The aroma in the Test Kitchen, while these were baking was awesome! I knew they were going to be good. The sweet Italian sausage with the cheese and garlic stuffing is so flavorful. I love that these are smaller... you can eat even more!

1 pound(s) loaf of frozen bread dough, defrosted according to package directions
1 pound(s) sweet Italian sausage, removed from casing
1/2 teaspoon(s) pepper
2 - chopped garlic cloves
1 tablespoon(s) oregano
1/4 cup(s) plus 2 teaspoons, Parmesan cheese
1 - large egg, divided
1 cup(s) shredded mozarella cheese
4 teaspoon(s) garlic powder

Steps:

  • Preheat oven to 350 degrees. Spray one 12 cup and one 6 cup (or 3 six cup, using 16 cups) muffin/cupcake pans with cooking spray and set aside.
  • In large skillet over medium heat, cook sausage almost completely(leaving slightly pink). crumbling into pieces with spatula, drain.
  • Add into sausage, 1 teaspoon pepper, 2 chopped garlic cloves, and 1 tablespoon oregano, cook until brown.
  • Turn off heat, and add in 2 tablespoons Parmesan cheese and egg yolk, stir completely.
  • Cut bread dough loaf into quarters, then cut each quarter again in quarters. Roll each piece into a ball, then stretch ball into a round, as if making a pizza crust.
  • Sprinkle each round with 1/2 teaspoon parmesan cheese, then spoon on approximately 1 1/2 teaspoons of sausage mixture, top each with 1 teaspoon shredded mozzarella cheese. Bring dough up around filling and pinch together. Place seam side down into each cup of prepared pans.
  • Brush each round with reserved egg white, and sprinkle top of each with 1/4 teaspoon garlic powder. Bake for 20-22 minutes, until golden brown. Serve with your favorite marinara sauce for dipping. Makes approximately 16 rounds.

3 (10 ounce) cans refrigerated biscuit dough (such as Pillsbury Grands!®)
1 pound ground breakfast sausage
1 (4.5 ounce) can diced green chiles, drained
1 ½ cups grated Colby-Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Set aside to cool completely.
  • Open biscuits and cut each into quarters.
  • Mix biscuit pieces, sausage, green chiles, and Colby-Jack cheese together in a large bowl and pour into a fluted tube pan. Press mixture down slightly to make sure there are no air pockets.
  • Bake in the preheated oven for 30 to 35 minutes, covering with aluminum foil during baking if top browns too quickly.
  • Remove bread from the oven and let sit about 5 minutes before turning out onto a serving plate. Allow to sit 5 minutes more before cutting.

1 lb owens breakfast sausage
1 large diced onion
3 cups Bisquick baking mix
1 cup shredded swiss cheese
1/2 cup shredded parmesan cheese
1 1/2 cups milk
1 tablespoon parsley flakes
1 teaspoon salt

Steps:

  • Fry your sausage and onion until cooked all the way through.
  • Drain off any fat.
  • In a large mixing bowl combine the remainder of the ingredients and stir until thoroughly mixed.
  • Add in your sausage mixture and stir again.
  • Bake in a 400 degree oven for 30 –35 in a 9 X 13 greased baking pan.

1 1/2 lbs sausage, skin removed
8 ounces mozzarella cheese
1/2 cup grated parmesan cheese
1 lb pizza dough or 1 lb bread dough
2 eggs
1/4 teaspoon oregano
2 teaspoons parsley
salt

Steps:

  • Note:I substitute drained cottage cheese for Mozzarella and parmesan.
  • Cook sausage in frying pan and drain.
  • In a large bowl, combine sausage, mozzarella, parmesan, 1 whole egg, and 1 egg white.
  • Mix well.
  • Add parsley, oregano and salt.
  • Roll dough into a circle the size of a medium pizza.
  • Spread sausage mixture on top and to within 1" of the edge.
  • Roll up dough like a large jam roll or log cake shape, place on baking tray.
  • Brush top lightly with beaten egg yolk.
  • Bake at 350 degrees F for 45 minutes until golden brown.
  • Let cool and slice in serving portions approxite to your"dog".
  • Store in the fridge.

