ROASTED CHATEAUBRIAND WITH RED WINE-MUSHROOM REDUCTION AND POMMES PUREE



Roasted Chateaubriand with Red Wine-Mushroom Reduction and Pommes Puree image

2 pounds Yukon Gold potatoes, peeled and cut into 2- to 3-inch pieces
2 cups cold heavy cream
3 cloves garlic
1 stick (8 tablespoons) unsalted butter, cut into pieces
Kosher salt
Extra-virgin olive oil, for seasoning
Coarse sea salt
1 1/2 pounds chateaubriand roast (the center-cut portion of the beef tenderloin), trimmed of fat and silver skin and tied at 1/2-inch intervals with butcher's twine

3 tablespoons extra-virgin olive oil
4 tablespoons unsalted butter
1 1/2 cups quartered mushrooms such as cremini, shiitake or chanterelle
4 garlic cloves, peeled and smashed
4 sprigs fresh thyme plus extra fresh thyme leaves, for garnishing
2 tablespoons minced shallot
1/2 cup dry red wine
2 cups veal or beef broth
1/4 cup heavy cream

Steps:

  • Boil the potatoes: Add the potatoes to a medium pot with the cream, garlic, butter and some kosher salt. Bring to a boil over medium-high heat, then reduce the heat to medium-low and gently simmer until the potatoes are easily pierced with a fork, about 25 minutes.
  • Cook the chateaubriand: Preheat the oven to 350 degrees F. Let the beef rest at room temperature for 15 minutes, then season with salt and pepper. Heat the olive oil in a large, oven-safe skillet over high heat until it shimmers, about 2 minutes. Set the meat in the pan and sear it on all sides until browned, about 8 minutes total. Reduce the heat to low and add 2 tablespoons of the butter, the mushrooms, garlic and the thyme. Transfer the skillet to the oven and cook the roast until an instant-read thermometer inserted into the thickest part reads 125 to 130 degrees F., 6 to 8 minutes for medium-rare. Remove the skillet from the oven, transfer the roast to a cutting board, loosely tent with foil and let it rest for 10 minutes.
  • Make the red wine reduction: Transfer the mushrooms to a bowl and pour off all but 1 tablespoon of the fat from the pan (discard the garlic and thyme). Set the skillet over medium-high heat, add the shallot and red wine, and cook, stirring to scrape up any browned bits from the bottom of the pan, until the pan is almost dry, about 2 minutes. Add the broth and cream, bring to a boil, and simmer until the sauce thickens, 3 to 5 minutes. Return the mushrooms to the pan, adjust the seasoning with salt and pepper, if needed.
  • Make the pomme puree: Place a colander over a large bowl. Pour the hot potatoes into the colander. Shake the potatoes to drain off the excess liquid. Press the potatoes through a ricer (or mash them with a fork for a chunkier texture) and into a medium bowl, occasionally clearing the sides of the ricer with a spoon. Pour the reserved and still-hot cream over the potatoes in small increments, folding in to combine, until you get your desired consistency. Season with olive oil and a sprinkle of sea salt and serve immediately, or keep warm in a covered oven-safe casserole dish in a 250 degree F. oven.
  • To serve, remove the twine from the roast and slice the roast crosswise into 2 equal portions. Sprinkle with salt and pepper. Spoon the potato puree onto 2 warm plates. Place a slice of chateaubriand on each plate and spoon the red wine-mushroom reduction over the top. Garnish with fresh thyme leaves and serve.

1/2 red onion, finely chopped
1/2-inch disk fresh ginger, finely chopped
1 1/2 ripe tomatoes, seeded and chopped
1/2 papaya, or 1/4 cantaloupe and 6 strawberries, finely chopped
1 clove garlic, minced
1/2 bunch green onions (scallions), finely chopped
1/2 lemon or lime, juiced
1/2 tablespoon red wine vinegar
1/8 cup olive oil
Salt
1/2 pinch Spanish saffron
8 1/2 ounces Israeli couscous
1 large sweet potato, diced and cooked in salted water
1/2 zucchini, diced and cooked in salted water
1/2 large roasted red pepper, peeled, seeded and cut into small dice
1 1/2 ounces butter
3 shiitake mushrooms
1 clove garlic, chopped
1/2 small onion, chopped
1/2 teaspoon cumin powder
Five 5 1/4-ounce salmon fillets
1/8 cup olive oil
Salt and freshly ground black pepper
Fried spaghetti, for garnish

