1 stick unsalted butter, plus more for the dish
1 pound loose breakfast sausage (or use links and remove the casings)
2 onions, chopped
4 stalks celery, chopped
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
2 1/2 cups low-sodium chicken broth
Kosher salt and freshly ground pepper
2 large eggs
1/2 cup chopped fresh parsley
16 cups stale 1/2-inch country white bread cubes (about 2 pounds)

Steps:

  • Preheat the oven to 350˚. Butter a 3-quart baking dish. Melt 6 tablespoons butter in a large wide pot over medium-high heat. Add the sausage and cook, breaking up the meat, until no longer pink, 3 to 5 minutes. Add the onions, celery, sage and thyme and cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the chicken broth, 1 teaspoon salt and a few grinds of pepper. Bring to a boil, then remove from the heat.
  • Whisk the eggs and parsley in a large bowl. Add the bread cubes and sausage-broth mixture and toss until evenly combined. Transfer to the prepared baking dish, dot with the remaining 2 tablespoons butter and cover with foil.
  • Bake the stuffing until hot, about 30 minutes. Uncover and bake until golden brown, 20 to 30 minutes. Let cool at least 15 minutes before serving.

ITALIAN SAUSAGE STUFFING

1 pound sweet Italian sausage, casings removed
4 stalks celery, chopped
2 onions, chopped

3 cups low-sodium turkey or chicken broth
Kosher salt and freshly ground pepper
2 large eggs
1/2 cup chopped fresh parsley
16 cups 1/2-inch stale country white bread cubes (1 1/2 pounds)

Steps:

  • Preheat the oven to 375 degrees F and butter a shallow 3-quart baking dish. Melt 6 tablespoons butter in a large nonstick skillet over medium-high heat. Add the sausage and cook, stirring and breaking up the meat with a wooden spoon, until lightly browned and no longer pink, about 6 minutes.
  • Add the celery and onions and cook, stirring occasionally, until softened, about 5 minutes. Stir in the sage. Add the broth, 1 teaspoon salt and a few grinds of pepper; bring to a simmer, then remove from the heat.
  • Whisk the eggs in a large bowl. Add the parsley, bread cubes and sausage-broth mixture and stir until combined. Transfer the stuffing to the prepared baking dish. Cut the remaining 2 tablespoons butter into small cubes and scatter evenly over the stuffing. Cover with foil and bake 30 minutes, then uncover and bake until golden, 20 to 30 more minutes.

2 medium onions (chopped, about 2 cups)

1 tablespoon fresh sage (finely chopped, or 1 teaspoon dried leaf sage, crumbled)

Steps:

  • Gather the ingredients.
  • Lightly butter a 9-by-13-by-2-inch baking pan. Heat the oven to 350 F/180 C/Gas 4).
  • In a large skillet over medium heat, cook the sausage, breaking it up and stirring frequently, until it is fully cooked and no longer pink. Remove the sausage to paper towels to drain.
  • Wipe out the skillet with a paper towel and place it over medium-low heat. Add the butter and heat until it has melted. Add the chopped onion and celery and cook, stirring, until the vegetables have softened, about 5 to 7 minutes.
  • In a large mixing bowl, toss the bread cubes with the herbs and seasonings.
  • Add the vegetables with the butter and the drained sausage; then add the chicken broth and stir until well moistened, but not mushy.
  • Pack gently into the prepared baking dish and cover it tightly with foil.
  • Bake for 25 minutes. Remove the foil and broil for about 3 to 4 minutes, or just until browned on top.

Steps:

  • Preheat oven to 200°F and cut French bread into slices and cut slices into cubes. Spread the cubes out on a baking sheet and bake for one hour.
  • Preheat the oven to 350°F and grease a 9x13-inch cake pan with butter.
  • Cook sausage in a skillet over medium heat until browned. Remove the sausage and put it in a medium bowl; set aside.
  • Add the butter to sausage dripping and melt. Once melted, add the diced onions, celery, and minced garlic. Cook for 10 minutes over medium heat or until onions are translucent.
  • Add the sausage and herbs to the onions, and remove from the heat stove.
  • Place the baked bread cubes in a large bowl and add the sausage and onions and mix to combine.

