FENNEL SOUP GRATIN

1/4 pound unsalted butter
8 cups thinly sliced fennel, cored and tops removed (2 large bulbs)
8 cups thinly sliced yellow onions (4 large onions)
1 1/2 teaspoons minced fresh thyme leaves
1/4 cup brandy
1/2 cup medium-dry sherry
1/2 cup good white wine
8 cups good chicken stock
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1/4 cup Pernod
16 slices crusty French bread
3/4 pound Gruyere cheese, grated

Steps:

  • Melt the butter in a large stockpot over medium-high heat. Add the fennel, onions, and thyme and saute for 20 to 25 minutes, until the onions and fennel are very tender and caramelized. (You can add a little water if it starts to stick.) Deglaze the pan by adding the brandy; reduce the heat to medium and cook for 3 minutes, scraping the bottom of the pan. Add the sherry and white wine and simmer, uncovered, for 10 minutes. Add the chicken stock, salt, and pepper and continue to cook, uncovered, for another 15 minutes. Add the Pernod and cook for 5 more minutes. Check for salt and pepper.
  • Preheat the broiler.
  • Ladle the soup into 6 to 8 ovenproof bowls and place 1 or 2 slices of French bread and a handful of Gruyère cheese on top of each bowl. Place the bowls on a baking sheet and slide them under the broiler for 3 minutes, or until the cheese is brown and bubbly, and serve.

I have dietary restrictions that don't allow me to eat bread, so I made my own version by omitting the bread and adding sausage for protein. It's hearty and irresistible on a cold night. 1 package (12 ounces) fully cooked Italian or spicy chicken sausage links, halved and sliced 3/4 inch thick

1 carton (32 ounces) chicken broth
4 cups water
1 can (14-1/2 ounces) diced tomatoes, drained

1/2 teaspoon pepper

Steps:

  • In a 6-qt. stockpot, heat 1 tablespoon oil over medium-high heat; saute sausage until lightly browned, 2-3 minutes. Remove sausage, reserving drippings in pot., In same pot, heat remaining oil over medium heat; saute fennel, carrots and onion 8 minutes. Add garlic; cook and stir 1 minute. Add potatoes, beans, broth and water; bring to a boil. Reduce heat; simmer, covered, 10 minutes., Stir in tomatoes, salt, pepper and sausage; return to a boil. Reduce heat; simmer, uncovered, until vegetables are tender, about 5 minutes.

3 (3.5 ounce) links mild Italian sausage, casings removed
1 bulb fennel, finely chopped
3 cups chicken broth, divided

½ teaspoon truffle salt
1 tablespoon extra-virgin olive oil, for drizzling

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Once hot, add butter, followed by sausage and fennel. Stir and break up sausage. Cook, stirring, until sausage is browned, about 5 minutes. Pour in 1 cup chicken broth slowly, scraping up any browned bits from the bottom of the pot. Pour in 2 cans of drained cannellini beans. Cancel Saute mode.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • Meanwhile, combine remaining 2 cups chicken broth and 2 cans of beans in a blender; blend on high until smooth.
  • Release pressure using the natural-release method according to manufacturer's instructions for 5 minutes. Release remaining pressure using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Add pureed beans, thyme, and truffle salt to soup; mix to combine.
  • Ladle soup into bowls and serve with a drizzle of olive oil.

I've gone to Carrabas many times just for this soup. A lady from my supper club happened to bring this in for our soup theme and it tasted exactly like Carrabas! I've substituted Italian turkey many times and you would never notice the difference. You might also want to sprinkle some fresh basil and Parmesan cheese on top. Its good with a crusty piece of bread!

1 lb Italian sausage (You can also use Italian turkey sausage)
1 large onion, chopped
1 stalk celery, chopped

  • Brown sausage; drain off fat.

  • Simmer for about 1 hour or until lentils are tender. Add water if necessary, for desired consistency. I like to puree about 1 cup of the soup and add back to pot to give it a thicker consistency.
  • Sprinkle with Parmesan cheese and serve.

