BUTTERMILK BISCUITS WITH EGGS AND SAUSAGE GRAVY



Buttermilk Biscuits with Eggs and Sausage Gravy image

1 pound ground pork
2 cloves garlic, smashed and chopped to a paste
2 tablespoons finely chopped fresh sage
1 tablespoon finely chopped fresh thyme
1 teaspoon onion powder
2 tablespoons canola oil
Salt and freshly ground black pepper
4 cups all-purpose flour, plus more to dust
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
12 tablespoons cold unsalted butter, cut into small pieces
1 1/2 cups cold buttermilk
1/2 cup heavy cream
2 teaspoons freshly ground black pepper, not super fine and not coarse, somewhere in between
2 cups whole milk
2 tablespoons unsalted butter
2 tablespoons flour
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
8 large eggs, lightly beaten
Salt and freshly ground black pepper
6 tablespoons unsalted butter

Steps:

  • For the sausage: Combine the pork, garlic, sage, thyme, onion powder, and oil in a large bowl and season with salt and pepper. Cover the sausage and refrigerate for at least 30 minutes to allow the flavors to meld. Form the sausage mixture into 8 patties. Heat a large nonstick pan over high heat and cook the patties until golden brown on both sides and just cooked through, about 5 minutes per side.
  • For the black pepper buttermilk biscuits: Preheat the oven to 450 degrees F. Combine the flour, baking powder, baking soda and salt in a large bowl. Using a dough cutter, combine the ingredients until they are incorporated. Cut in the butter using your fingers or a pastry cutter until the mixture resembles coarse meal. Add the buttermilk and gently mix until the mixture just begins to come together. Scrape the dough onto a lightly-floured counter. Pat the dough into a 10 by 12-inch rectangle about 3/4-inch thick. Use a 2-inch round biscuit cutter to cut out the biscuits. Press together the scraps of dough, and repeat the process. Place the biscuits on a baking sheet lined with parchment paper; brush the tops with cream and sprinkle with the black pepper. Bake the biscuits for 12 to 15 minutes or until light golden brown. Cool on a baking rack.
  • Yields: 10 to 12 biscuits
  • For the cream sauce: Put the milk in a small saucepan and bring to a simmer over medium heat. Melt the butter in a second small saucepan over medium heat, whisk in the flour and cook for 1 minute, do not allow the flour to color. Slowly whisk in the warm milk, increase the heat to high and continue whisking until the sauce begins to thicken and the raw taste of the flour has been cooked out, about 5 minutes; season with the salt and pepper. Keep warm.
  • Yield: 2 cups
  • For the eggs: Beat the eggs in a large bowl and season with salt and pepper. Melt the butter over low heat in a large nonstick skillet. Add the eggs and cook slowly, stirring constantly with a wooden spoon, until soft curds form. Slice each biscuit in half and put a sausage patty on the bottom of each biscuit and place the other half on top. Serve 2 sausage biscuits per person. Serve with cream sauce and scrambled eggs.

Steps:

  • With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
  • Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
  • Spoon the sausage gravy over warm biscuits and serve immediately!

1 pound bulk pork sausage
2 tablespoons butter
1/3 cup all-purpose flour
3 to 3 1/2 cups milk
1/4 tsp granulated garlic
1 tsp black pepper (or to taste)
1/2 tsp salt (or to taste)

Steps:

  • Set a large skillet (I love cast iron) over medium heat. Add in the sausage and with a wooden spatula break up sausage into smaller pieces while stirring. Cook until brown and fully done (about 8 to 10 minutes).
  • Place butter in skillet and stir until melted.
  • Sprinkle flour, garlic, and pepper on top of the sausage and slowly stir until well coated and grease is full absorbed. Continue stirring and let the flour cook fully for about 2 minutes.
  • While stirring, slowly pour in 3 cups of the milk. Continue to stir and simmer until gravy thickens (3 to 5 minutes). Add salt, if needed. If gravy is too thick, add the last 1/2 cup of milk.
  • Serve over warm fresh biscuits.

1 tablespoon finely chopped fresh thyme
2 tablespoons canola oil
Kosher salt and freshly ground pepper
2 cups whole milk
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
Kosher salt and freshly ground pepper
4 cups all-purpose flour, plus more for shaping
1 tablespoon plus 1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon fine salt
12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into small pieces, plus 4 tablespoons ( 1/2 stick), melted
1 1/2 cups buttermilk, chilled
1/2 cup heavy cream

Steps:

  • Slice each biscuit in half and put a sausage patty on the bottom half of each. Top with cream gravy and parsley. Serve 2 biscuits per person with eggs on the side.
  • Combine the pork, garlic, onion powder, sage, thyme and oil in a large bowl and season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 8 hours to allow the flavors to meld.
  • Form the mixture into 8 patties, each 1/2 inch thick. Heat a nonstick pan over medium-high heat. Cook the patties until golden brown and just cooked through, about 5 minutes per side.

Raise the heat to high and continue whisking until the sauce begins to thicken and the raw taste of the flour has been cooked out, about 5 minutes. Season with 1 teaspoon salt and 1/4 teaspoon pepper. Serve warm.
  • Put the milk in a small saucepan and bring to a simmer over medium heat.

  • Scramble the eggs in a large non stick fry pan. Remove to plate when they are still slightly wet.

  • In a large skillet, cook the sausage over medium heat, crumbling it with a sturdy spatula, until no pink remains. Remove all but 3 Tablespoons of the grease from the pan. If the sausage doesn't render that must grease, add enough butter to make 3 Tablespoons.
  • Add the flour to the pan and stir until dissolved into the sausage and grease. Slowly add the milk, stirring to combine. Cook, whisking often, until the gravy thickens. This will take 4-7 minutes, so just be patient. It will thicken! Once the gravy is thickened, remove from heat. Taste and season with salt and pepper to taste. You can store this gravy overnight in the fridge. The following day, reheat it in a sauce pan, whisking often (the grease may separate overnight). If needed, add an additional splash or two of milk to thin.
  • In a large non stick skillet, heat the vegetable oil over medium high heat. Add the onions, peppers, and mushrooms, and cook until just starting to soften, about 2 minutes. Add the half bag of hash browns. Toss them with the vegetables, then press them into the bottom of the skillet with your spatula. Leave them to cook for 6-7 minutes or until golden. Flip in sections, then cook the other side for an additional 4 minutes. Sprinkle with salt and pepper.
