MAHI AND MUSHROOMS

Mahi and Mushrooms image

Marinated, pan-cooked Mahi with sauteed mushrooms and grape tomatoes. Serve it with a salad and some bread. YUM! You can marinate overnight; then it only takes a few minutes to get ready before cooking. Oyster mushrooms are my favorites, but criminis work well also. I use both yellow and red grape tomatoes.

Provided by Spencer & Serena

Categories     Seafood     Fish     Mahi Mahi

Time 1h

Yield 2

Number Of Ingredients 11

1 clove garlic, minced, or more to taste
1 tablespoon minced shallot, or more to taste
1 pinch red pepper flakes, or to taste
2 tablespoons olive oil
2 (4 ounce) mahi mahi fillets
salt and ground black pepper to taste
2 teaspoons olive oil
1 cup fresh oyster mushrooms, stemmed and sliced
½ cup halved yellow and red grape tomatoes, or more to taste
¼ cup white wine
1 tablespoon butter

Steps:

  • Mix the garlic, shallot, red pepper flakes, and 2 tablespoons olive oil together in a shallow dish.
  • Lay the mahi mahi fillets in the olive oil mixture; turn to coat.
  • Season the fillets with salt and black pepper.
  • Transfer the dish to the refrigerator and allow the fillets to marinate 30 minutes to overnight.
  • Heat 2 teaspoons olive oil in a skillet over medium-high heat.
  • Cook and stir the oyster mushrooms in the hot oil until tender, about 5 minutes; season with salt and black pepper.
  • Pour the white wine over the mushrooms; bring to a simmer and allow to cook while you prepare the mahi mahi.
  • Remove the mahi mahi fillets from the marinade; shake to remove any excess marinade.
  • Heat a skillet over medium heat.
  • Gently lay the fillets in the hot skillet; cook about 5 minutes. Pour the marinade over the fillets and continue cooking until the fish is just beginning to flake in the center; remove from heat, transfer to a serving dish, and keep warm.
  • Add the tomatoes and butter to the mushroom and wine mixture. Cook and stir together just until the butter has melted; spoon over the mahi mahi fillets to serve.

Mahi Mahi image

Mahi mahi, also known as dorado, is hearty, tender, flaky and waiting to grace your dining table with this astonishingly easy recipe! The mahi mahi is spice rubbed then pan seared until golden then bathed in an intoxicating, creamy lemon, garlic sauce. It looks and tastes fancy but is super quick and easy to make! Serve this one pot mahi mahi recipe with mashed potatoes, pasta, or rice with a big green salad and garlic bread and you have one of the most tantalizing dinners of all time! I've included step by step, detailed instructions on how to cook mahi mahi so you can master this recipe, even if you've never made fish before!

Provided by Jen

Categories     Main Dish

Time 30m

Number Of Ingredients 15

4-5 mahi mahi fillets (4-6 oz. each, 1-inch thick )
2 tablespoons olive oil
1 tablespoon unsalted butter
3 tablespoons flour
1 tsp EACH garlic powder, onion powder, salt, paprika
1/2 teaspoon pepper
3 tablespoons minced shallots
3-4 cloves garlic (minced)
1 1/4 cups low sodium chicken broth
1/2 cup heavy cream
1 tablespoon cornstarch
1/2 tsp EACH dried parsley, dried thyme
2 tablespoons lemon juice (more or less to taste)
salt and pepper to taste
freshly chopped chives

Steps:

  • Mix together all of the Spice Rub ingredients in a medium bowl. Pat mahi mahi dry and rub spices into the fish.
  • Melt 1 tablespoon butter in 2 tablespoons olive oil over medium-high heat in a large heavy bottom skillet. Once hot, add fillets, turn heat down to medium and cook approximately 4 minutes, flip fillets over, then cook an addition 2-4 minutes to your liking (it will depend on thickness,; mahi-mahi should reach an internal temperature of 137°F). If fish is browning too quickly, then turn down the heat. Remove mahi mahi to a plate and tent with foil.
  • If needed, drain oil from skillet so you are left with about 1 tablespoon oil. Add shallot and sauté while scraping up the drippings for 2 minutes or until softened. Add garlic and sauté 30 seconds.
  • Whisk chicken broth with cornstarch and add to skillet along with heavy cream, lemon juice, thyme and parsley. Simmer until reduced by half and slightly thickened, about 4-5 minutes. Season with salt and pepper to taste (I use about 1/4 teaspoon each) and add additional lemon juice if desired.
  • Nestle mahi mahi fillets back into the skillet and spoon sauce over the fillets. Garnish with fresh chives and/or parsley (optional). Serve immediately with rice, mashed potatoes or pasta.

PANKO-CRUSTED MAHI MAHI

Panko-Crusted Mahi Mahi image

Pungent wasabi gives a nice little kick to the delicate, mild flavor of mahi mahi. A simple veggie sauté completes this light and healthy weeknight dinner.

