I used to work where we had a lot of potluck lunches. I just brought the ingredients, already prepared, a rice cooker, and an electric frying pan. I would start the rice about 20 minutes before lunch and cook the rest in the frying pan while everyone else was uncovering and setting out their dishes. My copy of the recipe is getting so tattered I felt I better archive it. I would sorely miss it if lost.

2 cups white rice
4 cups water
12 ounces country-style smoked link sausage
½ cup water
1 large onion, sliced
1 large green bell pepper, cut into 1-inch pieces
1 cup diagonally sliced celery, 1 inch thick
1 (14 ounce) can whole peeled tomatoes, quartered
1 cup beef broth
1 (8 ounce) can pineapple rings in juice, cubed and juice reserved
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
1 tablespoon brown sugar
2 tablespoons cornstarch

Steps:

  • Bring rice and 2 cups water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Place sausages into a skillet with 1/2 cup water over medium heat, cover, and cook until heated through, about 5 minutes. Thinly slice sausages. Combine sausages with onion, green pepper, and celery in a large skillet over medium heat; cook and stir until vegetables start to soften, about 5 minutes.
  • Stir tomatoes, beef broth, pineapple, garlic powder, black pepper, and brown sugar into sausage mixture. Cook and stir until brown sugar has dissolved and mixture comes to a simmer. Whisk reserved pineapple juice with cornstarch in a small bowl until smooth. Stir cornstarch mixture into sausage mixture and cook until sauce thickens and turns clear, about 2 minutes. Serve sausage mixture over cooked rice.

1/4 cup low-sodium soy sauce
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
8 ounces ground pork
4 small chinese sausages, thinly sliced (see Note)
2 tablespoons canola oil
1/2 teaspoon sesame oil
1/3 cup green onion, sliced
1 tablespoon fresh ginger, grated
3 -4 garlic cloves, minced
1 jalapeno, seeded and minced
4 cups cold cooked jasmine rice or 4 cups other long-grain white rice
1 egg, beaten
1/4 cup cilantro leaf
2 teaspoons sesame seeds
1/2 cup fresh pineapple, finely diced

Steps:

  • In a small bowl, whisk the soy sauce with the hoisin and vinegar.
  • Heat a wok or large skillet to medium-high. Brown the pork and remove with a slotted spoon.
  • Next, brown the Chinese sausages (careful -- they burn quickly!). Remove from the pan with slotted spoon and set aside.
  • Add the oils and the onion, ginger, garlic and pepper, and cook until it just starts to brown.
  • Return pork and sausages to pan. Add the rice, breaking up any lumps with your hands as you add it to the wok, and stir-fry until heated through and lightly browned in spots.
  • Stir the hoisin-soy sauce, add it to the wok and stir-fry until nearly absorbed.
  • Push the rice to one side of the pan, add the egg and scramble.
  • . Stir in the cilantro, sesame seeds and pineapple.

Most people would make this as more of a side dish. This recipe makes a lot, so feel free to cut down on the quantities. The beautiful lady in the picture is my mother who I lost to cancer in 2002.

  • Heat the oil in a very large skillet or electric skillet over medium to medium-high heat. Stir fry the cabbage and carrots just until the cabbage has wilted. Add the cold rice, and fry, sprinkle some soy sauce over the mixture and break up clumps in the rice. (Rice must be cold or the dish will come out gummy.) Mix in the sausage and sprinkle some more soy sauce over all. Stir in bean sprouts and eggs, mixing well so there are no big chunks. Gently mix in the peas. Season with pepper, and stir in green onions just before removing from the heat. Add more soy sauce, if desired, to taste, and serve. This dish reheats well in the microwave.
  • Tip 1: To save time, instead of chopping up cabbage and carrots, you can buy a 16 oz. package of coleslaw mix which has the cabbage and carrots already shredded.
  • Tip 2: If you are using the quantitites listed above, it would be easier if you break it down into 2 or 3 batches. This makes enough fried rice to fit into a large crockpot. I place the rice in a crockpot to keep it warm for cookouts.
  • Tip 3: This recipe is very versatile. You can add, leave out or change ingredients according to your taste. Instead of sausage, this rice works well with chicken, beef, shrimp, etc. If you like you can add water chestnuts or bamboo shoots. A great way to use up leftovers.

