BREAKFAST ENCHILADAS

Breakfast Enchiladas image

Perfect for those Sunday brunches! Prepare this recipe ahead, without baking, and refrigerate overnight. Let stand at room temperature for 30 minutes, and bake as directed. Also, make the cheese sauce before scrambling the eggs, so that the sauce will be ready to add at the proper time. Enjoy!!

Categories     Breakfast

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 19

1 (1 lb) package hot pork sausage (ground or removed from casings)
2 tablespoons butter or 2 tablespoons margarine
4 green onions, thinly sliced
2 tablespoons chopped fresh cilantro
14 large eggs, beaten
3/4 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups cheese sauce (recipe follows)
8 (8 inch) flour tortillas
1 cup shredded jalapeno jack cheese
1/3 cup butter
1/3 cup all-purpose flour
3 cups milk
2 cups shredded cheddar cheese (8 ounces)
1 (4 1/2 ounce) can chopped green chilies, undrained
3/4 teaspoon salt
halved grape tomatoes
sliced green onion
chopped fresh cilantro

Steps:

  • Enchiladas: Cook sausage in a large non-stick skillet over medium-high heat, stirring until sausage crumbles and is no longer pink. Remove from pan; drain well, pressing between paper towels.
  • Melt butter in a large non-stick skillet over medium heat. Add green onions and cilantro, and saute one minute. Add eggs, salt, and pepper; cook, WITHOUT stirring, until eggs begin to set on bottom. Draw a spatula across bottom of pan to form large curds. Continue to cook until eggs are thickened, but still moist; do NOT stir constantly. Remove from heat and gently fold in 1 1/2 cups of the cheese sauce and the cooked sausage.
  • Spoon about 1/3 cup of the egg mixture down the center of each tortilla; roll up; place seam side down in a lightly greased 13"x9" baking dish. Pour remaining cheese sauce evenly over the tortillas. Sprinkle evenly with Monterey Jack cheese.
  • Bake at 350 degrees Fahrenheit for 30 minutes or until sauce is bubbly. Serve with desired toppings.
  • Cheese Sauce: Melt butter in a heavy saucepan over medium-low heat; whisk in flour until smooth. Cook, whisking constantly, for 1 minute. Gradually whisk in milk; cook over medium heat, whisking constantly, for 5 minutes or until thickened. Remove from heat and whisk in remaining cheese sauce ingredients. Makes 4 cups.

SAUSAGE AND EGG BREAKFAST ENCHILADAS

Sausage and Egg Breakfast Enchiladas image

This is a great recipe--the family loves it, and it can be made the night before to feed hungry house guests. Have fun experimenting with different toppings.

Provided by Pokey in San Antonio

Categories     Breakfast

Time 1h

Yield 10 serving(s)

Number Of Ingredients 16

1 lb ground sausage (We like Mexican chorizo)
1 tablespoon olive oil
1/2 cup onion (dices)
1 garlic clove (minced)
10 eggs (extra large)
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon pepper
1 (4 ounce) can diced green chili peppers
1 cup sharp cheddar cheese (shredded)
1 (10 ounce) can green enchilada sauce
1/2 cup heavy cream
1/4 teaspoon chili powder
10 (8 inch) flour tortillas
1 cup monterey jack cheese (shredded) or 1 cup monterey jack pepper cheese (shredded)
1/2 cup sour cream (optional) or 1/2 cup guacamole (optional)

Steps:

  • Preheat oven to 350 (when ready to bake).
  • In medium skillet, cook the sausage until browned. Drain.
  • Heat olive oil in a large non-stick skillet over medium heat. Add the onions, and garlic. Cook until onions are soft.
  • In a large bowl, whisk together the eggs, milk, salt and pepper.
  • Pour the egg into the skillet with the onions and cook--stirring frequently until eggs thicken but are still slightly moist. Remove from heat.
  • To the eggs, stir in cooked sausage, green chilies and cheddar cheese. Season with salt and pepper to taste.
  • In a medium bowl, whisk together the green enchilada sauce, cream and chili powder.
  • Lightly grease a 9 x 13 baking pan/dish. Spread about 1/2 cup of the green enchilada/cream sauce on the bottom.
  • Spoon about 1/3 cup of the egg/sausage/cheese mixture into the center of a tortilla and roll. Place in pan, seam side down. Repeat until all the filling has been used up. I lay out all 10 tortillas and evenly divide the filling first, then start rolling.
  • Pour remaining sauce over the enchiladas and sprinkle with the Jack cheese. Cover with foil. Refrigerate if making the night before, otherwise precede to the next step.
  • Bake for 20 minutes. Uncover and bake for 10 minutes more or until the sauce is bubbly and the cheese is golden.
  • Top with optional toppings if desired.

  • Fry the bacon, and set aside. To make the sauce add the oil to the pan and heat on medium high. Add the chile powder and combine and allow to cook for about a minute, stirring to prevent scorching. Add the water, the chicken bouillon and combine. Reduce the heat and simmer about 10 minutes. Add the heavy cream and the tomato sauce and cook just long enough to heat through and combine. Can be prepared the day before and reheated, or if same day, keep warm for serving.
  • Meanwhile, add a little oil to your skillet and fry your potatoes on medium high heat until they are browned on both sides, turning a few times. I like to now reduce the heat, place a lid on and allow them to smother a little so they will be soft, then remove the lid and push to one side. Add your onion and the pork breaking up with a spoon. When the pork starts to brown, go ahead and combine the ingredients and continuing cooking about 5 more minutes, turning as needed.
  • In a separate pan, add a little oil or butter and scramble your eggs to a soft scramble. Add to the other ingredients and combine. At this time you can add the 1/4 cup sauce if you like. I usually just add cheese to the top, but sometimes if I'm using cheddar cheese, I'll add a little cheese to the filling.
  • Heat a little oil in another pan and when hot, add each tortilla to the oil, then your sauce. Place on a plate, add your filling and roll up. Place each rolled up enchilada in a serving dish and repeat the process until all your tortillas are rolled and your filling has been used. Ladle the remaining sauce over all the enchiladas, place cheddar cheese or your cheese of choice on top. If you like you can place them under the broiler to quickly melt the cheese, but your sauce if still really warm will melt the cheese. Enjoy!
