If your French is good, you can tell your delighted dinner guests they are having sauté de veau. Simply put, it's plain delicious.

Steps:
- Remove fat from veal. Cut veal into 4 serving pieces.
- Mix flour, paprika, 1/4 teaspoon salt and the pepper. Coat veal with flour mixture. Flatten between sheets of plastic wrap or waxed paper with a meat mallet to 1/4-inch thickness.
- Heat oil in 10-inch nonstick skillet over medium-high heat. Cook veal in oil, turning once, until brown; drain.
- Add wine, water, rosemary, 1/4 teaspoon salt, the onions and carrots to veal in skillet. Heat to boiling; reduce heat. Cover and simmer about 45 minutes, adding water if necessary, until veal and vegetables are tender. Place veal and vegetables on platter; pour pan drippings over top. Sprinkle with parsley.

Steps:
- Heat oil in frypan. Dust steaks with flour and fry for about 3 minutes on each side.
- Remove steaks and keep warm.
- Add to the same pan garlic, fry until soft.
- Add mustard and wine, cook for 3 minutes.
- Add cream to pan stir to combine.
- Return veal to the pan, coating all sides with sauce. Cook for 1 minute more.

VEAL CHOPS WITH CREOLE MUSTARD CRUST

- Position rack in bottom third of oven and preheat to 450°F. Mix together mustard, mayonnaise, and 1/2 of green onions in small bowl.
- Sprinkle chops on both sides with salt, pepper, and allspice. Heat oil in heavy medium skillet over medium-high heat. Add veal; sauté until brown, about 2 minutes per side. Transfer veal to small rimmed baking sheet. Add garlic to drippings in skillet; stir 15 seconds. Add breadcrumbs; sauté until golden and crisp, about 1 minute.
- Spread half of mustard mixture thickly atop each chop. Spoon crumbs atop mustard mixture. Bake until thermometer inserted horizontally into chops registers 135°F for medium-rare, about 7 minutes. Transfer to plates. Sprinkle with remaining green onions.
VEAL CHOPS WITH MUSTARD SAGE SAUCE

- Melt butter with oil in heavy medium skillet over medium-high heat. Sprinkle chops with dried sage and pepper. Add to skillet and cook until brown, about 5 minutes per side. Reduce heat to medium and cook to desired doneness, about 1 minute per side for medium-rare. Transfer veal to plate; keep warm.
- Add shallots to same skillet and stir 1 minute. Add broth, 1 tablespoon minced sage and mustard to skillet and boil until very thick, scraping up browned bits, about 4 minutes. Add half and half and boil until liquid thickens to sauce consistency, about 1 minute. Mix in remaining 1 tablespoon minced sage and any juices exuded by veal. Adjust seasoning. Place 1 chop on each plate. Spoon sauce over. Garnish with fresh sage leaves and serve.
VEAL CUTLETS IN MARSALA MUSTARD SAUCE
Steps:
- If necessary, gently pound each cutlet between 2 sheets of plastic wrap to 1/8-inch thickness with flat side of a meat pounder or with a rolling pin. Pat dry and season with salt and pepper.
- Heat butter and oil in a 12-inch heavy skillet over moderately high heat until foam subsides. Meanwhile, dredge cutlets in flour, shaking off excess. Sauté cutlets in 2 batches (without crowding) until edges are golden and meat is just cooked through, 1 to 2 minutes per side. Transfer with tongs to a platter and loosely cover with foil to keep warm.
- Add Marsala to skillet and deglaze by boiling, stirring and scraping up brown bits. Stir in cream and mustard and boil, stirring occasionally, until sauce is slightly thickened, 1 to 2 minutes. Remove from heat and stir in parsley and salt and pepper to taste. Pour sauce over veal.

- To make the mustard sauce: Bring the cream to a boil in a small saucepan over medium heat; whisk in the mustard and sour cream and simmer for 5 minutes; keep warm.
- Mix the flour with 1 teaspoon of the seasoning.
- Season each tenderloin evenly with the remaining 4 teaspoons of seasoning.
- Heat the oil to 360F in a large skillet.
- Coat each tenderloin with the seasoned flour and fry until golden, about two minutes on each side.
- Remove from pan and drain on absorbent paper.
- Add butter and sesame seeds; let seeds brown for about ten seconds.
- Add spinach and vegetable seasoning and cook until wilted, about two minutes.
- Add stock and cook for an additional minute.
- To serve, place 1/4 cup of warm mustard sauce on each of four plates.
- Divide the spinach evenly on each plate.
- Make four or five small slices in each tenderloin and place each over a bed of spinach.
- Serve with Rabbit Sausage Recipe #404348 (if you wish to reduce the time and preparation, omit the sausage).

BAKED SALMON WITH CREOLE MUSTARD SAUCE
From Bon Appetit's February, 1994 issue...I have made this recipe SO many times and always with good results. One of my all-time favorites. I am not normally a fan of salmon due to the "fishy" taste...but this recipe changed my mind. The sauce is awesome--a friend asked if he could take the leftover sauce home and just eat it with a spoon by itself! Nice dish for entertaining but really simple if you just want to spoil your loved ones. :-) This was on a menu in Bon Appetit with a Potato, Tomato and Onion Gratin that I am also posting, which is equally as good. Enjoy!

- For sauce: Combine all sauce ingredients in a heavy medium saucepan. Simmer until very thick, stirring frequently, about 5 minutes. (Can be prepared one day ahead; cover and refrigerate).
- For fish: Line large baking pan with foil. Arrange fish, skin side down, in a single layer on foil. Mix the butter, brown sugar, soy sauce, fresh lemon juice and dry white wine in a bowl. Pour over fish. Cover fish and refrigerate at least one hour and up to six hours.
- Preheat oven to 400 degrees. Uncover fish and bake until just cooked through, basting occasionally with pan drippings, about 18 minutes.
- Meanwhile, rewarm sauce over low heat, stirring constantly. Add 1 cup sour cream and whisk just until heated through; do not boil. Season sauce to taste with salt. Arrange salmon on platter. Serve, passing the sauce separately.

- Mustard Sauce:.
- To make the spicy russian mustard sauce combine the dry mustard and vinegar in a small bowl.
- Cover and let stand at room temperature overnight.
- Next day, in a small pan, combine the mustard vinegar mixture, sugar and egg yolk and simmer over low heat.
- Cover and store in fridge for up to 1 month.
- When ready to use this delicious spicy mustard serve it at room temperature.
- Spinach Balls:
- (MOST IMPORTANT) Please make sure that the spinach is very well drained, there should be no liquid left in the spinach at all.
- Next combine all the ingredients into a large bowl and mix well.
- Then roll the spinach mixture into balls.
- Place the spinach balls on a cookie sheet and freeze until solid.
- Once the spinach balls are frozen place in a freezer bag and keep frozen until needed.
- Bake frozen in a 350 degree oven for 15 - 25 minutes.
- Please check the spinach balls after 15 minutes as all ovens vary.
- The balls should be firm when touched, cook longer if necessary.

- Season chicken with salt and pepper. In a large skillet, heat oil over medium-high heat. Add chicken; cook until browned, turning once, 8 to 10 minutes.