Provided by abovag

Categories     Mahi Mahi

Time 30m

Yield 4 serving(s)

Number Of Ingredients 11

mahi mahi, 24 oz
mayonnaise, 4 tbls
green beans, 12 oz
grape tomatoes, 8 oz
shallot, 2
wasabi paste, 2 tsp
panko breadcrumbs, 1 cups
lime, 2
quinoa, 1 cups
butter, 4 tbls
oil, 2 tsp

Steps:

  • Prep the ingredients: Preheat the oven to 350 degrees. In a small pot, bring 1 cup water with a large pinch of salt to a boil. Zest and halve the lime. Cut one half into wedges. Halve, peel, and finely chop the shallot. Halve the tomatoes. Trim the ends of the green beans.
  • Cook the quinoa: Add the quinoa to the boiling water, cover, and reduce to a low simmer for 15-20 minutes, until tender. Season with salt and pepper.
  • Make the wasabi aioli: In a small bowl, combine the mayonnaise, lime zest, a squeeze of lime (to taste) and the wasabi (to taste). Season with salt and pepper.
  • Make the panko crust: In a medium pan, melt 1 Tablespoon butter. Toss the panko into the melted butter and season with salt and pepper. Transfer the panko to a plate and wipe out the pan.
  • Cook the mahi mahi: Season the mahi mahi on all sides with salt and pepper. Spread the top of each fillet with 1 teaspoon of wasabi aioli. Press the panko onto the top of each fillet and place onto a lightly oiled baking sheet. Bake in the oven for about 10 minutes, until flaky and opaque.
  • Sauté the green beans and tomatoes: Meanwhile, heat 1 Tablespoon butter in the same pan over medium heat. Add the shallot and green beans and cook, tossing, for 4-5 minutes, until the shallots are softened. Add a splash of water to the pan and let the green beans steam until tender. Add the tomatoes and cook, tossing, for another 1-2 minutes, until heated through. Season with salt and pepper.
  • Plate: Serve the panko-crusted mahi mahi on a bed of veggies and quinoa. Serve with the remaining wasabi aioli and a wedge of lime.

PAN-SEARED MAHI MAHI

Pan-seared Mahi Mahi image

Pan-seared mahi mahi is not only easy and delicoius, it's also a healthy and light dinner recipe with garlic-butter sauce.

Provided by KitchenRatings.com

Categories     Main Course

Number Of Ingredients 7

4 mahi mahi filets
1 lemon
1 clove of garlic (minced)
4 tablespoons of unsalted butter
Olive oil
Salt (to taste)
Pepper (to taste)

Steps:

  • Use paper towels to gently dry the mahi mahi fillets. The drier the filets are, the better seasoned they will be, so be thorough. Use a light hand to avoid damaging the flesh at all.
  • Cut the lemon in half and save one half for later. With the remaining half, squeeze lemon juice over each fillet of fish.
  • Next, sprinkle the fillets with salt and pepper on both sides. While you can add other dried seasonings at this point if you like, a simple preparation of salt, pepper and lemon makes an elegant dish that lets the delicate flavor of mahi mahi speak for itself on the plate.
  • Now that your fish is properly seasoned, it's time to start cooking. Use a large skillet to pan-sear the mahi mahi. Heat the pan over medium-high heat. Wait for a bit until the pan is hot before drizzling in the olive oil. Swirl the oil around the pan so you have an even, thin coating of oil for searing. When the oil is hot but not yet smoking, move onto the next step.
  • Carefully Place the mahi mahi fillets into the hot pan. cook until each piece is brown on the bottom, then use a thin fish spatula to carefully flip the fillets and brown the other side. The first side should take 3-5 minutes, depending on the thickness of your fish. The second side will need a bit less time, about 2 to 3 minutes.
  • Just before your fish is fully cooked, remove it from the hot skillet and plate it up. The fillets will continue cooking for a few minutes after you remove them from the skillet.
  • Reduce the heat to medium-low. Then squeeze the juice from the remaining lemon half into the pan. Add the minced garlic and ¼ teaspoon of salt as well.
  • Finally, add the butter. Stir the sauce and cook until the butter is fully melted and well combined with the lemon juice. Taste your sauce and add salt and pepper to taste.
  • Plate the fillets and spoon the lemon garlic sauce on top.

WHAT TO SERVE WITH MAHI MAHI? 8 BEST SIDE DISHES

Total Time 20 mins
  • Watermelon Feta Salad. Watermelon is the perfect summer fruit, so there’s no excuse for not taking advantage of it. Watermelon is sweet but not too sweet, making it ideal for pairing with saltier ingredients like feta cheese.
  • Cinnamon Grilled Vegetables. This dish is the perfect blend of sweetness and subtle heat, making it a great side dish for fish. Although cinnamon gets most of the attention here, the grilled vegetables make this dish stand out.
  • Creamy Broccoli & Bacon Pasta. Creamy pasta dishes are a great choice for dinner because they taste good and go down easy. This dish is no exception, and one thing that sets it apart from other pasta dishes is the subtle smoky flavor you get from cooking bacon with broccoli.
  • Honey Glazed Carrots. Carrots are very versatile because they can be glazed with just about any other sweet ingredient you can think of. In this case, we’re going to use honey, but other good choices include maple syrup and molasses.
  • Mint & Pomegranate Chickpeas. This side dish is so full of flavor that it’s almost a meal in itself. Chickpeas are the base ingredient here, but since they don’t have a flavor very much on their own, we’re going to dress them up by adding mint and pomegranate.
  • Spicy Roasted Potatoes. Potatoes are a great side dish to serve with fish because they go well with the sauce and provide a nice contrast in texture.
  • Bacon Asparagus with Panko Crumbs. More often than not, side dishes are pretty lackluster. Either they don’t taste very good, or they’re just plain boring, but this recipe is neither; it’s crispy, crunchy, flavorful, and comes together in under 15 minutes.
  • Cheesy Bread Dip. Dips are usually served as a first course, but this one is so creamy and delicious that it could easily be the main event on its own.