Make this simple fennel-scented sausage to toss into pasta or onto pizza. Par-cook large crumbles to fold into Thanksgiving stuffing or a pot of soup. Or fry up patties and serve alongside crusty bread and a bowl of tender white beans doused generously in olive oil. Be sure to use ground pork with enough fat or you'll end up with dry, flavorless sausage. Twenty percent by weight is a good ratio, though 25 doesn't hurt. If the ground pork available to you is too lean, ask the butcher to replace two ounces or so of the lean meat with ground pork belly or bacon.

2 teaspoons Diamond Crystal kosher salt or 1 teaspoon fine sea salt
1 1/2 teaspoons coarsely ground fennel seed
1/2 to 1 tablespoon red-pepper flakes
1 pound ground pork (20 to 25 percent fat by weight)
1 teaspoon pounded or very finely grated garlic
1 teaspoon dry white wine or vermouth
Extra-virgin olive oil

Steps:

  • Line a baking sheet with parchment paper; set aside.
  • In a large bowl, combine salt, fennel seed and red-pepper flakes. Add pork to the spice mixture along with the garlic, and wine. Using your hands, mix thoroughly for 1 full minute, until the pork begins to appear tacky and sticks to the palm of your hand.
  • Heat a cast-iron pan over medium heat. Use a heaping tablespoon of pork mixture to make a small, thin sausage patty. Add a teaspoon or so of olive oil, and cook the patty for 2 to 3 minutes on each side, or until cooked through. Taste, and if needed, add salt or any other seasonings to the uncooked sausage mixture and mix to combine.
  • Divide and form the remaining sausage into 8 2 1/2-inch patties, placing them on the prepared baking sheet as you go. Cover, and refrigerate for 30 minutes to allow the flavors to come together. (Patties can be made ahead and covered and refrigerated or frozen at this point until ready to use.)
  • To cook, wipe out cast-iron pan, and return to medium heat. Add 1 tablespoon olive oil. When it shimmers, add patties in a single layer, leaving space between them. Cook 3 to 4 minutes per side, or until browned on the surface and just cooked through.
  • Drain sausages on paper towels, and serve hot.

I found this in an old Good Housekeeping Magazine (Dec. 2005) in my Dr. waiting room. We love it and it freezes beautifully. You can sub turkey Italian sausage for the regular. Don't skimp on the fennel, it makes the dish. I also disregard the amounts of salt and pepper and just season to taste (it does need a bit more salt than stated in recipe).

1 lb sweet Italian sausage, links
1 (1 lb) bag carrot, cut lengthwise in half, then crosswise into 1/4-inch slices
1 large onion, chopped
1 medium fennel bulb, trimmed and cut into 1-inch pieces
4 garlic cloves, crushed
1 (16 ounce) bag lentils, rinsed and picked through
6 cups water
1 (32 ounce) carton chicken broth (4 cups)
1 (28 ounce) can diced tomatoes with juice
1/2 teaspoon thyme
3/4 teaspoon salt
1/4 teaspoon black pepper, coarsely ground

Steps:

  • heat 8 qt saucepot over medium heat until hot. With fork, prick sausages in a few places; add to saucepot. Cook sausages 10 - 15 min or until browned, turning occasionally. Remove to plate.
  • To sausage drippings in saucepot, add carrots, onions, and fennel. Cook over med-high heat about 10 min or until tender and lightly browned, stirring frequently. Stir in garlic; cook 1 min.
  • Add lentils, water, chicken broth, tomatoes with their juice, thyme, salt and pepper to veggies in saucepot; heat to boiling over high heat. Reduce heat to low; cover and simmer 30 min, stirring occasionally.
  • Cut sausage into 1/2" thick slices; stir into soup. Heat soup to boiling over high heat. Reduce heat to low; cover and simmer 15 - 20 min longer or until lentils are tender, stirring occasionally. Skim off any fat and discard.

1 large carrot
2 stalks celery
1 large onion
2 garlic cloves
1 tablespoon olive oil
1 lb hot Italian sausage
8 cups chicken broth
1 (28 ounce) can diced tomatoes
2 cups dried lentils
1 teaspoon salt
3/4 teaspoon black pepper
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon fennel seed
1 bay leaf

Steps:

  • Dice the first four ingredients and sauté them in a large pot with the oil. Sauté until tender.
  • Remove vegetables from the pan and add the Italian sausage, removed from the casing, to the pan. Brown then drain off fat.
  • Pour 8 cups for chicken broth, the vegetables back into the pot.
  • Add tomatoes and lentils.
  • Add remaining ingredients.
  • Simmer until the lentils are tender, 30-45 minutes.
  • Remove 1/3 of the soup and puree. then return it to the pot.
  • Correct the seasonings and remove bay leaf.

