BREAKFAST SAUSAGE EGG BAKE CASSEROLE
This healthy breakfast is the perfect make ahead recipe. Loaded with sausage, bacon and a tonne of fresh veggies, this low carb meal prep dish is a nutritious start to your day.

- Preheat the oven to 390ºf / 200ºc and line a baking tray with foil.
- Place the sausages and bacon on the tray and cook for around 20 minutes until done. Remove from the oven and let cool. KEEP THE OVEN ON!
- When cool enough, slice the sausage in to bite sized pieces and break up the bacon.
- Mix all of the ingredients for the egg mix together in a large jug and set aside
- Dice the bell pepper and clean and slice the scallions. Half the cherry tomatoes.
- In an oven proof dish, spread out half of the spinach across the bottom, then evenly distribute half of the bell pepper, two scallions, half of the sausage and bacon and sprinkle over half of the cheese.
- Repeat to use up the rest of the ingredients; a layer of spinach then the bell pepper, scallions, sausage and bacon. Don't add the cheese yet! Add the cherry tomato halves instead.
- Pour over the egg mix and then sprinkle over the remaining cheese.
- Place the casserole into the pre heated oven (390ºf / 200ºc) for around 40 minutes. keep an eye on it - you can pop a bit of foil over the top if it's getting a bit too dark! Use a knife to check that the egg is cooked through, if you have an instant read thermometer, the bake should be 160ºf / 71ºc.

- Add the breakfast sausage to a large nonstick skillet over medium heat. Cook, breaking up with a spatula until no longer pink, 7-8 minutes.
- Add the white and light green scallions, ½ of the bell pepper, and ½ of the spinach. Sauté for 2 minutes, until the spinach is wilted, then add the rest of the spinach and continue cooking until wilted. Remove the pan from the heat and let cool.
- In a medium bowl, whisk together the eggs, salt, and garlic powder. Add the milk and whisk to incorporate.
- Grease a 9 (22 cm) x 13-inch (33 cm) glass baking dish with nonstick spray.
- Add the cubed bread to the baking dish. If you don't have day-old bread, spread the cubed bread on a baking sheet and dry out in a 300˚F (150˚C) oven for 15-20 minutes.
- Sprinkle 1 cup (100 G) of shredded cheese over the bread, then evenly spread the sausage mixture on top. Pour the egg mixture over the sausage mixture. Cover the baking dish with plastic wrap and refrigerate for at least 1 hour, or overnight.
- Preheat the oven to 375˚F (190˚C).
- In a liquid measuring cup or small bowl, combine the chicken stock and heavy cream.
- Pour over the chilled bake. Sprinkle the remaining cup of cheese and remaining bell pepper over the top.
- Cover with foil and bake for 45 minutes, then uncover and bake for another 15-20 minutes, until the custard is set and the cheese is golden brown. Remove from oven and let cool for 15 minutes.
- Garnish with the dark green scallions, then slice and serve.

This is a variation on a standard breakfast casserole recipe. You can really use any combination of meat, vegetables, and cheese that you have on hand. This one came out really well! You can substitute frozen drained spinach for the sauteed fresh if that's easier.

- Preheat oven to 350.
- Grease 9" square pan with a bit of butter.
- Add rest of butter to skillet. Saute onion for 2 minute on med heat, then add mushrooms and garlic. Cook and stir for 4 minutes, until mushrooms have begun to soften, and remove to a bowl.
- Add spinach to skillet and saute lightly, just for a minute or two. Drain by pressing a spatula against the spinach.
- To assemble, layer half of sausage in baking dish. Top with 1/3 of cheese. Add mushroom mixture, then 1/3 of cheese. Add spinach, then rest of cheese, then rest of sausage.
- Beat eggs with cream and seasonings. Pour over other ingredients.
- Casserole can be refrigerated overnight at this point.
- Bake at 350 for 30 minutes, until center is set. Cool for 10 minutes before cutting.
