HOBO CASSEROLE (OAMC)
One of our best and most inexpensive concoctions yet. Makes a great one dish meal. Just add a salad and you're ready to go. Makes 4 casseroles, and the extras can be frozen for later cooking.

Steps:
- Preheat oven to 400°F.
- Spray 4 9x13-inch baking pans with non-stick cooking spray (such as Pam); set aside.
- Combine ground beef, onion, and garlic in large skillet.
- Cook over medium-high heat until ground beef is browned.
- Drain.
- Add Worcestershire sauce, cream of mushroom soup, and milk.
- Stir until sauce is fairly smooth.
- Boil potatoes until tender; drain. Add potatoes and carrots to sauce.
- Divide mixture evenly between the 4 baking pans.
- To bake: Cover baking pan with foil and bake for 30 minutes.
- Remove foil and bake an additional 15-20 minutes or until potatoes are tender.
- To freeze: Allow mixture to cool in baking pan.
- Cover and label; Freeze.
- To use frozen casserole: Allow casserole to thaw overnight in fridge.
- Bake as directed above (may take an additional 15 minutes to bake if placed in the oven directly from fridge).
- **I have to mix this recipe in thirds since I don't have a large enough skillet or bowl to mix it all at once**.
SAUSAGE & BEAN CASSEROLE
A comforting and hearty one-pot sausage stew with chorizo, smoked paprika and plenty of vegetables

Steps:
- Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
- Add 1 finely chopped onion and cook gently for 5 minutes.
- Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
- Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
- Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
- Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
- Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
- Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
- Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
- Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

- Cook spaghetti with 1/2 teaspoons salt according to package directions. Drain well, and place in a lightly greased 13- x 9-inch baking dish.
- Brown sausage in a large skillet over medium-high heat, stirring occasionally, 5 minutes or until meat crumbles and is no longer pink. (If you are adding onions and or green peppers cook them along with the sausage) Drain and set aside. Wipe skillet clean. Add pepperoni, and cook over medium-high heat, stirring occasionally, 4 minutes or until slightly crisp.
- Top spaghetti in baking dish with sausage; pour pasta sauce over sausage (add any additional veggies etc at this time as well.) Arrange half of pepperoni slices evenly over pasta sauce. Sprinkle evenly with cheeses. Arrange remaining half of pepperoni slices evenly over cheese. Cover with nonstick or lightly greased aluminum foil.
- Bake at 350° for 30 minutes; remove foil, and bake 10 more minutes or until cheese is melted and just begins to brown.
- For OAMC: Freeze the unbaked casserole up to one month. Thaw overnight in the refrigerator; let stand 30 minutes at room temperature, and bake as directed.
SAUSAGE BREAKFAST CASSEROLE
Everyone should have an easy make-ahead breakfast casserole in their back pocket. This sausage and egg bake is a no-fuss crowd-pleaser.

- Grease a 9-by-13-inch (or other 3-quart) baking dish with butter or nonstick spray. Preheat the oven to 350 degrees.
- Heat a large skillet over medium-high heat. Add the sausage and break up into small pieces with a wooden spoon. Cook the meat until no pink pieces remain, 6-8 minutes. Add the red bell pepper and white and light green parts of the scallions and cook 3 more minutes. Transfer to a plate to let cool slightly.
- Meanwhile, in a large bowl whisk together the eggs, heavy cream, mustard, hot sauce, salt, black pepper and about one-half of the remaining green parts of the scallions (save the rest to sprinkle on top of the casserole once baked.) Gently fold 1 ½ cups of cheese, the hash-browns and the sausage mixture into the egg mixture. Transfer all to the baking dish and smooth into an even layer.
- Cover with aluminum foil and bake for 50 min. Remove the foil and top with the remaining ½ cup of cheese. Increase the oven temperature to 400 degrees and finish baking until the center of the casserole is set (not jiggly) and the top is slightly golden, 10-15 more minutes. Let rest 10 minutes, top with the remaining green parts of the scallions, then serve.

- Combine the flour and milk together. Add sausage, soup, peas, macaroni, onion and sage. Turn into four 10 oz casseroles. Cover, seal, label and freeze.
- Bake frozen casserole, uncovered in 400º oven 45 minutes.

- Divide dough into 16 portions.
- Preheat oven to 425°F.
- Grease a baking sheet.
- Heat a large skillet over medium heat, add sausage.
- Cook until brown and crumbly, drain fat.
- Stir onion, garlic, basil, oregano, and pizza sauce into skillet, simmer for 10 minutes.
- Roll each dough piece into a 5in circle.

I grew up on this meatloaf, and I love it. It's always a hit with company. My supposedly "vegetarian" friend eats it up every time I make it. Serve with mashed potatoes.

- Combine ground beef, sausage, celery, onion, saltines, and eggs together and form into 2 loaves.
- Bake covered at 350 degress Fahrenheit in stoneware for 45 to 75 minutes(depending on the shape of your loaves and desired doneness). Drain grease.
- For the sauce, combine tomato sauce, brown sugar, mustard, and Worcestershire sauce.
- Pour sauce over loaves.
- Cover meatloaf and cook 15 minutes.
- Remove cover and cook 10 to 15 minutes.
- To freeze, just freeze the meat mixture in meal size portions. Thaw it in the refrigerator for a day before cooking. You could make and freeze the sauce too, but I usually mix it up when I cook the meat.

- Drain.
- While beef is browning, cook pasta according to the packaging

- Cook until thick.
