1/4 cup extra-virgin olive oil
1 pound sweet Italian turkey sausage
2 red bell peppers, sliced
2 yellow onions, sliced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1/2 cup chopped fresh basil leaves
4 garlic cloves, chopped
2 tablespoons tomato paste
1 cup Marsala wine
1 (15-ounce) can diced tomatoes
1/4 teaspoon red pepper flakes, optional
4 to 6 fresh Italian sandwich rolls, optional

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
  • Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
  • Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
  • Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
  • Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.

This is an easy way to cook sausage, peppers and onions together. They cook to be really juicy and acquire the flavor of the vegetables while cooking. I serve the mixture on hoagie rolls. You could also add shredded Mozzarella atop sausages/vegies and put back in the oven, just until the cheese melts! These are great with oven french fries. This recipe could also be expanded and taken to potluck dinners and kept warm in a crock-pot and just have the hoagie rolls on the side for people to make their own sandwiches. There are alot of possibilities with this recipe.

3 Italian sausages (mild, sweet or spicy)
2 green peppers, cut into strips (I used red, orange and green)
1 medium onion, sliced (type of onion is your preference)
2 tablespoons olive oil
2 teaspoons garlic powder

aluminum foil

Steps:

  • -Preheat oven to 375°F.
  • -Line a small 8-inch square pan with foil.
  • -Treat with cooking spray.
  • -Poke a few holes in sausages with fork or sharp knife.
  • -Layer sausages, peppers, onions, olive oil and seasonings in pan.
  • -Cover with another sheet of foil.
  • -Cut a couple of slits in top for steam to escape.
  • -Bake for 35-45 min (ovens vary).
  • -Serve sausages with peppers/onions on warm hoagie rolls!

1 large sweet yellow onion
2 red bell peppers
2 green bell peppers
¼ cup olive oil
salt and freshly ground pepper to taste
8 links of Italian Sausage, sweet, hot, or a combination of the two
4 club, hero or wedge rolls, split

Steps:

  • Peel the onions, cut them in half and slice, thinly, cross-wise.
  • Cut the peppers in half, remove the stems and seeds, and slice into thin strips.
  • In a large skillet, preferable cast iron, heat the olive oil over medium-high heat. Add the peppers and onions and season with salt and pepper.
  • Lower the heat to medium-low, and cook stirring frequently until onions are translucent and peppers are soft, 15-20 minutes.
  • Meanwhile, if using a gas grill turn the burners on one side to high. If using a charcoal grill, pile the coals on one side if the grill and light them.
  • Place the sausage directly over the fire and cook, turning until browned on all sides. Then move to the side of the grill with no fire, cover the grill and cook, turning once until sausage is done, 8-10 minutes.
  • Slice the club rolls open and place two links of sausage in each roll and cover with a heaping portion of the peppers and onions. Serve with a cold beer to wash it down!

2 (28 ounce) cans whole peeled tomatoes
1 (28 ounce) can crushed tomatoes
1 (29 ounce) can tomato sauce

8 Italian pork fennel sausages, sweet or hot (about 2 pounds)
Extra-virgin olive oil
3 or 4 medium bell peppers, a mix of red and yellow, sliced into 1/4-inch strips

2 garlic cloves, minced
1 tablespoon red wine vinegar

Steps:

  • Prick each sausage in several places with a skewer or the tip of paring knife to prevent bursting. Put sausages in one layer in a skillet. Add water to cover and bring to a simmer. Cook for 5 minutes, then cover, turn off heat and let steep.
  • Place a wide skillet over high heat and add 2 tablespoons olive oil. When oil is hot, add sliced peppers and onions. Season generously with salt and pepper, and cook, stirring frequently, until softened and beginning to brown, about 10 minutes. Adjust heat as necessary if mixture seems to be cooking too quickly. 1 yellow onion, sliced

1 tablespoon tomato paste

1/2 cup chicken stock
Kosher salt and freshly ground black pepper
6 hoagie rolls, split lengthwise three-quarters of the way through and toasted

Steps:

  • In a large saute pan, heat 2 tablespoons of the olive oil over medium-high heat. Add the sausage to the skillet and brown on all sides, 10 to 12 minutes. Transfer the sausage to a plate.
  • Add the bell peppers, onions and remaining 1 tablespoon of olive oil to the saute pan used for the sausage and cook, stirring occasionally, until the vegetables are soft, about 10 minutes. Add the tomato paste and garlic. Let cook for 1 minute, and add the chicken stock. Cut the sausages on the diagonal into 2-inch pieces and add them to the saute pan. 12 - 18 oz smoked sausage (2 or 3 links)
3 small yellow onions
1 green bell pepper
1 red, yellow or orange bell pepper
1 bunch chives (about 4 stalks)
handful fresh spinach
1/4 c olive oil
1/3 c water
2 Tbsp flour or cornstarch
1 pkg fajita seasoning
5 long individual bread rolls / buns

Steps:

