4 onions , cut into thin wedges
2 tbsp balsamic vinegar
8 sausages
300ml / ½ pint beef stock
1 tbsp Worcestershire sauce
mashed potato and green beans, to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put the onions into a roasting tray and drizzle with the vinegar and seasoning. Sit the sausages on top and roast for 30 mins, stirring halfway.
  • Pour over the stock and Worcestershire sauce, return to the oven and cook for 10 mins more. Serve with the mash and green beans.

Here's what you need: sausages, mashed potato, puff pastry, egg, onion gravy

4 sausages
mashed potato, cold
4 pieces puff pastry, thawed
1 egg
onion gravy, optional for a side

Steps:

  • Brown the Sausages on all sides in a large skillet - until mostly cooked through. Set aside to cool slightly.
  • Unroll each sheet of puff pastry and cut into 4 pieces.
  • Spread mash over each pastry, top with cooked sausage and additional mash.
  • Roll up each sheet - pinch together to seal and trim off any excess.
  • Place on a greased baking sheet - seam side down - and brush each roll with beaten egg.
  • Bake in a preheated oven at 190˚C (375˚F) for 25-30 minutes - until the pastry is golden and crispy on all sides and the meat has cooked through. Serve with a side of Onion Gravy.

1 quart milk

5 -6 dashes Worcestershire sauce

Steps:

  • Cook sausage and onions in a skillet until sausage is done.
  • Meanwhile, in a separate bowl, combine milk, Worcestershire sauce, and salt/pepper (to taste); set aside.
  • When sausage/onion mixture is done,remove and drain excess grease.
  • Return sausage/onion mixture back to skillet.
  • Over medium/low heat, gradually add flour.
  • Turn to coat sausage and cook until golden (approx).
  • Return heat to medium.
  • Slowly stir in milk/seasoning mixture.
  • Cook until gravy reaches desired thickness (stirring frequently).
  • Cook biscuits according to package directions.
  • Serve gravy over biscuits split in half.

1/4 cup 2% milk

1 envelope country gravy mix

Steps:

  • Preheat oven to 400°. In a small bowl, whisk 6 eggs, milk, salt and 1/4 teaspoon pepper until blended., In a large nonstick skillet, heat butter over medium heat. Pour in egg mixture; cook and stir just until eggs are thickened and no liquid egg remains. Remove from heat., In a small bowl, whisk remaining egg with water. On a lightly floured surface, unfold one sheet of puff pastry and roll to a 10-in. square. Transfer to a parchment-lined baking sheet. Arrange ham over pastry to within 1 in. of edges; top with scrambled eggs. Sprinkle with cheese., Brush beaten egg mixture over edges of pastry. Roll remaining puff pastry to a 10-in. square; place over filling. Press edges with a fork to seal; cut slits in top. Brush top with additional egg mixture; sprinkle with remaining pepper. Here's another of those William-Sonoma recipes I want to try when I get a chance. Sounds like a great fall recipe to me, real comfort food. The site says that The British sausage became known as a banger around World War I, probably because ti spluttered as it fried. Don't know if that's true or not, but the addition of the wine to this recipe has got to make it a winner in this house. Don't know how to separate the sections of this recipe in the ingredients, so the sausages, mash (potatoes) and gravy are listed together in order. As an update, finally got to try this and yes; it's real comfort food, with a rich, robust gravy. Nice for those cool Fall evenings and pretty simple to make.

2 lbs pork sausage, of good quality
1 tablespoon sunflower oil
2 lbs yukon gold potatoes (start mash)
1/2 teaspoon sea salt (to taste)
1/4 teaspoon ground pepper, to taste
1/3 cup milk
2 tablespoons unsalted butter
2 tablespoons unsalted butter (now gravy)
1 tablespoon olive oil
2 red onions, halved and finely sliced
1 1/2 teaspoons all-purpose flour
1 teaspoon red wine vinegar
1 cup red wine, full-bodied, such as Shiraz
1 cup beef stock
1/4 teaspoon sea salt, to taste
1/4 teaspoon ground pepper, to taste

Steps:

