Steps:
- Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
- Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
- Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
- Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
- Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.
OVEN SAUSAGE WITH PEPPERS-N-ONIONS
This is an easy way to cook sausage, peppers and onions together. They cook to be really juicy and acquire the flavor of the vegetables while cooking. I serve the mixture on hoagie rolls. You could also add shredded Mozzarella atop sausages/vegies and put back in the oven, just until the cheese melts! These are great with oven french fries. This recipe could also be expanded and taken to potluck dinners and kept warm in a crock-pot and just have the hoagie rolls on the side for people to make their own sandwiches. There are alot of possibilities with this recipe.

- -Preheat oven to 375°F.
- -Line a small 8-inch square pan with foil.
- -Treat with cooking spray.
- -Poke a few holes in sausages with fork or sharp knife.

- -Cut a couple of slits in top for steam to escape.

- Peel the onions, cut them in half and slice, thinly, cross-wise.
- Cut the peppers in half, remove the stems and seeds, and slice into thin strips.
- In a large skillet, preferable cast iron, heat the olive oil over medium-high heat. Add the peppers and onions and season with salt and pepper.
- Lower the heat to medium-low, and cook stirring frequently until onions are translucent and peppers are soft, 15-20 minutes.
- Meanwhile, if using a gas grill turn the burners on one side to high. If using a charcoal grill, pile the coals on one side if the grill and light them.
- Place the sausage directly over the fire and cook, turning until browned on all sides. Then move to the side of the grill with no fire, cover the grill and cook, turning once until sausage is done, 8-10 minutes.
- Slice the club rolls open and place two links of sausage in each roll and cover with a heaping portion of the peppers and onions. Serve with a cold beer to wash it down!

- Prick each sausage in several places with a skewer or the tip of paring knife to prevent bursting. Put sausages in one layer in a skillet. Add water to cover and bring to a simmer. Cook for 5 minutes, then cover, turn off heat and let steep.
- Place a wide skillet over high heat and add 2 tablespoons olive oil. When oil is hot, add sliced peppers and onions. - 1. Heat olive oil in pan.
- 2. Slice up onions and peppers into thin strips. Add to pan, sautee until tender, stirring every few minutes. Cover pan to keep moisture in and to keep veggies tender.
- 3. Slice sausage into smaller pieces about 3 or 4 inches long. Add to sautee pan. (If you slice sausage "julienne" style, it makes it easier to eat out of the bun later on!)
- 4. Chop chives, add to pan.
- 5. Add water and fajita seasoning to pan. Stir well, cover and let simmer for 5 minutes.
- 6. Chop spinach, add to pan. At this point, you will see if you need more water. It is good to have water simmering at the bottom of the pan. Add more water if need to, then add the cornstarch/flour. Mix well to form thick sauce, adding more water / flour / cornstarch, if needed. Put cover back on and simmer for 5 more minutes.
- 7. I like to arrange my bread rolls on top of the pan cover to warm them up that way. After the last 5 minute simmer, dish is done. Let sit for a few minutes and serve on warm bread. :)

- To make the foil packs, tear two ~12" x 20" sections of foil. Fold each in half. For each piece, roll the sides adjacent to the fold tightly 3-4 times to make a pouch.
- Mix the sliced onions and peppers. Divide approximately between the two foil pouches. Add 1/2 teaspoon of salt, 1/4 teaspoon of freshly ground black pepper, and 1 tablespoon of oil to each pouch. Fold the top of the pouch several times to seal. Refrigerate until use.
- Prepare charcoal grill for indirect heat. When the coals are hot and completely ashed over (white), add the sausages directly over the coals. Place the pepper-onion packs on the indirect heat side of the grill.
- Grill the sausages for 3-5 minutes each on 2 sides, or until browned (check to be sure they don't burn; see Recipe Note #1). Continue grilling, turning as necessary, until thoroughly cooked, an additional 8-9 minutes (total 15-18 minutes) to cook through. If you'd like to toast your rolls, move the sausages to indirect heat and toast the bread until lightly browned.
- To assemble the sandwiches, lay 1-2 slices of provolone cheese (if using) on the bottom of the roll. Add one hot sausage and ~1/2 cup of the pepper-onion mixture (see Recipe Note #2).

- Bring the beer to a simmer in a large saucepan over medium-high heat. Add in the 4 bratwurst sausages (brats) and just enough water so that the brats are just covered. Simmer the brats for 5 minutes. Then remove them from the beer. They will be plump and also a little grayish looking - but don't worry! They will get more color once you grill them. Hold the brats aside until it's time to grill.

- Heat the olive oil in a large, deep skillet over medium high heat. Brown the sausage links in the olive oil on all sides. It will take about 2-3 minutes on each side for 10-12 minutes total. Remove them from the pan and let them cool enough to handle. Add the butter to the pan and let it start to melt. Add the onion, garlic and bell peppers and let them soften for 3-5 minutes in the butter. - Sear the sausages in a little olive oil in a shallow dutch oven, once well seared remove them to a plate.
- To the same dutch oven (add more oil if you need to) add the peppers, onions and garlic (don't add the long hots at this point if you're using them) add a touch of salt and saute for a few minutes or until they start to develop some color and cook down.