Steps:

  • To make the rougaille: Combine the onions, ginger, tomatoes, papaya, garlic, and green onions. Add lemon or lime juice, red wine vinegar, 1/8 cup olive oil, salt, and pepper. Mix this up 2 to 3 hours before serving, and let stand, covered, but not in the refrigerator.
  • Preheat the oven to 350 degrees F.
  • To make the couscous: Fill a saucepan about 3/4 full with water, a little salt, then a little saffron for color. Bring to a boil, add the couscous and cook for about 2 minutes. Wash the couscous with cold water and drain well. Drain the sweet potato and zucchini and add to the couscous. Stir in the red pepper.
  • Heat the butter in a small pan and saute the shiitake mushrooms with the garlic, onion, and cumin. When the mushrooms are soft, add the mixture to the couscous. Place the couscous in a baking dish and keep warm in the oven.
  • Season salmon with salt and pepper. Heat the olive oil in a pan and saute the salmon fillets for 1 minute per side for medium rare. Serve the salmon on a bed of couscous. Heap the rougaille over salmon. Garnish with lengths of fried spaghetti, so that they are reaching up from the salmon.

1 Spanish onion, thinly sliced
8 garlic cloves, halved lengthwise
2 lbs Brussels sprouts, trimmed and halved, if desired

Steps:

  • In a large, deep skillet, cook the bacon over moderately-high heat until browned, about 8 minutes.
  • Using a slotted spoon, transfer the bacon to paper towels to drain. Add the onion and garlic to the pan, reduce the heat to moderate and cook, stirring, until softened, 3 to 4 minutes.
  • Remove the softened vegetables from the pan and set aside.
  • Add the Brussels sprouts in batches and continue to cook, stirring occasionally, until they are golden brown on the outside.
  • Add the reserved bacon and vegetables to the Brussels sprouts in the pan along with salt and pepper, to taste, and a pinch of sugar.
  • Cover skillet with a lid and cook, stirring occasionally, until sprouts are just tender, 10 to 12 minutes.

1 tablespoon extra virgin olive oil
3 garlic cloves, minced
1 shallot, minced

Steps:

  • Finely shred the brussels sprouts after thoroughly washing.
  • In a sauté pan, heat olive oil. Add shallots and crushed red peppers and sauté about 2 minutes, add garlic and saute until golden. Add brussels sprouts, salt and pepper and sauté on medium-low for about 4-5 minutes.

1 (2 lb) salmon fillets
1 lb Brussels sprout
4 garlic cloves
1/3 cup honey
1/4 cup low sodium soy sauce
1/2 teaspoon black pepper
1 lemon
1 tablespoon basil leaves
1 teaspoon oregano
1 tablespoon chives

Steps:

  • Preheat the oven to 425 degrees F. Line a sheet pan with parchment paper or foil. Make sure your brussels sprouts are in small pieces so they roast quickly! I like to remove the stems from mine and cut them into quarters.

  • cut lemon into wedges to serve.
  • In a small bowl, whisk together the garlic, soy sauce and honey. Place the salmon filet in the center of the sheet.
  • Place the brussels in the bowl and toss them with half of the honey garlic mixture. Spread the brussels around the salmon. Brush the remaining honey garlic mixture over the salmon. It's okay if you have some left - you can use it to brush on once the salmon is finished! I like to add some freshly cracked pepper on top t00.
  • Roast the salmon and brussels for 15 minutes, until the salmon easily flakes with a fork and the brussels begin to caramelize. Remove and slice the salmon into pieces. Serve immediately with a sprinkling of herbs, a spritz of lemon and extra sauce!

4 cups Brussels sprouts, halved
6 slices bacon, strips cut into 1/2-inch pieces
1 cup finely chopped onion
1 cup sliced fresh mushrooms
1/2 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place brussels sprouts in a saucepan and cover with water.
  • Bring to a boil and reduce heat.
  • Cover and simmer for 8 minutes or until crisp-tender.
  • Drain and keep warm.
  • In a skillet, cook bacon over medium heat until crisp.
  • Remove to paper towels and drain, reserving 2 tablespoons drippings.
  • Saute onion and mushrooms in the drippings for 3-5 minutes or until tender.
