SAUTEED CHICKEN & MUSHROOMS

This dish is one my husband requests at least once a week. I make this for company because the look and taste seems like you cooked all day, but it only take 45 minutes to cook. You can use boneless chicken breast, tenderloins or boneless thighs and still have great results.

4 (4 ounce) boneless skinless chicken breasts
1/3 cup flour
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter or 3 tablespoons margarine
1/4 teaspoon garlic, minced
1 cup green onion, sliced
8 ounces fresh mushrooms, sliced or 1 cup drained canned mushroom
3/4 cup chicken broth
1 (10 ounce) can cream of mushroom soup

Steps:

  • Pound each chicken breast to 1/4-inch thickness.
  • Mix flour, salt and pepper on wax paper.
  • Coat chicken well with flour mixture; set aside.
  • Heat a large skillet over medium-high heat; add butter.
  • Saute garlic, green onion and mushrooms for 3 minutes.
  • Remove with a slotted spoon.
  • Place chicken in skillet; cook for 5 minutes per side.
  • Add broth and soup to skillet. Cook, stirring frequently, for 5 minutes.
  • Return mushroom mixture to skillet and reduce heat to low.
  • Simmer stirring occasionally, for 5 minutes.
  • Serve immediately over egg noodles.

2 skinless, boneless chicken breast halves - pounded thin
¼ cup all-purpose flour
salt and ground black pepper to taste
2 teaspoons butter
2 teaspoons vegetable oil
1 (4.5 ounce) can mushrooms, drained
1 cup water
1 packet chicken bouillon granules
1 teaspoon cornstarch
½ teaspoon dried parsley
¼ teaspoon garlic powder
ground black pepper to taste

Steps:

  • Season flour with salt and pepper. Dredge chicken in seasoned flour onto a sheet of wax paper. In a nonstick skillet, combine the vegetable oil and butter or margarine and heat over medium high heat until bubbly and hot. Add chicken and cook until lightly browned on both sides and cooked through, 3 to 4 minutes. Remove chicken and set aside.
  • To the same skillet, add the mushrooms and saute for about 5 minutes. Combine the water, broth mix, cornstarch, parsley, garlic powder, salt and pepper and add to the skillet. Cook, stirring frequently, until liquid is thickened, 1 to 2 minutes.
  • Return chicken to the skillet and cook until chicken is heated through, 1 to 2 minutes. Serve.

1 lb chicken liver, cut into bite-size pieces
3 tablespoons butter, melted
1/2 lb fresh mushrooms, sliced
1/2 cup diced onion
1 teaspoon all-purpose flour
1/2 teaspoon salt
1 (14 1/2 ounce) can diced tomatoes, undrained
1/2 cup dry white wine
2 teaspoons chopped fresh parsley
1/2 teaspoon Worcestershire sauce
2 cups hot cooked rice

Steps:

  • Saute chicken livers in butter 5 minutes or until brown. Remove livers, drain on paper towels, reserving drippings in skillet.
  • Saute mushrooms and onion in drippings until onion is golden.
  • Stir in flour and salt. Add tomatoes, wine, parsley and Worcestershire sauce. Bring to a boil. Reduce heat and cook 5 minutes, stirring often.
  • Add chicken livers; simmer 5 additional minutes. Serve over cooked rice.

1 tablespoon olive oil
2 lbs chicken thighs, cut into 2-inch pieces
coarse salt and pepper
1 lb button mushroom, trimmed and thinly sliced
2 lbs asparagus, tough ends removed, cut into 2-inch lengths
cooked noodles (optional) or rice (optional)

Steps:

  • In a large skillet, heat oil over medium-high. Season chicken with salt and pepper. Cook in two batches, turning occasionally, until browned and opaque throughout, 6 to 8 minutes; transfer to a plate.
  • To skillet, add mushrooms, asparagus, and 1 cup water; season with salt and pepper. Cook, tossing once and scraping up browned bits, until vegetables are crisp-tender, 4 to 6 minutes. Add chicken; cook, tossing, until warmed through, about 2 minutes. Serve on top of noodles or rice, if desired.

1 teaspoon vegetable oil
cooking spray
2 -3 cups sliced portabella mushrooms
1 1/2 teaspoons Montreal roasted garlic chicken seasoning
1 teaspoon dried thyme
4 (4 ounce) boneless skinless chicken breasts
1 1/4 cups fat-free chicken broth
2 teaspoons cornstarch

Steps:

  • Heat oil in skillet coated with cooking spray over med-high heat.
  • Add sliced mushrooms and sauté until cooked through (about 7-10 minutes).
  • Remove mushrooms from pan and keep warm.
  • Mix together the McCormick Grill Mates Roasted Garlic Montreal Chicken and thyme.
  • Rub over chicken breasts.
  • Add to pan (spray with a little more cooking spray if pan is very dry).
  • Sear at least 5 minutes on first side before turning over.
  • Repeat on the other side.
  • Continue turning and cooking until chicken is golden brown and just about cooked through (about 20 minutes), adding ¼ cup chicken broth to pan half way through, if necessary.
  • With a whisk, combine chicken broth and cornstarch in a cup.
  • Add broth and mushrooms to pan with chicken.
  • Bring to a boil for 1-2 minutes.
  • Cover and simmer for 5-7 minutes as gravy thickens.
  • Serving is 1 piece of chicken with about 33 cups of gravy and mushrooms.

1/4 cup green onion, chopped

1 cup watercress, loosely packed, large stems removed
2 cups lettuce, your choice
1 chicken breast half, cooked and sliced
1/8 teaspoon salt
1/4 teaspoon pepper, freshly ground
salad dressing, of your choice (optional)

Steps:

  • Heat olive oil in a non stick frypan; add sliced fresh mushrooms; saute until nicely browned on both sides, about 10 minutes; Set aside to cool.
  • Add the next 5 ingredients to a large bowl, from celery to lettuce, mix well.
  • Scatter warm mushrooms over all, place chicken slices on top, sprinkle salt and freshly ground course pepper over all.
  • We prefer ours with just the salt and pepper, if you prefer, add your choice of salad dressing.
