This Sausage and Potatoes Breakfast Hash Recipe is an easy 2 ingredients meal. Ground pork sausage and fried potatoes will keep you full well into your day.

Steps:
- Brown and crumble sausage in large bottom pot or pan. I use a potato masher to achieve small crumbles. Cook to desired crispness. Remove sausage and set aside. Leave oil in pan.
- Add potatoes to pan and fry over medium/high heat. Add additional oil as needed. Toss and fry until potatoes are browned and tender.
- Add sausage back to pan. Season with salt, pepper and seasoning blend. Toss and serve.

POTATO HASH

Steps:
- Pierce both potatoes a few times, put in the microwave and cook on high until cooked through, 5 to 10 minutes. Carefully remove the skin from the sweet potato. Dice both potatoes and set aside.
- In a medium skillet, melt 2 tablespoons of the butter over medium heat. Add the bell peppers, squash, zucchini and onions and cook for a few minutes. Add the diced potatoes to the veggies and cook until golden brown. Season with salt and pepper.
- In a separate pan, melt the remaining tablespoon of butter over medium heat and crack in the eggs. Cook until the whites have set, 3 to 4 minutes.
- Serve up the hash with a fried egg on top of each portion.

- Heat the oil in a large heavy-based frying pan. Add the sausages and fry for 8-10 minutes until well browned. Remove the sausages, then slice them on the diagonal and set aside.
- Turn the heat to high, then add the potatoes and leeks and give them a good stir. Continue to cook on a fairly high heat until the potatoes begin to brown and turn crisp. Toss the sausage slices back in along with the creamed horseradish and heat for a further 2-3 minutes. Take the pan off the heat, sprinkle in the cheese, season well and gently stir to combine.

Steps:
- In a large skillet, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain. Remove the sausage and set aside.
- In the same skillet, heat the remaining oil for 30 seconds. Carefully add the potatoes and fry until they begin to turn golden brown, 10 to 15 minutes. Stir occasionally so that the potatoes do not stick or burn.
- Add onions, peppers, salt, and pepper, and cook for an additional 5 minutes. Add the sausage and stir well.
- Serve with the fried eggs and avocado slices on top to get more nutrition from the meal.
SAUSAGE POTATO HASH
Steps:
- Add the olive oil to a large skillet and heat over medium heat. Add the cubed potatoes, season with salt and pepper and cook for 7 to 10 minutes, until they're about half way cooked through, stirring occasionally.
- Add the onion and cook for another 3 minutes, stirring occasionally.
- Add the sausage, bell peppers, garlic and red pepper flakes to the skillet and stir. Reduce the heat, and continue cooking until potatoes are cooked through, another 10 minutes. You can also cover the skillet, this will cook the potatoes a bit faster.
- Taste for seasoning and adjust with salt and pepper if needed. Serve with fried eggs.

- In a skillet, on medium heat, saute the sausage; then add the onion, carrots and bell pepper.

- In a large nonstick skillet, heat 1 tablespoon oil over medium-high heat. Add sausage; cook and stir 4-6 minutes or until lightly browned. Remove from pan., In same pan, heat remaining oil over medium heat. Add potatoes, sweet onion and 1/4 teaspoon pepper; cook, covered, 10-12 minutes or until golden brown, turning potatoes every 2 minutes. Stir in red pepper and sausage; heat through., Meanwhile, in another large nonstick skillet, heat butter over medium-high heat. Break eggs, one at a time, into pan; immediately reduce heat to low. Cook, covered, 5-6 minutes or until whites are completely set and yolks just begin to thicken. If desired, carefully turn eggs and cook second side to desired doneness. Remove from heat; sprinkle with remaining pepper. Serve over hash.

- Begin my heating olive oil in a very large pan over medium-high heat. Crumble sausage into pan and brown completely.
- Add potatoes and onion, cooking approximately 10-15 minutes and stirring frequently.
- Add peppers and cook an additional 5 minutes occasionally. Potatoes and vegetables should begin to brown.
- Add garlic and zucchini. Cook an additional 5 minutes until zucchini is just tender.
- Season with pepper, Italian seasoning, red pepper flakes, and salt.
- Top with Parmesan if desired.

- Heat the olive oil in large non-stick frying pan over medium heat, then add potatoes, carrots & rosemary and stir well to coat.
- Place a tight-fitting lid on the pan and leave to cook on medium heat for 8 minutes - see my notes for suggestions if your pan doesn't have a lid.
- After the 8 minutes is up remove the lid and add sliced sausages, chopped onion and bacon to the same pan and stir well to coat.
- Allow everything to fry on medium heat (not covered) for 8-10 minutes (without moving), turning the hash every 2 minutes with a large spatula, (this will give you good colour and caramelisation).

- Wash and cube potatoes. Soak in water 30 minutes to an hour. Remove from water and drain potatoes.
- Add potatoes to a large pot. Add enough water to cover the potatoes. Bring to a boil, then reduce heat to medium and cook for 10 minutes.
- Drain potatoes well. You do not want much water on the potatoes when you add them to the hot skillet!
- Add 3 Tablespoons canola oil to a cast-iron skillet and heat on medium to medium-low. Add just enough potatoes and sausage to make one layer in the skillet, liberally salt and pepper the mixture. (You will have to cook in batches or use two pans.)
