacon is cooked, remove it from the pan and place it on a plate lined with a paper towel to absorb excess grease. Leave about 1 - 2 tablespoons of bacon fat in the pan.
  • Sautee green beans in the bacon fat until crisp-tender, or your desired doneness, about 3 - 5 minutes. In the meantime, chop or crumble the bacon.
  • Once green beans are cooked as desired, turn off the heat. Add the tablespoon of butter and bacon to the green beans. Salt and pepper to taste and then stir everything together.