  • Preheat oven to 400.
  • Place sausages in a roasting pan, drizzle with sunflower oil and toss to coat.
  • Spread sausages out in single layer and bake, turning after 15 minutes, until evenly colored, about 30 minutes.
  • Meanwhile, make the mash: Peel potatoes and cut into large chunks. Place in saucepan with water to cover, salt water and bring to boil over medium heat.
  • Cook until potatoes are tender when pierced with a knife, about 15 minutes.
  • Drain, cover with a kitchen towel and let stand until dry, about 5 minutes.
  • In same pan over medium-high heat, combine milk and butter and bring to a boil.
  • Remove from heat and set aside.
  • Place potatoes in a bowl and mash. Add hot milk mixture and beat until smooth. Season with salt and pepper to taste.
  • To make gravy, in a wide shallow saucepan over medium-low heat, melt the butter with the olive oil. Add onions and cook, stirring requently, until they are soft, about 20 minutes. Stir in flour and cook until lightly colored, 2-3 minutes. Stir in vinegar and cook until evaporated. Stir in red wine and stock, increase heat to medium-high and bring mixture to a boil. Reduce heat to low and simmer until a rich sauce forms, about 10 minutes.
  • Season with salt and pepper to taste.
  • Divide sausages and mash among individual plates. Spoon gravy on top and serve immediately. Pass remaining gravy at the the table.

12 chipolata sausages
3 eggs
1 cup milk (low fat is fine)
1 1/4 cups plain flour

  • To make the onion gravy, heat the oil in a medium saucepan; add the onion; cook, stirring occasionally, until soft; add the sugar; cook, stirring for 2 minutes; add blended gravy powder and water; cook, stirring, until the gravy boils and thickens; simmer for 2 minutes; remove from the heat; cover to keep warm.
  • Cook the sausages in a heated, oiled pan, until browned and cooked.
  • Preheat the oven to 240°C/475°F/9 gas mark.
  • Whisk the eggs, milk and flour in a large bowl to a smooth batter; season with salt and pepper, to taste.
  • Place 2 teaspoons of oil in each hole of a 6-hole Texas muffin pan (3/4 cup capacity); place in a very hot oven (240°C/475°F/9 gas mark) for 5 minutes, or until the oil is very hot; remove the pan from the oven; divide the batter evenly among the pan holes; place 2 sausages in each hole; sprinkle with chopped rosemary.

1/2 tbsp oil
8 sausages of choice ((Note 1))
1 large onion (, halved and finely sliced (yellow, white or brown) (Note 2))
2 garlic cloves (, minced)
3 tbsp flour ((plain))
2 cups beef stock/broth
1/4 tsp salt
1/2 tsp black pepper
Mashed potato

Steps:

  • Cook sausages: Heat oil in a large skillet / fry pan over medium high heat. Add sausages and cook, turning, until browned as much as possible all over and cooked through. Cook time will differ depending on sausage size - mine take around 8 minutes.
  • Remove sausages onto a plate. Turn heat down to medium.
  • 2 tbsp oil remaining: You need around 2 tbsp oil left in the skillet. If you have much less, add a bit of butter or oil.
  • Saute onion and garlic: Add onion and garlic, cook until golden brown - around 4 minutes.
  • Cook off flour 2 minutes: Add flour and mix through. Then cook, stirring constantly for 2 minutes.
  • Gradually add beef stock: Add about 3/4 cup of beef broth and mix into the onion so it becomes a sludge. Then add remaining beef broth and mix until combined. If it's lumpy, use a whisk to help make it smooth.
  • Thicken gravy: Simmer, stirring, for 2 to 3 minutes until the gravy thickens but is slightly thinner than you want - it will thicken more as you serve it.
  • Season: Add salt and pepper. Stir, taste, then add more salt if you want.
  • Serve sausages with plenty of gravy, with mashed potato and peas on the side. (Low carb option - Creamy Cauliflower Mash)

2large orange sweet potatoes about 800g/1¾lb total weight
3 tbsp vegetable oil
8 plump sausages
365g jar onion marmalade

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C. Cut the sweet potatoes into wedges and put them in a large roasting tin. Drizzle over 2 tablespoons of the oil and toss the wedges to coat. Roast for 40-45 minutes until cooked through and crisp.
  • Halfway through the cooking time, heat the remaining oil in a frying pan. Add the sausages and cook for 20 minutes, turning regularly until cooked through.
  • Drain off any fat and add the onion marmalade, with about 100ml/31⁄2fl oz water. Stir well then heat through.

