Sautéed Cabbage and Apples image

After a quick sauté in butter and spices, crisp tender apples and cabbage are topped with pomegranate seeds and fresh dill.

3 cups apple (thinly sliced wedges)
3 teaspoons butter (unsalted)
2 teaspoons apple cider vinegar
2 teaspoons light brown sugar
1/2 teaspoon caraway seeds
1/8 teaspoon allspice (ground)
3 cups cabbage (thinly sliced)
salt and pepper
1/4 cup pomegranate seeds
2 tbsp fresh dill (chopped)

Steps:

  • Heat 1 1/2 teaspoons of the butter over medium heat. When the butter melts, add the apples and sauté them for about 5 to 6 minutes or until they start to soften.
  • Add the brown sugar, apple cider vinegar, caraway seeds and ground allspice and sauté for about a minute.
  • Add the cabbage and rest of the butter. Season with salt and pepper. Cook for about 2 minutes, stirring gently. Taste and adjust the seasoning.
  • Serve topped with the pomegranate seeds and fresh dill.

My German grandmother passed this recipe down to my mother, who gave it to me. I remember eating it as a small child. This vegetable dish can be made quickly and goes great with roast pork or barbecued ribs, potatoes and biscuits.

1 medium onion, chopped
1/4 cup butter
1 medium head red cabbage (2 pounds) , shredded
2 medium tart apples, peeled and chopped
1 cup apple cider or apple juice
1/4 cup packed brown sugar
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
2 bacon strips, cooked and crumbled
Minced fresh parsley, optional

Steps:

  • In a large skillet, saute onion in butter until golden and tender. Add the cabbage, apples, cider, sugar, vinegar, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for about 1 hour or until cabbage and apples are tender and the liquid is reduced. Sprinkle with bacon and parsley if desired.

Cabbage is one of my favorite veggies, so I am always looking for good recipes for cabbage, this is a really great one, and all ingredients can be adjusted to suit taste. This can also be made using green cabbage. I have even added a heaping tablespoon of garlic in with the onions. If you do not have any bacon fat handy, then use all oil, or oil with a few tablespoons of butter. Please, use only Granny Smith apples for this recipe, they hold up better than any other kind. This is a delicious side dish for beef!

1 medium red cabbage
1/4 cup brown sugar (can use more if desired)
1/4 cup apple cider
salt and black pepper
2 medium onions, coarsley chopped
1 bay leaf (option but good to use)
2 -3 tablespoons bacon fat
2 tablespoons oil
1/3 cup beef stock
4 apples, peeled and julienned
1/4 cup apple butter, plus
2 tablespoons apple butter (or to taste) or 1/4 cup applesauce (or to taste)

Steps:

  • Cut cabbage into quarters, then coarsely shred.
  • In a large frypan, heat oil and bacon fat (or butter if using).
  • Add in onions, and saute until tender (about 5 minutes).
  • Add in shredded cabbage, brown sugar, vinegar, bay leaf (if using) and stock; simmer uncovered for about 20-25 minutes.
  • Cover the pan and cook for about another 30 minutes, stirring occasionally or until cabbage is desired tenderness.
  • Stir in apples and apple butter or apple sauce.
