SAUTEED APPLES

Sauteed Apples image

In my growing up years, serving this dish meant that autumn had certainly arrived! Mom served these "fried apples", with their delicious cinnamon flavor, alongside hot buttered biscuits, and freshly ground homemade sausage. Yumm!! It also is a delicious accompaniment with meats at other meals, particularly ham or pork.

Provided by Wilmom

Categories     Apple

Time 20m

Yield 4 serving(s)

Number Of Ingredients 4

4 granny smith apples, sliced
1 cup brown sugar, packed
1 teaspoon cinnamon
4 tablespoons butter

Steps:

  • In a large skillet on medium-high heat, melt butter (If your butter browns a bit, don't get excited! This gives an even better flavor.
  • Add sliced, unpeeled apples, cover, and saute, stirring frequently.
  • In a bowl, mix brown sugar and cinnamon. (Sometimes, for a taste difference, I also throw in 1/2 cup chopped pecans, at this point).
  • When apples are just barely starting to get tender, stir in sugar-cinnamon mixture.
  • Continue cooking until sugar has dissolved into syrup.
  • Serve with hot buttered biscuits and sausage on the side; or alongside ham or pork.

This is great for any meal, but is great for breakfast. The syrup from the apples is great on homemade waffles. You may add raisins to the sauce if you wish.

RED CABBAGE GLAZED WITH MAPLE SYRUP

Red Cabbage Glazed With Maple Syrup image

This recipe, published in The Times in 1991, was adapted from Yves Labbé, the chef at Le Cheval d'Or, a restaurant in Jeffersonville, Vt., that showcased French country cooking. Mr. Labbé was known to serve this side dish alongside quail in a red-wine sauce, and its simple instructions belie depths of flavor. The cabbage cooks down, braising in its own juices, while the sweetness of the apples and maple syrup, a Vermont staple, tones down the bitterness of the cabbage. The result has broad appeal.