2 sweet Italian sausage links or 1/2 lb loose meat sausage
1 tablespoon olive oil
1 large onion, chopped
1 small fennel bulb, sliced thin
5 cups chicken broth
15 ounces cannellini beans, drained
14 1/2 ounces diced tomatoes, undrained
1 teaspoon thyme
1/4 teaspoon pepper
1 bay leaf
3 cups chopped fresh spinach or 1/2 a bag frozen chopped spinach

Steps:

  • Bake sausage links at 350 degrees for 30 minutes, remove and slice into coin size pieces.
  • If using loose sausage meat, saute until done and drain well.
  • Saute onions and fennel in oil in a skillet until soft.
  • Combine onions, fennel, broth, beans, tomatoes and seasonings in a slow cooker.
  • Cook on high for 2 hours, or low for 4 to 5 hours.
  • Can also be made in a regular soup pot on the stove if desired.
  • Remove bay leaf.
  • Add spinach and cook until wilted, or if using frozen until heated through.

My husband loved a chicken and fennel soup he had at a nice Italian restaurant, so I developed this recipe over a couple years of trial and error. Now it's nothing like the original, but it's definitely one of our favorites. Friends and family rave about it. This is a great dish for company. I like to have this about halfway done when my guests arrive. We always end up in the kitchen anyway, and it's so easy, you can enjoy a glass of wine while you work. Serve in a bowl with a crusty roll and a dry white wine.

3 tablespoons olive oil, divided
2 tablespoons salted butter
¼ teaspoon salt
1 bulb fennel, chopped
1 medium sweet onion, chopped
1 teaspoon fennel seed, crushed
½ pound skinless, boneless chicken breasts, cubed into bite-sized pieces
½ pound Italian sausage, casings removed
½ cup uncooked brown rice
1 ½ cups chicken stock
1 (16 ounce) package frozen shelled edamame
salt and ground black pepper to taste

Steps:

  • Heat 2 tablespoons olive oil and butter in a pot over low heat. Add fennel, onion, and 1/4 teaspoon salt to the hot pot; saute for 20 to 30 minutes. Add fennel seed and saute, 15 minutes more, until vegetables are very soft and the flavors have developed; be careful not to brown them.
  • Increase the heat to medium. Add chicken and sausage; cook and stir until browned, about 10 minutes. Drain off fat. Add remaining tablespoon oil and brown rice; cook and stir, about 5 minutes. Add chicken stock and bring to a boil.
  • Cook, covered, about 45 minutes. Add frozen shelled edamame and cook, covered, another 10 minutes. Taste and adjust salt and pepper. Remove from the heat and serve, or remove the lid and evaporate some of the liquid if you want it to be thicker.

2 tablespoons olive oil
1 tablespoon minced garlic
3/4 cup minced shallot
1 1/2 cups sweet Italian sausage (about 3 out of casing, crumbled)
1 1/2 cups leeks, finely chopped
1 fennel bulb, stems removed, finely chopped
1 cup carrot, finely chopped
1 cup tomatoes, seeded, chopped (I use a 15-oz can of chopped tomatoes, juice and all)
2 tablespoons fresh parsley
salt and pepper
6 cups chicken broth

Steps:

  • Heat olive oil in a medium-sized saucepan; add garlic and shallots. Cook 1 minute. Add sausage, cook until browned, about 3 minutes. Add leeks, fennel, carrots, tomatoes, parsley and sprinkle all with salt and pepper. Cook another 2 minutes. Add chicken broth. Cover and simmer over medium heat for about 10 minutes or until vegetables are tender.
  • Serve immediately.

  • Preheat broiler with oven rack 6 inches from heat. Place baguette slices on a rimmed baking sheet, and brush 1 side of each piece with olive oil. Sprinkle evenly with cheese and remaining 1/2 teaspoon pepper. Broil until cheese is melted and beginning to brown, 1 to 2 minutes. Remove from oven.
  • Ladle 1 1/2 cups soup into each of 8 bowls; sprinkle with chopped rosemary, and serve with toasts.
