The faculty where DH teaches has frequent potlucks. Lois often brings this tasty dish and it is always well received. It is also an easy work/school week supper that my family enjoys.

2 tablespoons butter
2 large onions, chopped
2 large tart apples, peeled, cored and chopped
2 lbs sauerkraut
1/4 cup ketchup
1 teaspoon dried dill
2 lbs kielbasa

Steps:

  • In a skillet, melt butter, saute onions and apples until onions are translucent.
  • Meanwhile rinse and drain sauerkraut; place in a large crock pot.
  • Stir ketchup, dill and onion-apple mixture into sauerkraut.
  • Slice Kielbasa into 2-inch rounds.
  • Stir Kielbasa into sauerkraut.
  • Cook on low setting for 7-9 hours. (Cooking time may vary based on the brand and age of your crock pot. I still use an old one that takes 7-9 hours for cooking this recipe.).

Steps:

  • Preheat oven to 350 degrees Fahrenheit.Coat roasting pan with non stick spray.
  • Place loin in roasting pan. Season pork loin with salt and pepper. Pile sauerkraut on top of pork loin. Place lid on roasting pan.
  • Roast for pork for 10 - 15 minutes per pound. Use a meat thermometer to cook pork to an internal temperature of 145 degrees Fahrenheit.

8 small fingerling or red-skinned potatoes, halved if large
1 tablespoon vegetable oil
12 ounces turkey kielbasa or chicken sausage, cut into 2-inch pieces
1 6-ounce boneless smoked pork chop, trimmed and sliced
1 large onion, chopped
2 cloves garlic, smashed
1 teaspoon coriander seeds, crushed
1 teaspoon juniper berries (available in the spice aisle), crushed
Kosher salt and freshly ground pepper
1 apple, grated
1 cup dry white wine
2 tablespoons chopped fresh parsley
Whole-grain mustard, for serving

Steps:

  • Soak the sauerkraut in a bowl of warm water. Cover the potatoes with water in a small saucepan and simmer over medium heat until tender, about 10 minutes. Drain and keep warm.
  • Meanwhile, heat the vegetable oil in a large pot over medium-high heat. Prick the sausages with a fork and add to the pot along with the pork; cook until browned on one side, about 4 minutes. Turn the meats and add the onion, garlic, coriander, juniper berries, and salt and pepper to taste. Cook until the onion is golden brown, about 6 minutes. Add the apple and cook 2 more minutes.
  • Drain the sauerkraut, then add to the pot along with the wine and 1 cup water. Cover and simmer 10 minutes, then uncover and cook until thickened, about 5 more minutes. Transfer the sauerkraut, meats and potatoes to a platter. Top with the parsley and serve with mustard.

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

1 1/2 tablespoons margarine
2 lbs cold pack sauerkraut, rinsed and drained
1 cup apple juice (or apple cider)
1 cup water
1 teaspoon caraway seed

1 tablespoon brown sugar

1/2 lb kielbasa, (cut into desired size pieces)
1 onion, (chopped)

1 bay leaf
1/2 Tbsp yellow mustard

1 Lb. Kielbasa Sausage, (heat serve variety, sliced)
29 Ounces Sauerkraut, (two (2) cans, un-drained)
1/2 Cup Water

Steps:

  • Turn the Instant Pot onto saute, and allow the liner to get hot. Add oil and sausage pieces (work in batches if necessary).
  • Cook until sausage is browned on both sides (about three (3)-five (5) minutes each side).
  • Remove sausage pieces from Instant Pot and carefully add water making sure not to splash any grease. Use a wooden spoon to scrape the bits from the bottom of liner (de-glaze the pot!!). Turn off the Instant Pot.
  • Pour the sauerkraut into the liner, and top with cooked sausage pieces.

1 onion, thinly sliced
6 tablespoons goose fat
2 1/5 pounds Sauerkraut, recipe follows
1 apple, diced
5 juniper berries
7 ounces smoked bacon
3 ounces white wine plus 2 ounces
2 tablespoons water
11 pounds white cabbage, shredded
5 tablespoons salt
1 pound plus 5 ounces pork neck
14 ounces pork belly
Pinch ground mace
Pinch ground cardamom
Pinch dried marjoram
1 tablespoon salt
Pinch freshly ground pepper
2 eggs
1/2 cup milk

Steps:

  • In a large skillet over medium-high heat, fry the onion in the goose fat until it starts to brown. Add the sauerkraut, and heat it through for 5 minutes. Then add 1 cup of water, cover with a lid, and cook for 20 minutes. Then add the apple, juniper berries, and the bacon. Stir well, add 3 fluid ounces white wine, and 2 tablespoons water. Cook for 35 minutes. After 30 minutes of cooking, add the remaining 2 fluid ounces of white wine.
  • Put the cabbage and salt alternately in a terra cotta pot, and press down with a weight or heavy pan until juice covers the shredded cabbage. Cover the pot with a cloth, and weight it down with planks and stones. Place in the refrigerator for 4 to 6 weeks before cooking it.
  • All ingredients and equipment need to be very cold when making sausage.
  • Cut the neck and belly of pork, and grind it into a large bowl. Add the mace, cardamom, marjoram, salt, and pepper, and mix it all together with your hands. Add the eggs, and mix again. Then add the milk, and mix again.
  • Place the casing over a funnel. Stuff the casing with the meat mixture, and then tie the casing to make your desired size of sausage links.
  • Once you have made all of the sausages, heat a large skillet over medium-high heat. Add enough oil to lightly film the pan, and let oil heat. In batches, add the sausages to the hot oil, and fry until browned and fully cooked through. Serve with the steaming sauerkraut, and mustard, if desired.

6 Potatoes (washed & cubed - I prefer Yukon Gold potatoes that don't need peeled)
3 sprigs Rosemary (Dill can be substituted)
1 cup beer (your favorite flavor - we like Blue Moon or Yuengling)
2 tablespoons vegetable oil (optional for browning sausage)

Steps:

  • Browning sausage on saute setting in Instant Pot is optional. Some enjoy the flavor that browning brings out. Brown sausage in 2 tablespoons of oil if doing this step.
  • Drain most of the liquid from sauerkraut and place in the bottom of a 6 or 8 quart Instant Pot.
  • Add cubed potatoes, chunks of sausage and sprigs of Rosemary.
  • Pour one cup of beer evenly over the top of all ingredients.
  • Seal the pot and cook on high pressure for 9 minutes or stew for 30 minutes. When the timer beeps and cooking is done perform a quick release to remove all pressure.