1 tbsp sunflower oil
8 pork sausages (the best quality you can find)
small knob of butter
3 small onions, finely sliced
1 thyme sprig
1 bay leaf
pinch of sugar
1 heaped tsp plain flour
1 tbsp red wine vinegar
1 glass red wine
1 tsp soy sauce
400ml beef stock made with 1 stock shot or cube
1 kg King Edward potatoes, peeled and cut into large chunks
100ml whole milk or 50ml milk and 50ml cream
50g cold butter, diced
grating of nutmeg

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Heat the oil in an ovenproof frying pan and gently sizzle the sausages over a medium-high heat for 8-10 mins, turning them, until browned on all sides. Transfer to a plate, then put the butter in the pan and heat until sizzling. Scatter in the onions, stirring them into the butter, then add the thyme sprig, bay and sugar. Give everything a final stir, then put the sausages on top and drizzle over any juices from the plate. Roast everything for 20 mins, turning the sausages halfway through.
  • Meanwhile, make the mash. Tip the potatoes into a pan of cold salted water and bring to the boil, then turn down and simmer for 10-12 mins or until just cooked all the way through (the tip of a knife should slide in easily). Drain in a colander and leave for a minute. Tip the milk into the pan and bring to a simmer, then pass the potatoes through a ricer into the hot milk and mash thoroughly. Once mashed, beat with a wooden spoon or spatula over very low heat, then beat in the butter a few bits at a time. You should have extra-fluffy, smooth mash. Keep it warm.
  • When the sausages are cooked, remove from the oven, turn the oven off and lift the sausages onto a tray. Return them to the oven to keep warm. Put the pan back on the heat and give the roasted onions a stir, they should be sticky and slightly burnt around the edges. Sizzle for a minute or two more to caramelise, then stir in the flour and cook for another minute. Splash in the vinegar, simmer for a minute, then pour over the red wine and soy, and bubble down to a gloopy paste. Pour over the stock and boil for 3-4 mins, or until you have a rich gravy. If you prefer, scoop out the thyme and bay, or just leave it in. Tip into a bowl or gravy jug with a serving spoon for the onions. Bring everything to the table and scoop a big mound of mash onto the middle of each plate, then top with the sausages and gravy.

21 ounces lancashire cheese, grated (1 lb 5oz)
7 ounces fresh breadcrumbs
6 scallions, chopped
2 tablespoons fresh thyme, chopped
2 tablespoons parsley, freshly chopped
3 eggs
3 egg yolks
2 garlic cloves, crushed
1/4 cup milk, to bind
salt & freshly ground black pepper
vegetable oil, for frying
3 large onions, sliced
2 garlic cloves, crushed
1 tablespoon brown sugar
3 ounces plain flour
1/3 cup vegetarian liquid gravy browner
1 pint vegetable stock

Steps:

  • Place all the sausage ingredients except the oil in a large bowl, season well, and mix it all up with your hands. When you taste it, overseason it by about 15 per cent, so it's a bit more salty and peppery than you'd normally have - the mixture loses some of its power as it chills and cooks. Chill the mixture for two hours.
  • Meanwhile, make the gravy. Heat a little oil in a pan and fry the onions, garlic and sugar over a low heat until golden. Sprinkle on the flour and cook for 3-4 minutes. Add the gravy browning and stock and bring to the boil. Season, then simmer for at least 20 minutes.
  • Mould the chilled sausage mix into sausage shapes - you should get about twelve decent bangers out of it, depending how big you like your sausage.
  • You can either shallow-fry the sausages in a little oil or deep-fry them in a lot of oil; I think the deep-fry method brings the best out of the flavour and texture. Fry them for about five minutes until golden, then drain well on some kitchen paper and serve with the gravy.
  • This fabulous grub is great with mashed potato (try it with the addition of wholegrain mustard), with a salad or in a bun smothered in ketchup, onions and mustard and served with chips.

2 cubes beef bouillon

  • Boil sausages in large pan of water for 5 minutes; drain and peel off skin. Chop up sausages.
  • Heat oil in a large fry pan and fry onion until soft and golden. Remove pan from heat and add flour. Stir slowly adding water until well combined. Return to heat and bring to boil, stirring. Add beef cubes, Worcestershire sauce, tomato sauce, salt and pepper; mix well.

400g pack sausages
1 batch Basic sticky onions (see recipe underneath)
1 tbsp plain flour
1 sprig thyme, leaves picked
400ml beef stock
splash Worcestershire sauce
50g butter
12 medium onion
1 tsp sugar

Steps:

  • Fry sausages for 15 mins or until browned, then remove from pan and keep warm. Heat onions in same pan, then add flour, stirring for 1 min. Add thyme, then gradually add stock. Bring to boil then simmer for 5 mins until smooth. Add Worcestershire sauce, season and serve with sausages.
  • For the onions: Makes 600g, which is 3 batches. Prep time 5 mins, cook time 30 mins. Melt the butter in a large, deep frying pan and stir through the onions. Cover with a lid and cook gently for about 10 mins, until softened. Remove lid, add sugar, then cook 15-20 mins, stirring, until all of the liquid has evaporated and onions have turned golden.
