GRILLED SALMON WITH KALE SAUTé

Grilled Salmon with Kale Sauté image

In this healthy dinner recipe, salmon fillets are seasoned with a zesty dry rub, grilled and served with a simple side--lemon-seasoned sautéed kale and shallots. Sometimes simple is best!

Provided by EatingWell Test Kitchen

Categories     Healthy Grilled Salmon Recipes

Time 45m

Number Of Ingredients 12

2 (5 ounce) fresh or frozen skinless salmon fillets, about 1 inch thick
½ teaspoon dried thyme, crushed
¼ teaspoon garlic powder
⅛ teaspoon salt
⅛ teaspoon cayenne pepper
1 tablespoon finely chopped shallot
1 small clove garlic, minced
½ teaspoon olive oil
6 ounces fresh kale, torn (discard stems)
½ teaspoon finely shredded lemon peel
Dash salt
Lemon wedges

Steps:

  • Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Set aside. In a small bowl, stir together thyme, garlic powder, 1/8 teaspoon salt and cayenne pepper. Sprinkle tops of fillets evenly with seasoning mixture.
  • For a charcoal grill, place fish on the greased grill rack directly over medium coals. If desired, cover grill grate with foil before placing fish. Grill, uncovered, for 8 to 12 minutes or until fish begins to flake when tested with a fork, turning fish once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place fish on a greased grill rack over heat. Cover and grill as directed.) Cover fish to keep warm.
  • In a Dutch oven, cook the shallot and garlic in hot oil over medium heat for 2 to 4 minutes or until tender. Add kale and lemon peel. Cover and cook for 2 minutes. Uncover and cook for 6 to 8 minutes more or just until kale begins to wilt, turning with long-handled tongs to cook. Sprinkle with the dash salt. Serve salmon with kale and lemon wedges.

LEMON GARLIC SAUTEED KALE

Lemon Garlic Sauteed Kale image

This easy, healthy recipe for sautéed kale is delicious. As the kale cooks in the pan, it wilts, turns bight green, and becomes tender. Kale may sound like a boring side, but this is one of our favorite side dishes to make.

Provided by Adam and Joanne Gallagher

Categories     Side Dish

Time 20m

Yield Makes 4 servings

Number Of Ingredients 7

3 tablespoons extra-virgin olive oil
3 cloves garlic, peeled and sliced
Pinch red pepper flakes
1 large bunch kale (7 to 8 cups chopped leaves)
1/2 cup stock, white wine or water, plus more as needed
1/4 teaspoon fine sea salt or more to taste
Half of a lemon

Steps:

  • Rinse the kale, and then pull the leaves from the stems. Discard the stems or save to add to homemade stock another day. Coarsely chop kale leaves into randomly shaped pieces, about 2 inches large.
  • Heat the olive oil in a wide skillet over medium-high heat. When the oil shimmers, add the garlic and red pepper flakes. Cook, stirring often, until the garlic is soft, but before it browns.
  • Add the chopped kale leaves, stock, and 1/4 teaspoon of salt. Cook, tossing the kale around the pan occasionally, until the kale turns bright green, is soft and is wilted, about 7 to 8 minutes. If before the kale is tender, the liquid evaporates, add a little bit more to the pan.
  • Taste and adjust with additional salt, and then finish by stirring in the juice from half a lemon.

  • Strip the leaves of kale from the stems. Save the stems for making veggie stock or discard/compost.
  • Tear the leaves into a few piece, wash and dry well. Wet kale won't get crispy and will spatter when it hits the pan.
  • Set a large, heavy (ideally cast iron) pan over high heat. When it's good and hot, add the olive oil and garlic to the pan. Let it sizzle for about 30 seconds, doing your best not to let the garlic brown.
  • Add as much of the kale as will comfortably fit in the pan (kale hates to be uncomfortable). Add a pinch of salt. Use a pair of tongs to turn the kale in the pan to wilt sightly. After about 30 seconds to a minute, when the kale reduces, add more raw kale and continue until all of the kale is in the pan.
