- Preheat the oven to 300 degrees F (150 degrees C). Scrub the potato, and pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt.
- Place the potato in the preheated oven, and bake for 90 minutes, or until slightly soft and golden brown. Slice the potato down the center, and serve with butter and black pepper. Sprinkle shredded Cheddar cheese over the top, if desired.

- Each potato is going to need 2 wraps of foil so if you are grilling 4 potatoes, you will need 8 pieces of foil.
- Scrub potatoes clean and poke holes all around potato. Brush olive oil over the potato. ( I just use my hands).
- Wrap potatoes in foil tightly.
- Place on the grill (if using a gas grill, place on top) 400 degrees. Leave them there for an hour, turing at the 30 minute point.
- Remove from grill and enjoy with whatever toppings you like.
- This is what I do, I put my potatoes in first, then corn (for grilled corn) and then my meat (chicken, steak, whatever you like). It all cooks in the grill and ready at the same time.

- Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
- Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
- Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.

- FLAVORED OIL: In a small bowl, whisk together olive oil, liquid smoke and garlic. Set aside.
- SEASONING MIX: In a small dish mix kosher salt, garlic powder and black pepper. Set aside.
- Wash, scrub and dry potatoes well. With a sharp paring knife, cut out a nice wedge from the potato's middle. Remove the wedge and place 1 teaspoon of butter in the hollow. Sprinkle with seasoning mix. Replace the wedge pressing down gently.
- Place each potato on its own sheet of foil. Rub the potato with the olive oil mixture making sure to get some of the crushed garlic on the potato. Sprinkle with additional seasoning mix and roll up tightly in aluminum foil.

- Preheat a grill to medium-high heat.
- In a microwave-safe casserole dish, add the potatoes in a single layer. Cover with a damp paper towel and microwave until tender, 12 to 15 minutes. Let cool for 5 minutes.

- Preheat the grill. Preheat your grill to 350-400 degrees F for 2-zone cooking.
- Clean the potatoes. Rinse baked potatoes and scrub to remove any excess dirt.
- Wrap the potatoes in foil. Lay out 4 large pieces of 18" heavy duty aluminum foil (or lay out 2 layers of regular foil). Set 1 washed potato onto a piece of foil. Drizzle with olive oil, and season with salt and pepper. Wrap tightly with foil. Repeat with the remaining potatoes.
- Bake the potatoes on the grill. Place wrapped potatoes on the indirect side of the grill, making sure the potatoes aren't touching each other so the heat can surround all sides of the potato. - Finish baking the potatoes. Cook for 1-2 minutes per side (4-5 minutes total) on direct heat. A perfectly cooked baked potato will have an internal temperature of 210 degrees F, so aim for your potatoes to be between 205-215 degrees F.
- Serve hot. Remove the baked potatoes to your serving platter, split your potatoes open with a knife, fluff the insides with a fork, and top with salt and pepper and any additional toppings you prefer.

- Run potatoes under warm water and use a scrubby to remove any dirt or residue and then and pat dry with a towel to dry.

- Pat dry.

- Bake in 425 degree oven for 40-60 minutes or in a 350 degree oven for

- When done, roll each potato gently under your hand.
- Then cut a crisscross in each top with a knife.
- Press in and up on the ends of each potato.

- FOR MICROWAVED:.

- Arrange potatoes on a plate in a spoke fashion.

- 5-7 minutes for one potato.
- 7-9 minutes for two potatoes.
- 13-16 minutes for 4 potatoes.
- Rearranging and turning potatoes over once.

- Preheat grill with lid closed to 350° Fahrenheit. While grill preheats, place one russet potato in medium bowl. Prick potato with fork then coat with neutral oil. Set potato aside and repeat with remaining potatoes.
- Pour salt into second medium bowl, using enough salt to fully cover bottom of bowl. Place one oiled potato in bowl and flip until potato is coated with thin layer of salt. Transfer to microwave-safe plate or bowl and repeat process with remaining potatoes.
- When all potatoes have been oiled and salted, place in microwave. Microwave all potatoes together on high for 4 minutes. Remove potatoes from microwave and wrap each potato securely in 2 sheets of aluminum foil.
- Place foil-wrapped potatoes directly on grill grate. Shut grill lid and grill potatoes 30 to 40 minutes, with lid closed entire time. Note: grill time will increase every time lid is opened.
- Begin checking doneness of potatoes after 30 minutes by slightly unwrapping one potato and piercing skin with fork or skewer. When fork or skewer pierces completely through potato easily with no resistance, remove potatoes from grill.
- Unwrap grilled potatoes and discard foil. Cut potato open by slicing lengthwise down center of potato, then gently press ends of potato to open wide. Fluff potato flesh with fork and serve immediately with desired toppings.

- Set your grill to Air Crisp at 375° F and set the timer to 45 minutes.
- Scrub the potatoes and prick with a fork 3 or 4 times. Brush the outside of the skin with oil and sprinkle with salt.
- When the grill is preheated, add the potatoes to the air crisper basket. Close the lid and cook for 45 minutes.
- Open the lid and check the potatoes to make sure they are cooked through. (The total cooking time will depend on the size of the potatoes.) If they are not tender, continue cooking for another 5 to 10 minutes.
- When the potatoes are done bakings, slice them lengthwise, leaving the two halves connected.
- Use a fork to fluff the potatoes.
- Sprinkle with the cheese, and return to the grill to melt the cheese, about 2 minutes.
- Dollop with sour cream and sprinkle with bacon and chives.
