Easy, kid-approved English Muffin Pizza! Perfect for fast dinners, lunches, and healthy snacks. Tips for a not soggy crust and to make ahead and freeze.

4 whole wheat English muffins (split)
1/2 tablespoon extra virgin olive oil
3/4 cup prepared pizza sauce (tomato, pesto, or alfredo; whichever your family likes! (We use tomato))
Tiny Pinch kosher salt
Pinch black pepper
1 cup shredded part-skim mozzarella cheese (or cheddar cheese, provolone, or any cheese you like)
1/2 teaspoon Italian seasoning
Toppings of choice (such as mini pepperonis (or regular pepperonis, quartered), or sautéed veggies, such as spinach or mushrooms)
Thinly sliced fresh basil (optional for serving)

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Arrange the English muffin halves cut side up onto a baking sheet. Lightly drizzle with olive oil. Place in the oven and toast until barely golden, about 4 minutes.
  • Spoon 1 1/2 tablespoons pizza sauce over each one, using the back of a spoon to spread it evenly. Sprinkle with salt and pepper. Top with mozzarella cheese and Italian seasoning. Add any desired toppings.
  • Bake for 10 minutes, until the cheese is melted and the muffins are browned on the edges. Top with fresh basil. Enjoy hot.

1 pound ground beef
3/4 pound bulk pork sausage
1 small onion, chopped
1/2 cup tomato paste
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
3 packages (12 ounces each) English muffins, split
1-1/2 cups shredded part-skim mozzarella cheese
1 cup shredded cheddar cheese
1 cup shredded Swiss cheese

Steps:

  • In a Dutch oven, cook the beef, sausage and onion over medium heat until meat is no longer pink; drain. Stir in the tomato paste, garlic salt, oregano and cayenne. Spread over the cut side of each English muffin. Place on baking sheets. Combine the cheeses; sprinkle over meat mixture., Freeze for up to 3 months or bake at 350° for 15-20 minutes or until heated through.

1 cup shredded sharp Cheddar cheese (4 oz)
1/4 cup milk
4 eggs, slightly beaten
1/4 teaspoon salt
1/2 lb bulk breakfast sausage
1/2 cup diced onion

Steps:

  • Heat oven to 400°F. Place foil baking cup in each of 12 regular-size muffin cups; spray foil baking cups with cooking spray.
  • Place 6 frozen mini Tater Tots™ in each muffin cup; bake 30 minutes. Remove from oven; cool 5 minutes. Using 2 paper towels, gently press potatoes into cups to create a base for the muffins. Evenly sprinkle cheese over potatoes in each muffin cup.
  • Meanwhile, in small bowl, mix milk, eggs and salt; set aside.
  • In 10-inch nonstick skillet, cook sausage and onion over medium-high heat 5 to 7 minutes, stirring frequently, until browned. Cool 2 minutes. Spoon evenly over Tater Tots™ in each muffin cup.

Easy to make and the kids can help. Good if you're on a budget or in college. Great for OMAC or at the end of the month. This recipe is very forgiving and can be a mix and match of things you have around. NOTES: You can use regular precooked potatoes that are diced or hash browns. Sausage can be bulk, just make sure to cook and crumble before adding to onions. For the links, cut in half and julienne them. Then cut the juliennes into half across the width. In place of sausage you could use left over chicken, roast or pork. Any kind of cheese can be used!

6 English muffins, split
4 breakfast sausage links
1 small onion, thinly sliced
8 tater tots, still frozen
2 tablespoons vegetable oil
1/3 cup cheddar cheese, shredded
1/3 cup pasta sauce
1/8 teaspoon garlic powder
salt & pepper

Steps:

  • In a small skillet, heat oil over medium.
  • Add onions, sausage and tater tots.
  • Cook until onions are transparent and tater tots are soft and brown.
  • Break up tater tots adding garlic powder and salt and pepper to taste.
  • Take muffins and split in half using the precut as a guideline.
  • Place split muffins on a cookie sheet.
  • Spread each half with 1-2 T of pasta sauce and 2-3 T of sausage mixture.
  • Top with 2 generous pinches of cheese.
  • Bake in a 350 oven 15 minutes or until cheese is melted and muffins are firm.
  • For OAMC-Precook the sausage and potato mix storing in a ziplock bag when cooled. Thaw in the microwave 5-10 minutes or until the bag is manageable. Since everything is cooked you don't want to overcook it, just thaw it out. Then assemble as directed above.