Steps:

  • Preheat the oven to 300 degrees F.
  • Place the bread cubes in a single layer on a sheet pan and bake for 7 minutes. Raise the oven temperature to 350 degrees F. Remove the bread cubes to a very large bowl.
  • Meanwhile, in a large saute pan, melt the butter and add the onions, celery, apples, parsley, salt and pepper. Saute over medium heat for 10 minutes, until the vegetables are softened. Add to the bread cubes.
  • In the same saute pan, cook the sausage over medium heat for about 10 minutes, until browned and cooked through, breaking up the sausage with a fork while cooking. Add to the bread cubes and vegetables.

I developed this recipe, it is really a wonderful moist casserole. Adjust the jalapeno peppers and the cayenne pepper (if using) to taste. To save time you can prepare the stuffing mixture and/or cook the sausages up to a day in advance, the remainder of the recipe is very easy, just layer and bake! Do not add any salt to any part of this recipe as the sausage meat, soups and stuffing mix already has salt added. If desired the sausage meat can be replaced with cooked diced chicken or turkey.

2 (10 ounce) cans low-sodium cream of mushroom soup, undiluted (divided, use low-sodium if possible)

3 (120 g) boxes turkey-flavor seasoned stuffing mix
1/4 cup butter
1 large onion, finley chopped
2 tablespoons minced fresh garlic (or to taste)
2 stalks celery, finely chopped
1 small green bell pepper, seeded and finely chopped
1 -2 jalapeno pepper, seeded and finely chopped
1 (10 ounce) can sliced mushrooms, well drained
cayenne pepper, to taste (optional)
2 cups low sodium chicken broth (use only low-sodium broth) or 3 cups water

Steps:

  • Butter a 13 x 9-inch casserole dish.
  • For the stuffing; melt butter in a large skillet, add in onions, garlic, celery, green bell pepper and jalapeno peppers, saute, stirring with a wooden spoon for about 6-7 minutes or until well softened.
  • Season with black pepper and cayenne (if using, do not add in any salt to the mixture the stuffing mixture already has added salt in it).
  • Add in the mushrooms, then the 2 cups chicken broth and 1 cup water (or use 3 cups water) bring to a boil; remove from heat.
  • Add in the 3 packages stuffing mix; toss with a fork to blend, cover and let sit for 10 minutes.
  • After 10 minutes toss again with a fork.
  • Layer half of the stuffing mix into the bottom of the buttered baking dish.
  • Then top/sprinkle with the cooked sausage; push the mixture down with a back of the spoon to pack evenly.
  • In a bowl whisk together eggs with milk and one can undiluted mushroom soup; drizzle over the sausage in the dish.
  • Sprinkle/top with remaining half of the stuffing mixture.
  • Sprinkle with grated Parmesan cheese, then spoon and spread the remaining undulted mushroom soup on top (the soup does not have to cover the top completely, just use a spoon to spread out as best you can).
  • Bake uncovered for about 1 hour or until the middle is set.

1/2 cup parsley, chopped
1/4 cup chives (optional)

1 granny smith apple, peeled,cored and chopped
salt and pepper
poultry seasoning

Steps:

  • Heat and spray with veggy oil a heavy large frypan.
  • scramble fry pork, onions, celery and garlic until onions are transparent.
  • Set aside, do not drain.
  • In a very large bowl, place bread crumbs, parsley and chives, if using.
  • Mix well.
  • Add water chestnuts with water, apple, salt and pepper. (I usually add one can of chestnuts with water and add the chestnuts only of the second can adding more water only if needed, a bit at a time.)
  • Mix well.
  • Add pork and onion mixture with juice from pan.
  • Mix well.
  • Add poultry seasoning a tablespoon at a time, taste and add more poultry seasoning until the taste is to your liking, make it as spicy as you wish.
  • Refrigerate until ready to stuff turkey.
  • Pack cavities firmly but not tight.
  • Any stuffing left can be cooked in a casserole in the oven with the bird, or freeze and use another time.

1 pound pork sausage
16 ounces unseasoned dry bread stuffing mix
2 (8 ounce) cans oyster pieces, liquid reserved
2 cups chopped celery
1 onion, chopped
4 tablespoons butter, melted
1 ½ cups turkey broth
salt and pepper to taste
Creole seasoning to taste

Steps:

  • Place sausage in a large, deep skillet. Cook and crumble over medium high heat until evenly brown.
  • In a large bowl combine the dry bread stuffing with the sausage and pan juices. Stir in the oyster pieces and liquid, chopped celery, chopped onion, and butter.
  • Add the broth/liquid a little at a time until the dressing is moist but not soggy. Season to taste with salt, pepper and Creole seasoning. Refrigerate until cold and stuff in turducken.