This is an appetizer that my husband's Italian grandmother used to make when he was a kid. When we married, he made it for my family at the holidays and now it's our most requested dish. It's so easy and everyone will think you slaved over it. This recipe makes two loaves, and trust me, you'll want to make both. Grandma Tallini makes her own bread dough of course, and you can too, but I find pizza dough from the local pizzeria or from the supermarket deli works just as good and saves me a lot of time. Same thing goes for the marinara.

1 lb ground sweet Italian sausage (links are fine, just take them out of the casings)
1 tablespoon garlic, minced
1/4 cup salted butter
1 teaspoon dried parsley
2 medium onions, coarsely chopped (white or yellow)
salt and pepper
4 cups mozzarella cheese, shredded
2 pizza dough, balls
1 egg white
2 cups marinara sauce (for dipping)

Steps:

  • Line a cookie sheet with non-stick foil, set aside.
  • Melt butter in a large skillet, add onions, salt, pepper and parsley. Cook onions until they are translucent, then add the garlic. Cook the onions until they are carmelized.
  • Remove the onions to a bowl, leaving the extra butter in the pan.
  • Put the sausage into pan and chop it into bite sized chunks. Cook the sausage until it is browned.
  • Add the onions back to the pan with the sausage and cover with a lid. Simmer on low heat for about 15-20 minutes, stirring occasionally. DO NOT let it burn.
  • Meanwhile, preheat the oven to 350.
  • Flour a surface and roll out one dough ball with a rolling pin until it is the size of a large pizza. Try not to let it get any thin spots or holes.
  • When the sausage mixture is finished, use a slotted spoon to scoop half of it onto the dough and spread it evenly over the surface. You will save the other half for the second dough. Cover with a layer of half the shredded mozzarella.
  • Roll the dough up like a cinnamon roll, but tuck in the ends like a burrito before you get to the end of the roll.
  • Lay it with the flap down on the cookie sheet and brush with the egg white.
  • Bake in the oven until golden brown, approximately 25-30 minutes. After baking, let the bread rest for 10 minutes before slicing.
  • Repeat process for second loaf.
  • Slice and serve with marinara sauce for dipping.

2 loaves miniature party rye rounds
1 lb lean ground beef
1 lb hot pork sausage (I use Jimmy Dean)
1 lb Velveeta cheese
1 teaspoon oregano
1/2 teaspoon garlic salt (more if desired)
1/2 teaspoon Worcestershire sauce

Steps:

  • Line cookie sheets with wax paper or parchment paper.
  • Spread party rye slices onto the lined cookie sheets (Makes approximately 60 pieces).
  • Brown Ground Beef and Pork Sausage together.
  • While browning meat, cut up velveeta into chunks.
  • Drain grease thoroughly from meat mixture.
  • Add all other ingredients to the meat mixture and cook until the cheese melts, stirring as it cooks.
  • Remove from heat and drop mixture by spoonfuls onto the party rye slices.
  • Place cookie sheets into freezer and freeze the party rye rounds.
  • When frozen, remove from cookie sheets and slide into plastic bags returning to the freezer for later use.
  • When ready to use, take desired amount from the bag and place on cookie sheet under the broiler until brown and bubbly.
  • (Few minutes).
  • Enjoy.

  • In a large bowl, combine the beef, oregano, garlic powder, salt, red pepper flakes, sage, eggs and cheeses; set aside. , On a floured surface, roll bread dough into a 12-in. x 10-in. rectangle. Spread meat mixture to within 1 in. of the edges. Roll up, jelly-roll style, starting at short end. Pinch the ends and seam to seal. Place seam side down on an ungreased baking sheet. Place in a warm place and let rise for 30 minutes. , Bake at 350° for 30-35 minutes or until golden brown and bread tests done. Brush with butter before serving.
