Serve these apples with Bette's Chicken-Liver Pate.

1 tablespoon unsalted butter
2 juicy, sweet-tart apples, such as 'Jonathan,' peeled and cut into 12 wedges each
2 tablespoons pure maple syrup
1/4 teaspoon coarse salt

Steps:

  • Melt butter in a medium skillet over medium heat. Add apples; cook, turning once, until golden brown, about 5 minutes total. Stir in syrup and salt; reduce heat to low. Simmer until apples are soft, about 5 minutes. Serve warm.

MAPLE & STAR ANISE ROASTED PLUMS

700g plum , or a mix of plums, greengages and mirabelles
juice 2 large oranges
3 star anise
3-4 tbsp maple syrup
mascarpone or Greek yogurt, to serve

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Arrange the plums in a single layer in a 1-litre gratin dish. Pour over orange juice, tuck star anise among the plums, drizzle over the maple syrup, then gently stir. Bake for 30-35 mins until the fruit is soft but not collapsed. Serve warm or cold with mascarpone or yogurt on the side.
  • The roasted plums can be kept in the fridge for up to 3 days.

This dessert fully satisfying, yet low in fat.

1 lemon
7 large plums (2 pounds)
7 tablespoons sugar
3 tablespoons kirsch (Triple Sec can be used if you prefer)
1 cup all-purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon lime zest
2 tablespoons heavy cream
1/2 cup buttermilk

Steps:

  • Grate zest and squeeze juice from lemon; set both aside. Cut plums in half and discard pits. Quarter each half lengthwise and place in a round 12-by-2-inch casserole or saute pan. Sprinkle plums with 4 tablespoons sugar and drizzle with lemon juice, kirsch, and 3 tablespoons water.
  • Place over high heat and bring to a boil. Reduce heat to medium low and simmer until the plums begin to break down, about 15 minutes, depending on ripeness.
  • Meanwhile, sift together the flour, remaining 3 tablespoons sugar, baking powder, baking soda, and salt. Whisk in lemon and lime zests. Stir in the cream and buttermilk until just combined.
  • Drop batter by heaping tablespoonsful over plums; there should be enough to make eight dumplings. Cover casserole (if casserole does not have a cover, use foil), reduce heat to low, and simmer until the dumplings are doubled in size and cooked through, about 20 minutes. Remove from heat, uncover, and let cool on a wire rack for about 15 minutes. Serve warm.

8 ripe plums , halved, stone removed
4 tbsp maple syrup
50g butter , cut into pieces
50g plain flour
50g rolled oats
25g golden caster sugar
½ tsp ground cinnamon
25g flaked almond

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Place the plum halves, skin side down, in the base of a large heatproof dish. Drizzle over half the maple syrup and roast for 10 mins.
  • Meanwhile place the butter, flour, oats, sugar and cinnamon in a bowl and rub the butter into the mixture until you have rough crumbs. Stir in the almonds, then sprinkle over the plums. Drizzle the top with the remaining maple syrup and bake for 15 mins until the top is golden. Serve with custard.