  • 1. Heat olive oil in pan.
  • 2. Slice up onions and peppers into thin strips. Add to pan, sautee until tender, stirring every few minutes. Cover pan to keep moisture in and to keep veggies tender.
  • 3. Slice sausage into smaller pieces about 3 or 4 inches long. Add to sautee pan. (If you slice sausage "julienne" style, it makes it easier to eat out of the bun later on!)
  • 4. Chop chives, add to pan.
  • 5. Add water and fajita seasoning to pan. Stir well, cover and let simmer for 5 minutes.
  • 6. Chop spinach, add to pan. At this point, you will see if you need more water. It is good to have water simmering at the bottom of the pan. Add more water if need to, then add the cornstarch/flour. Mix well to form thick sauce, adding more water / flour / cornstarch, if needed. Put cover back on and simmer for 5 more minutes.
  • 7. I like to arrange my bread rolls on top of the pan cover to warm them up that way. After the last 5 minute simmer, dish is done. Let sit for a few minutes and serve on warm bread. :)

8 hot Italian Sausages, (you can choose mild if you prefer)
2 large sweet onions
4 red bell peppers
1 teaspoon coarse salt, divided (or to taste)
1/2 teaspoon freshly ground black pepper, divided (or to taste)
2 tablespoon extra virgin olive oil
8 hoagie rolls (or bratwurst buns)
8 oz sliced provolone cheese (optional)

Steps:

  • To make the foil packs, tear two ~12" x 20" sections of foil. Fold each in half. For each piece, roll the sides adjacent to the fold tightly 3-4 times to make a pouch.
  • Mix the sliced onions and peppers. Divide approximately between the two foil pouches. Add 1/2 teaspoon of salt, 1/4 teaspoon of freshly ground black pepper, and 1 tablespoon of oil to each pouch. Fold the top of the pouch several times to seal. Refrigerate until use.
  • Prepare charcoal grill for indirect heat. When the coals are hot and completely ashed over (white), add the sausages directly over the coals. Place the pepper-onion packs on the indirect heat side of the grill.
  • Grill the sausages for 3-5 minutes each on 2 sides, or until browned (check to be sure they don't burn; see Recipe Note #1). Continue grilling, turning as necessary, until thoroughly cooked, an additional 8-9 minutes (total 15-18 minutes) to cook through. If you'd like to toast your rolls, move the sausages to indirect heat and toast the bread until lightly browned.
  • To assemble the sandwiches, lay 1-2 slices of provolone cheese (if using) on the bottom of the roll. Add one hot sausage and ~1/2 cup of the pepper-onion mixture (see Recipe Note #2).

  • In a large skillet, heat one tablespoon of the vegetable oil over medium heat. Add the onions, peppers, and jalapeno, sprinkle over the sugar, season with salt and pepper, and sauté for about 8 to 10 minutes until fairly tender. Transfer to a plate, and carefully wipe out the hot skillet.
  • Return the skillet to medium high heat, add the sausages to the skillet, and cook, turning them somewhat frequently, for about 10 minutes until lightly browned and cooked through. Cut them into pieces that will comfortably fit into the buns.

  • Bring the beer to a simmer in a large saucepan over medium-high heat. Add in the 4 bratwurst sausages (brats) and just enough water so that the brats are just covered. Simmer the brats for 5 minutes. Then remove them from the beer. They will be plump and also a little grayish looking - but don't worry! They will get more color once you grill them. Hold the brats aside until it's time to grill.
  • While the brats simmer, slice the bell peppers into rings. Do this by laying the pepper on its side, then slicing off the top. Pull out the bundle of seeds and tap the pepper upside down over the sink to get the loose seeds out. With the pepper still on its side, slice it into thin rings - about 1/4 inch thick.
  • Have ready a rimmed baking sheet to place on one half of your grill grates, or a sheet of heavy duty foil. Preheat a gas grill, then turn the burners to medium.
  • If the sub rolls aren't already cut, slice them open now. Lay some grilled peppers and onions in each roll and then add a grilled sausage to each. Add a few more rings of peppers and onions to the top of each sausage.

  • Heat the olive oil in a large, deep skillet over medium high heat. Brown the sausage links in the olive oil on all sides. It will take about 2-3 minutes on each side for 10-12 minutes total. Remove them from the pan and let them cool enough to handle. Add the butter to the pan and let it start to melt. Add the onion, garlic and bell peppers and let them soften for 3-5 minutes in the butter. Season the mixture with the seasoned salt, dried basil, dried parsley and cracked black pepper while it cooks. Finally, pour in the tomato paste, wine and Worcestershire sauce. Let them cook for a minute.
  • Meanwhile, take the sausage links and quickly slice them into rounds. They will not be cooked through at this point and that's ok. Return them to the pan and stir them into the rest of the mixture. If the pan is dry, add a little more red wine. Turn the heat down the low and cover the skillet. Let the mixture simmer for 10-15 minutes to really develop flavor and cook the sausage through. While the mixture simmers, split and toast the rolls. Fill them with the cooked sausage, pepper and onion mixture and serve immediately! It also makes great leftovers.

When ready, preheat your oven to 400 degrees.
  • Make the garlic butter when the sausages are ready by just mixing together the butter, parm, garlic, and Italian seasoning, smear some of it on the cut side of each half of the roll then pop them in the oven for about 7 to 8 minutes or until deeply golden and crispy.
