BAKED ITALIAN SAUSAGE WITH POTATOES AND ROSEMARY

- Preheat the oven to 200°C.
- Slice the sausages into 4cm pieces and place in a large roasting pan.
- Add the potatoes, paprika, rosemary, garlic cloves, sea salt and pepper.
- Tear the ciabatta into bite size pieces and add to the roasting tray.
- Drizzle over the oil and gently toss to combine.
- Place in the oven and cook, stirring occasionally, for 30-40 minutes or until the potatoes are tender and the sausages and bread are golden brown.
- Top with continental parsley and serve with a green salad.
OSCAR-STUFFED BEEF TENDERLOIN WITH ROSEMARY POTATOES AND BEARNAISE

- For the beef: Preheat the oven to 400 degrees F.
- Chop the crabmeat and place in a bowl. Add the mayonnaise and chives, and mix to combine. Season with salt, pepper and the lemon juice. Cover the bowl with plastic wrap and refrigerate until ready to use.
- Make a shallow cut lengthwise into the beef and then continue cutting along the curve, until the beef is a flat sheet. Sprinkle the beef with salt and pepper. Spread the crab mixture in an even layer on the beef, then place the asparagus lengthwise over the crab with the tips poking out. Roll up the beef to make a pinwheel, then use butchers twine to tie it together in 1-inch increments. Heat an ovenproof saute pan over high heat and add some oil. Sear the beef on all sides, then transfer the pan to the oven and cook until the internal temperature hits 130 degrees F, 30 minutes. Remove the meat from the pan and rest on a cutting board before slicing.
- For the potatoes: Place the potatoes in a saucepan filled with cool salted water. Cook the potatoes until tender, then drain and cool. Using your thumb or a spoon, smash the potatoes until they break apart slightly. In a straight-sided saute pan add enough oil to come 1-inch up the sides of the pan. Heat over medium heat until a deep-frying thermometer reads 365 degrees F. Add the rosemary and fry until crispy, then remove with a slotted spoon and drain on paper towels. Fry the potatoes until golden brown and crispy, then remove with a slotted spoon and drain on paper towels. Season with the flaky sea salt and pepper, and garnish with the fried rosemary.
- For the bearnaise: In a small saucepan set over medium-high heat, combine the vinegar, wine, shallots, bay leaf and half of the tarragon. Bring to a simmer and cook until reduced by half. Remove from the heat and set aside to cool. Pour through a fine mesh sieve to strain out the solids.
- In the pitcher of a blender, add the yolks and the vinegar reduction. With the blender running, add one-third of the butter in a slow, steady stream. Once it emulsifies, increase the blender speed to high and add the remaining butter. Add the remaining tarragon leaves, then season with salt and pepper and give it one more buzz. Set aside in a warm spot to hold the sauce.
- Slice the beef into two portions and serve with the potatoes and bearnaise sauce.
SAUSAGE, POTATO AND ESCAROLE ROAST
A one-pan meal of roasted potatoes, sausages, bell peppers and escarole seasoned with garlic and rosemary.

- Preheat the oven to 450 degrees F.
- Toss the potatoes, tomatoes, garlic, rosemary, 1 teaspoon salt and 1/2 teaspoon pepper with the oil in a large baking pan. Roast for 25 minutes.
- Remove the pan from the oven and scatter the sausages and bell peppers over the potatoes. Continue to roast for 20 minutes more. Remove the sausages, then add the escarole to the pan with the potatoes, scraping up the potatoes. Toss to combine. Place the sausages on top of the escarole. Move the oven rack to the highest position and roast on the top rack until the escarole is wilted, about 5 minutes.
- Set the oven to broil and broil until the sausages are well browned and the escarole is slightly charred, about 1 minute, watching carefully to prevent them from burning. Transfer to a platter and serve.

ITALIAN SAUSAGE STEW WITH ROSEMARY GARLIC MASH

- Fry the sausages in 1 tbsp oil in a casserole dish until brown. Remove. Tip in the carrots, celery and onion and cook for 10 mins, adding the chopped rosemary and half the garlic for the final min. Add the lentils, tomatoes and stock. Return the sausages, bring to the boil, cover and simmer for 20 mins. Remove the lid and cook for a further 10-15 mins until lentils are soft. Season.
- Meanwhile, boil the potatoes until tender. In another pan, heat the milk, remaining garlic and rosemary until just about to boil, then turn off heat. Drain the potatoes well.
- Sieve the hot milk over the rest of the potatoes and mash with the remaining oil, then season. Serve with the stew.

- Pe-heat oven to 400'F/200'C.
- Place sausages in a pot of cold water to cover and bring to boil.
- Simmer for approximately 5-10 minutes.
- Remove from water and slice thickly.
- Place sausage slices in a roasting pan.
- Add potatoes which have been cut into either thick slices or chunks.
- Sprinkle over the paprika, salt and black pepper.
- Add the rosemary.
- Drizzle with oil and toss gently.
- Roast for 50 minutes to 1 hour stirring occasionally or until potatoes are tender and sausages are golden brown.
- Tear ciabatta into bite sized pieces and add to pan for final 20 minutes of cooking.
- Sprinkle with basil and serve with a green salad and a spicy tomato sauce if desired.