3 cups uncooked long grain rice
10 tablespoons margarine or butter, divided
8 large eggs
1 can (12 ounces) lite SPAM, cut into 1/4-inch cubes
1/3 cup chopped onion
4 cups frozen mixed vegetables (about 16 ounces), thawed and drained
2 garlic cloves, minced
1/2 teaspoon pepper
1/3 cup soy sauce
Sliced green onions, optional

Steps:

  • Cook rice according to package directions. Meanwhile, in a Dutch oven, heat 1 tablespoon margarine over medium-high heat. Whisk eggs until blended; pour into pan. Mixture should set immediately at edge. As eggs set, push cooked portions toward center, letting uncooked portions flow underneath. When eggs are thickened and no liquid egg remains, remove to a cutting board and chop., In same pan, heat 1 tablespoon margarine over medium-high heat. Add Spam and onion; cook and stir until Spam is lightly browned, 6-8 minutes. Add mixed vegetables, garlic and pepper; cook until heated through. Stir in cooked rice, soy sauce and remaining 1/2 cup margarine; cook and stir until margarine is melted. Gently stir in eggs. If desired, top with sliced green onion.

3 tablespoons vegetable oil
4 to 5 slices deli ham
1 teaspoon barbecue spice rub
3 scallions, sliced thin on the bias, white and green parts separated
4 cups cooked rice
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 tablespoon chile garlic sauce, chile paste or curry paste, optional
1 tablespoon grated fresh ginger
1/2 cup frozen peas
1/4 cup fresh, frozen or canned pineapple, chopped
1 large egg, cooked sunny-side up
1 teaspoon canned french-fried onions
1 teaspoon black sesame seeds

Steps:

  • Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the ham, barbecue spice and scallion whites. Saute for 2 to 3 minutes.
  • Lower the heat to medium. Toss the rice with the remaining 2 tablespoons oil in a medium bowl. Add to the skillet and quickly stir so the ham and scallions get evenly distributed in the rice. Cook without stirring for 5 minutes so the bottom gets crispy.
  • Combine the hoisin, soy, chile sauce and ginger in a small bowl and whisk together. Add the sauce to the skillet along with the peas and pineapple. Stir gently to combine, retaining the crispy bottom. Serve immediately topped with the fried egg, french-fried onions, sesame seeds and scallion greens.

canola oil
1 lb firm tofu, diced
1 medium red onion, finely chopped
1 small red bell pepper, finely chopped
1 small yellow bell pepper, fine chopped
1 small green bell pepper, finely chopped
1 medium carrot, finely chopped
5 cups cooked jasmine rice
2 tablespoons low sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon sambal oelek
1 cup diced pineapple
1/2 cup macadamia nuts, coarsely chopped
salt and pepper, to taste

Steps:

  • Cook the rice the day before.
  • Heat a wok to medium-high and add sesame oil and saute the tofu cubes, set aside.
  • Add a little canola oil to the wok, add the onion, carrot and bell peppers and stir fry a few minutes.
  • Add the cooked rice and continue to stir fry, break up the lumps; then add the soy sauce, oyster sauce and sambal oelek.
  • Continue to stir-fry, adding the pineapple, macadamia nuts, and salt and pepper (to tste).

3 tablespoons low sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon light brown sugar
2 teaspoons rice vinegar

5 links Chinese sausage, sliced into rounds
4 sliced scallions, plus more for garnish
3 garlic cloves, minced
1 teaspoon minced ginger
3/4 cup frozen peas and carrot, thawed

Steps:

  • Add the soy sauce, oyster sauce, brown sugar, vinegar and sesame oil to a small bowl. Whisk to combine and set aside.
  • Heat 2 tablespoons of oil in a large nonstick skillet over medium heat.
  • Add peas and carrots and cook until softened, about 5-7 minutes. Add the scallions, garlic and ginger and cook for 30-60 seconds until fragrant. Transfer to a bowl with a slotted spoon.
  • Add the sausage and cook until slightly browned, about 4-5 minutes. Transfer to the bowl with the peas and carrots.
  • Increase the heat to medium high, add the rice, and flatten in an even layer in the skillet. Cook undisturbed to allow the bottom to crisp up slightly, about 5 minutes.
  • Season with salt and pepper, then stir and let cook for another 1-2 minutes.
  • Stir in the sausage and scallion mixture. Pour over the sauce and stir to combine. Cook for 1-2 minutes.
  • Push the rice to the sides and make a well in the center. Add about 2 teaspoons of oil onto the exposed pan and add the beaten eggs. Scramble the eggs and then stir to combine.
  • Garnish with sliced scallions before serving.
